2 cups gluten-free rolled oats
1 cup pecans, roughly chopped
1/3 cup pumpkin seeds
1/3 cup dried coconut
1/4 cup ground flaxseed
1/4 cup honey
1/3 cup raisins
1/3 cup chopped dried apples
1 cup puffed rice cereal, optional

Steps:

  • Preheat the oven to 350 degrees.
  • Spread the pecans and pumpkin seeds out on a baking tray. Bake in the oven until fragrant and toasted, about 7 minutes. Remove and set aside.
  • In a bowl, combine the rolled oats, coconut, and ground flax seeds. Mix well.
  • Drizzle the honey over the oat mixture, and stir well to completely incorporate the honey.
  • Add in the pecans and pepitas and stir to combine.
  • Spread the mixture out on a baking tray and bake for 10 minutes. Stir the muesli and bake until golden brown, about another 5-10 minutes. Remove from the oven and let cool on the baking tray.
  • In a bowl, combine the cooled muesli, raisins, dried apples, and puffed rice cereal. Toss to combine.
  • Serve your muesli with milk as a cereal, or soak overnight with yogurt and milk before serving.

Make your own cereal with my Homemade Bran Flakes, which pack protein, fiber, no added sugar - and loads of toasty flavor!

1 cup (5oz/142g) whole wheat flour
1 cup (3oz/85g) bran/millers bran
2 tablespoons ground flax
1/2 teaspoon salt
2 tablespoons molasses, ((maple syrup or honey will also work) )
1 tablespoon vegetable oil, (or any other flavorless oil )
1/3 cup (2 ½ floz/71ml) water
1/3 cup raisins*
1/4 cup dried fruit*
1/4 cup nuts or seeds*

Steps:

  • Preheat your oven to 300°F (150°C) then butter a 13 x 14 inch flat baking tray. Set aside.
  • In a large bowl, combine the whole wheat flour, bran flakes, flax, and salt.
  • In a small jug, combine the water, vegetable oil, and molasses.
  • Lastly, stream in the wet ingredients, holding some back initially. Mix with the back of your spatula until a sticky dough begins to form. If the mix is too dry add a little more of the wet ingredients until the dough comes together.
  • On a large flat surface, lay a tea towel underneath your greased baking tray (this will hold it in place while rolling). Transfer the sticky bran mix to the tray and cover with a large sheet of parchment paper.
  • Using a rolling pin roll the dough out to a very thin even sheet the size of the tray. Once rolled out, remove the parchment paper.
  • Bake the bran flakes for 45 - 50 minutes until completely dried out and crisp.
  • Remove from the oven and allow to slightly cool. When you can handle the bran, break it into small bite size flakes.
  • Cover and store in an airtight container for up to 3-4 weeks.

2 cups old fashioned rolled oats
1 cup brown rice
1 cup quinoa
1/2 cup flaxseeds
1/2 cup wheat germ*
1/2 cup unsweetened coconut flakes
1/4 cup sliced almonds (or other nuts you prefer)

Steps:

  • Place all the ingredients in a quality blender and pulse until well blended. The mixture should be a very coarse powder, not quite as fine as flour but very small pieces throughout. If you want even more control over the texture of your mix, you can pulse each ingredient separately and then combine. That's it! Easy, right? Just store in an air tight container and use whenever you like.
  • To make hot cereal, cook with a 3:1 ratio of water. I usually cook 1/3 cup hot cereal mix with 1 cup of water for a serving because I like to add lots of nuts, fresh fruit, sometimes nut butter, sweetener and sometimes almond milk. If you don't plan to add much to your mix, then I'd recommend cooking 1/2 cup mix with 1 1/2 cups water for a serving, but this is really up to you.
  • Bring water with a sprinkle of salt to a boil. Whisk in your hot cereal mix. Cover, reduce the heat, and cook for 8-9 minutes. Remove the lid, stir, and continue to cook for another minute.

2 c. unsweetened coconut flakes
1 c. sliced almonds
1 c. chopped pecans
1 c. chopped walnuts
1/3 c. flaxseed
1 tsp. cinnamon
3/4 c. olive oil
1 c. honey
2 tsp. salt
2 tsp. vanilla extract
2 tsp. maple flavoring

Steps:

  • In a large bowl, stir oats, coconut, nuts, flaxseed, and cinnamon together.
  • Combine oil and honey in a saucepan and heat until honey is melted. Add salt, vanilla, and maple flavoring. Stir and add to oat mixture, stirring to combine.
  • Pour onto a large cookie sheet pan or two 9x13 cake pans.
  • Bake at 275° for approximately 1 1/2 hours, or until the desired doneness. Stir several times while it is baking. (If you prefer chunky granola - do not stir until it is completely cooled.)
  • Cool completely and store in an airtight container.

