Steps:

  • Pour boiling water over tea bag in a mug; let steep 4 to 6 minutes. Remove and discard tea bag.
  • Stir honey and sugar into tea to dissolve. Stir milk through tea to serve.

This naturally-sweetened chai latte tastes like a coffeehouse drink without the extra sugar or preservatives. You can make it with or without tea (for a caffeine-free drink) and it can be easily customized to your tastes!

2 cups almond milk ((or milk of choice))
2 black tea bags ((optional; I like to use Darjeeling))
3/4 teaspoon ground cinnamon (, or to taste)
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
3 tablespoons maple syrup ((or sweetener of choice))

Steps:

  • If using tea, keep in mind that this drink will have caffeine. Heat up the almond milk in a saucepan over medium-high heat, until it begins to bubble around the edges of the pan. Turn off the heat, and add the 2 tea bags to the pot of hot milk. Wait 3 to 5 minutes for the tea to steep, then remove the bags and continue with the next step.
  • If you're skipping the tea, add the plain almond milk to a sauce pan.
  • Now that the milk is in the saucepan (whether it's been brewed as tea, or not) add in the cinnamon, ginger, cloves, and maple syrup. Whisk to combine, stirring over medium heat, until the mixture is piping hot.
  • Adjust any seasoning to your taste and serve immediately. Leftovers can be stored in an airtight container for up to 4 days in the fridge. You can serve them chilled over ice, or reheat on the stove again.

2 cinnamon sticks
8 cardamom pods
4 cloves
6 peppercorns
1 star anise
2cm piece ginger, sliced
3 black teabag (such as ceylon, assam or English breakfast)
500ml whole milk, or coconut milk also works well
1-2 tbsp brown sugar
pinch cinnamon to serve

Steps:

  • Toast the spices in a dry frying pan until they are fragrant then put them, the ginger and tea bags into a teapot or cafetière with 500ml freshly boiled water and leave to infuse for 10 mins.
  • Heat the milk with the brown sugar, stirring until the sugar has dissolved. Once lightly steaming froth the top with a milk frother or whisk to create some foam.
  • Strain the tea between 4 mugs, or heatproof glasses, then pour in the milk, keeping the froth back. Stir to combine. Top each latte with a bit of the milk foam then dust with a pinch of cinnamon.

Steps:

  • Place the tea bags, cinnamon, ginger and allspice in the coffee filter of a drip coffeemaker. 4 oz whole milk
granulated sugar (to taste (about 2 heaped teaspoons per serving, traditionally))
1 heaping tablespoon of black tea (empty out tea bags to make a tablespoon if you don't buy loose leaves)
4 cardamom pods (smashed with side of a knife)
small piece of cinnamon stick
1/4 " coin of fresh ginger
pinch of fennel seeds (about 10 seeds)

Steps:

  • Bring water and milk to a simmer with desired spices in a medium saucepan. Reduce heat to lowest setting and add tea. Steep until tea takes on a deep, pinky-tan colour, about 3 minutes, stirring occasionally. Strain into a cup and stir in sugar to taste.

Steps:

  • Combine first 5 ingredients in medium saucepan. Using mallet or back of large spoon, lightly crush or bruise spices. Add 6 cups water; bring to boil over high heat. Reduce heat to medium-low, partially cover pan, and simmer gently 10 minutes. Remove from heat. Add tea bags and steep 5 minutes. Discard tea bags. Add milk and sugar. Bring tea just to simmer over high heat, whisking until sugar dissolves. Strain chai into teapot and serve hot.

2 cups water
2 black tea bags (like English breakfast, OR 4 grams of loose-leaf tea leaves)
2 whole cloves (or 1/4 teaspoon ground cloves)
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground cardamom
1/2 tsp ground nutmeg
1/2 tsp ground allspice
2 TB pure maple syrup (or honey)
1/2 cup homemade chai tea concentrate (from the recipe above)
3/4 cup whole milk (or dairy-free milk: coconut milk, cashew milk, almond milk, oat milk)
1 TB pure maple syrup (or honey)
pinch ground cinnamon

Steps:

  • In a small saucepan, bring the water and spices to a boil. Whisk the spices in the water. Once the water reaches a boil, turn off the heat and allow the spices to steep in the water for 5 minutes.
  • After 5 minutes, turn the heat back on and add the black tea bags and maple syrup. Return to a slight boil (the goal is a hot liquid for steeping). Once boiling, turn off the heat. Steep the tea bags in the water and spices for 5 minutes.
  • Remove the tea bags and strain the tea through a fine mesh strainer. Reserve 1/2 cup of chai concentrate to make a latte right now. Store the remaining chai concentrate in a jar in the fridge up to 2 weeks.
  • In a small saucepan, bring the milk, maple syrup, and a pinch of cinnamon to a slight boil (the sides of the milk will begin to bubble), stirring often. Once the sides of the milk begin to bubble, remove the pan from heat.
  • Using an immersion blender, blend the milk until it's frothy. Alternatively, use a fork to vigorously whisk and froth the milk.
  • Pour 1/2 cup chai concentrate into a mug. Slowly pour in the frothed milk. Sprinkle the top with an extra pinch of cinnamon, if desired.
  • Serve warm.

1 tablespoon ground cardamom
1 tablespoon ground cinnamon
1 1/2 teaspoons ground ginger
1 teaspoon ground allspice
1/2 teaspoon finely grated fresh peeled ginger
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground cloves
Large pinch kosher salt
4 cups hot (not boiling) water
1 1/2 cups nonfat milk
1/2 cup sweetened condensed milk
1 tablespoon sugar
1 teaspoon ground cinnamon

Steps:

  • For the chai: In a 48-ounce French press coffee maker, combine the coffee, cardamom, cinnamon, ground ginger, allspice, grated ginger, pepper, cloves, salt and water. Place the lid on the coffee press with the plunger extended. Let the mixture brew for 4 minutes. Press down the plunger.
  • While the coffee mixture is brewing, whisk the nonfat milk in a heavy medium saucepan over medium-high heat until very thick and foamy, 5 to 6 minutes.
  • For the cinnamon sugar: In a small bowl, mix together the sugar and cinnamon until combined. Set aside.
  • Pour the coffee mixture into a medium saucepan and rewarm over medium heat. Stir in the condensed milk. Divide the chai among 4 cups and spoon large dollops of the whisked nonfat milk on top. Sprinkle with the cinnamon sugar and serve.

  • Place the cardamom pods, cloves, allspice, peppercorns and fennel seeds in a mortar and pestle and crush them until the cardamom pods crack open and the rest look somewhat crushed (or you can also place them on a cutting board and smash them with the side of a large knife).
  • Dump the crushed spices, cinnamon sticks, ginger and nutmeg in a bottom heavy pot. Over low-medium heat, toast the spice for 2 minutes. Add the water and turn the heat up to high to bring the water to a boil. Remove the pot from the heat, add in the star anise, vanilla bean, orange zest and brown sugar and cover with a lid. Allow the water to steep for 20-30 minutes. You can taste it and if you want it spicier, let it steep for another 10 minutes or so.
  • Once you like the spice level, bring the water back to a boil and then remove it from the heat again. Add the two tea bags, cover with a lid and let it steep for another 5-10 minutes (if it steeps longer, the tea will get bitter).
  • Strain the water into a clean jar and use as desired. I recommend equal parts concentrate and milk.
