FRESH BLUEBERRY COFFEE CAKE



Fresh Blueberry Coffee Cake image

Marian Platt of Sequim, Washington assembles this convenient cake the night before she needs it. "Just pop it in the oven the next morning. Within minutes, you're enjoying its light texture and fruity taste," she reports.

Number Of Ingredients 8

1 egg
1/2 cup plus 2 tablespoons sugar, divided
1-1/4 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1/3 cup milk
3 tablespoons butter, melted
1 cup fresh blueberries

Steps:

  • In a bowl, beat egg. Gradually add 1/2 cup sugar; mix well. Combine the flour, baking powder and salt; add to sugar mixture alternately with milk. Stir in butter. Gently fold in blueberries. Pour into a greased 8-in. square baking pan. Sprinkle with remaining sugar. Bake at 350° for 35 minutes or until a toothpick inserted in the center comes out clean.

Easy Boysenberry Cobbler image

This boysenberry cobbler is butter and delicious! Use fresh or frozen boysenberries and make sure you have plenty of vanilla ice cream!

6 tbsp butter
3/4 C all purpose flour
3/4 C sugar
1 tsp baking powder
1/4 tsp salt
3/4 C milk
1/2 tsp lemon juice
2 C boysenberries (blackberries, raspberries, or other berries can be substituted)
1 tbsp turbinado sugar

Steps:

  • Place butter in an 8x8" pan and place in a 350 degree oven to melt.
  • Combine flour, sugar, baking powder and salt in a bowl. Combine milk and lemon juice and pour into the flour mixutre. Stir lightly until no dry spots remain. Remove pan from oven once butter has melted and pour the batter into the melted butter. Do not stir.
  • Arrange berries on top of batter, continuing to be careful not to stir the butter into the batter. Top with the turbinado sugar.
  • Bake 40-50 minutes until the top is golden and the berries are bubbling from the top. Serve warm with whipped cream or ice cream.

1 cooking spray
2 cups white sugar
¾ cup butter
3 eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
1 cup milk
1 tablespoon baking powder
1 (10 ounce) jar boysenberry preserves (with whole berries)
2 cups brown sugar
2 tablespoons brown sugar
1 ⅓ cups all-purpose flour
1 cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan with cooking spray.
  • Beat white sugar, 1 1/2 sticks butter, eggs, and vanilla extract in a bowl with electric mixer until fluffy. Add 4 cups flour, milk, and baking powder; mix until batter is thoroughly combined.
  • Pour half the batter into baking pan. Spread half the boysenberry preserves over batter; pour the rest of the batter into pan and spread remaining preserves on top.
  • Mix 2 cups plus 2 tablespoons brown sugar and 1 1/3 cup flour in a bowl; cut in 2 sticks butter with a fork until mixture resembles coarse crumbles. Sprinkle crumbles over the preserves until covered.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 55 to 60 minutes. Cool before cutting.

This is like a coffee cake and tastes alot like a cobbler. It is an old recipe from my grandma. If you can't find boysenberries, you can substitute with blackberries. This is delicious served with a scoop of vanilla ice cream.

1/4 cup shortening
1 cup milk
1 1/2 cups flour
1/8 teaspoon salt
2 cups sugar
2 teaspoons baking powder
2 cups boysenberries (frozen, partially thawed)
2 tablespoons butter

Steps:

  • In a bowl combine flour salt and baking powder.Cream the shortening and 1 cup of the sugar in a mixing bowl. Add the flour mixture to the shortening mixture alternately with the milk , beat until smooth. Grease a 13x9 pan and spread in the batter. Cover the batter with the 2 cups boysenberries. Cover the berries with the remaining 1 cup sugar and dot with butter. Pour 1 cup hot water over the berries. Bake at 325 degrees for about 1 hour.
