1 tablespoon olive oil
2 garlic cloves, minced
1/4 teaspoon red-pepper flakes
3 cups cooked chickpeas
Coarse salt
1 can (28 ounces) crushed tomatoes
1 can (14.5 ounces) reduced-sodium chicken broth
1 sprig fresh basil, plus torn leaves for garnish
12 ounces medium pasta shells
Grated Parmesan, for serving

Steps:

  • In a medium saucepan, heat oil over medium. Add garlic and red-pepper flakes, and cook until fragrant, about 30 seconds (do not brown). Add chickpeas, season with salt, and cook 5 minutes. Add tomatoes and broth, and bring to a boil. Reduce to a simmer, and cook until sauce has reduced slightly, 20 minutes. Add basil, and cook 5 minutes more. Remove basil.
  • While sauce is cooking, cook pasta in a large pot of boiling salted water until al dente; drain pasta, and return to pot.
  • Add sauce to pasta, and toss. Serve with Parmesan, and garnish with torn basil.

A simple recipe for homemade chickpea pasta with a zesty lek and tomato sauce.

½ cup (120 mL) olive oil
4 peeled garlic cloves (peeled)
1 sprig fresh rosemary (roughly chopped)
¾ cup chickpea flour
1¼ cups (150 g) unbleached all-purpose flour
¼ teaspoon Diamond Crystal kosher salt
½ cup (120 mL) warm water
2 tablespoons rosemary garlic oil (see recipe above) (or substitute extra virgin olive oil)
2 tablespoons extra virgin olive oil
3 leeks, white and light green parts only (sliced lengthwise and cut croswise into thin slices)
2 garlic cloves (chopped)
1 (28 oz) can Italian plum tomatoes
1 bay leaf
fresh tarragon or basil (at your discretion)
¼ teaspoon red pepper flakes (optional)
zest of 1 lemon
finely chopped chives (optional)

Steps:

  • In saucepan, combine olive oil, peeled garlic cloves, and rosemary sprig (or 1 tablespoon dried rosemary). Bring to simmer, reduce heat as low as possible and simmer gently for 20 minutes or until garlic turns golden. Strain in jar and let cool. If not using right away, refrigerate immediately and use within 3 days.
  • Stir together chickpea flour, white flour, and salt. Create well and add in water and oil (either rosemary garlic oil or regular olive oil). Using fingers or a wooden spoon, mix together until liquid is absorbed.
  • Using clean countertop, cover the dough with plastic wrap and let sit for 5 minutes. Knead the dough for 10 minutes. If the dough is too dry, add a tablespoon of water. When the dough is smooth and resilient, wrap again in plastic and let sit for 30 minutes. Once done, the dough will be quite shiny!
  • Once rested, divide the dough into two equal parts. If using a machine, roll to desired thickness and cut whichever shape you desire. If making by hand, roll dough to 1/16 inch thickness. Let sit again for 5 to 7 minutes to let dry slightly. Dust pasta with flour roll into a loose cylinder. Cut the cylinder croswise into desired strip width and uncurl the noodles onto a clean dry towel. Repeat.
  • Warm olive oil in saute pan over medium heat. Add the leeks and garlic and saute for 6 to 8 minutes, until lightly wilted. Do not brown. Increase heat to high, add canned tomatoes, herbs, red peppers, and lemon zest. Bring to boil. Reduce heat to low and simmer for 30 to 40 minutes, until thick.
  • Bring water to boil (add salt once water begins to boil!), add noodles and cook for 3 to 4 minutes, until cooked through. Drain, drizzle with rosemary-oil and serve on plates. Top with sauce and sprinkle with chives (if desired).

1/4 cup extra-virgin olive oil
2 garlic cloves, chopped
1/2 teaspoon dried crushed red pepper
1/2 teaspoon fennel seeds
2 medium leeks (white and pale green parts only), split lengthwise, sliced crosswise
1 1/4 pounds plum tomatoes, diced
1/2 cup dry white wine
1 tablespoon white wine vinegar
12 ounces linguine
1 3/4 cups freshly grated Parmesan cheese, divided

Steps:

  • Heat oil in large skillet over medium-high heat. Add next 3 ingredients; sauté 1 minute. Add leeks; sauté until beginning to soften, about 4 minutes. Add diced tomatoes; stir 1 minute. Add wine and vinegar; bring to boil. Cover and cook until tomatoes break down, stirring often, about 5 minutes.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain, reserving 1 1/4 cups pasta cooking liquid.
  • Add pasta, 1/2 cup reserved pasta liquid, and 3/4 cup cheese to sauce in skillet. Toss over medium-high heat until sauce coats pasta, adding more liquid by 1/4 cupfuls if dry. Season with salt and pepper. Serve, passing 1 cup cheese separately.

My friend Brandon gave me this recipe. It is everything I could want in a recipe: quick, easy, cheap, nutritious, and super delicious. You can add extra spices (curry powder, etc.) if you like. Serve with rice and/or naan.

2 tablespoons peanut oil or 2 tablespoons safflower oil
1 tablespoon cumin seed (or 2 teaspoons of cumin powder)
1 tablespoon chopped fresh ginger
1/4 teaspoon crushed red pepper flakes
1 large onion, halved and sliced into half moons
15 -20 ounces canned crushed tomatoes (or diced tomatoes)
salt and black pepper (oops i forgot the pepper)
30 ounces canned chick-peas, drained and rinsed
chopped cilantro (optional garnish)

Steps:

  • Heat the oil in a large saucepan over medium heat. Add cumin seeds and cook for 1 minute, or just add powder. Stir in the ginger, crushed red pepper, and onions. Cook until onions are soft, about 5ish minutes.
  • Add tomatoes and cook for 5 more minutes, until nice and saucy. Season with salt and pepper.
  • Add chickpeas and cook for 5 minutes more. Garnish with cilantro. Yummies.

  • You can do this process on a work surface, within a bowl, or even with a stand mixer.Combine the flour and water and form a dough, kneading well to obtain a uniform texture. Though this chickpea flour pasta doesn't contain gluten, kneading is still important for a smooth dough.
  • You can shape/chop the oat flour pasta either by hand with a rolling pin or with a pasta machine.
  • To cook the pasta, bring a pot of salted water to a boil and then add the pasta. Cook it for between 7-8 minutes, until al-dente. Stir every minute or so, just to make sure the chickpea pasta doesn't stick together.
  • Lay the pasta out on a large tray in a well-ventilated area and dry until no longer pliable. You could also use a dehydrator for this - refer to manufacturer guidance for advice on times and temperatures. I tend to leave it to dry overnight, check in the morning, and continue as needed.If you live in a particularly humid or cold area then I would suggest simply storing the pasta in the freezer as drying may not be possible.