Canola or vegetable oil baking spray, for the baking sheet
1 cup whole-wheat flour
1/2 cup wheat germ
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1 tablespoon honey or maple syrup
1 teaspoon pure vanilla extract
1 cup water, plus more if needed

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper and lightly spray with oil.
  • Whisk together the whole-wheat flour, wheat germ, cinnamon and salt in a medium bowl. Mix the honey and vanilla with the water in a liquid measuring cup, then slowly pour the liquid in a stream into the flour mixture, stirring constantly, until it becomes a pourable batter (like a thin pancake batter); add more or less water as necessary. Pour the batter onto the prepared baking sheet, then use an offset spatula to spread the batter evenly all the way to the edges, smoothing the top so that it is quite thin (you can also use a rolling pin and roll the batter out between two sheets of parchment paper). It should be no more than 1/4 inch thick.
  • Bake until the top is dry and begins to crack, 15 to 18 minutes. Let cool until it is cool enough to handle, 10 to 15 minutes. Reduce the oven temperature to 250 degrees F.
  • Break the baked layer into 1/2- to 1-inch pieces. Spread the broken pieces evenly on the same baking sheet. Bake, stirring halfway through and redistributing on the baking sheet, until the flakes are dried and crisp, 45 to 50 minutes. Allow to cool completely. The cereal can be stored in an airtight container at room temperature for up to 2 weeks.

1 cup wheat germ
1 cup wheat bran
½ cup brown sugar
½ cup vegetable oil

1 teaspoon salt
1 cup chopped dates
1 cup chopped pecans
1 cup flaked coconut

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • In a large bowl, mix oats, wheat germ, and wheat bran.
  • In a medium bowl, blend brown sugar, vegetable oil, honey, and water. Mix in vanilla extract, cinnamon, nutmeg, and salt. Stir the brown sugar mixture into the oat mixture until evenly moist, and transfer to a large, shallow baking dish.
  • Bake 45 minutes in the preheated oven, stirring every 15 minutes, until lightly brown. Mix dates, pecans, and coconut into the dish, and continue baking about 15 minutes. Allow to cool, and store in airtight containers.

This recipe for corn flakes cereal made from scratch bakes in the oven. It stays crunchy in milk and has a lovely sweet and toasted corn flavor that is almost identical to that of the boxed cereal. The recipe makes a small batch (enough for 2 to 3 small bowls of cereal), but you can easily double or triple it-just be sure to divide the batter into additional baking sheets so that it doesn't come out too thick. This cereal is also great to snack on, to top yogurt or ice cream, or to crush to use as breading.

Vegetable or grapeseed oil or nonstick baking spray, for greasing
1 1/2 cups yellow cornmeal
1 tablespoon sugar
1/2 teaspoon kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper or foil and grease lightly with oil or baking spray.
  • Whisk 1 cup of the cornmeal with the sugar and salt in a medium bowl. Add the vanilla extract and 3/4 cup water, a little at a time, stirring until the batter is smooth and thin. If it's too dry, add additional water. You want something the consistency of pancake batter.
  • Pour the batter onto the prepared baking sheet and spread out evenly. (It won't reach the edges, but that's OK. You want a nice thin layer, about 1/4 to 1/3 inch thick.)
  • Combine the remaining 1/2 cup cornmeal with 1 teaspoon water and mix until the mixture resembles coarse breadcrumbs; add an additional teaspoon or 2 of water, if too dry.
  • Sprinkle the top of the batter with the cornmeal crumbs (this will help give it a little extra crunchy texture).
  • Bake on the center rack, keeping a close eye on it, until the dough has dried out and cracked, 10 to 15 minutes. You're looking for a cracked arid-desert landscape look to it.
  • Remove from the oven and reduce the oven temperature to 250 degrees F. Let the baking sheet cool, then use your hands to tear and crack the dough into small flakes. Return to the oven and bake on the center rack until the pieces are toasted, crisp, and golden, about 45 minutes.
  • Let cool completely before serving with milk or as you would any cereal. Store leftovers in an airtight container in a cool dry place for up to 2 weeks.

  • Preheat your oven to 350 degrees and line two baking sheets with parchment paper or silicone baking mats.
  • In a large bowl whisk together the dry ingredients. In a separate small bowl, whisk together the wet ingredients. Pour the wet ingredients into the dry ingredients and stir until everything is combined and a dough forms.
  • Separate the dough in half and place one half on one prepared baking sheet and the other half of the dough on the second baking sheet. Rip off a large sheet of wax paper and lay it over top of the dough on one of your baking sheet. Using a rolling pin, roll the dough out as thin as you can by rolling on top of the wax paper.
