HOMEMADE BLUEBERRY SODA
Homemade Blueberry Soda is a fun DIY way to make sodas at home!

Steps:
- Combine blueberries, lemon juice and sugar in a medium saucepan. Slowly bring to a simmer over medium heat, stirring constantly until all the berries have popped, about 10 minutes. Remove pan from heat and let cool.
- Pour into an airtight container, like a mason jar, and refrigerate overnight.
- The next day, take mixture out of the refrigerator and strain through a fine mesh strainer. Store in an airtight container for up to 5 days.
- For one drink, fill a tall glass with ice. Add 3 Tbsp. of the Blueberry Syrup and then top with seltzer water. Stir gently and enjoy!

- Bring 1 cup water to a boil in a saucepan. Stir the sugar and basil into the water and return to a boil; cook at a boil for 10 minutes and immediately remove from heat. Chill in refrigerator until slightly cooled, about 10 minutes.
- Blend the blueberries, 1/2 cup water, and the lemon juice in a blender until smooth; pour into a pitcher. Remove the basil leaves from the simple-syrup mixture; discard the basil. Stir the syrup into the blueberry mixture. Add the carbonated water to the mixture and stir gently.

BLUEBERRY SODA

- Place the blueberries and the water into a medium saucepan, set over medium-high heat and bring to a boil. Reduce the heat to low and simmer for 15 minutes. Remove the saucepan from the heat and pour the mixture into a colander lined with cheesecloth that is set in a large bowl. Allow to cool for 15 minutes. Gather up the edges of the cheesecloth and squeeze out as much of the liquid as possible. Discard the skin and pulp. Return the blueberry juice to the saucepan along with the sugar and lime juice. Place over medium high heat and stir until the sugar has dissolved. Bring to a boil and cook for 2 minutes. Remove from the heat and transfer to a heatproof glass container and place in the refrigerator, uncovered, until completely cooled.
- To Serve: Combine 1/4 cup of the liquid with 8-ounces of carbonated water and serve over ice.
BLUEBERRY CREAM CHEESE WONTONS
While a little time-consuming at first, these come together quickly once you get the hang of them. Use any flavor pie filling you prefer, but chop any large fruit pieces to make the wontons easier to stuff. Perfect for a crowd!

- Cut 4 ounce block of cream cheese in half, then in half again to create 4 pieces. Further cut each piece in half again so you have 8 equal pieces total. Set aside.
- Working with 6 wonton wrappers at a time, separate them out onto a clean work surface. Divide one of the cream cheese pieces into 6 pieces and place a piece in the middle of each wonton wrapper. Place 1 teaspoon of blueberry pie filling over the top of the cream cheese. Do not overfill, as the mixture may ooze out.
- Use your finger to lightly wet the 4 edges of each wonton wrapper. Gently fold in half diagonally to make a triangle, then bring up the remaining two corners so all corners join together. Try not to leave excess air in the wonton, which can cause them to burst. Press seams together to ensure a tight seal. Set wontons aside, covered in a damp paper towel, while you finish making the remaining wontons.
- Preheat the air fryer to 325 degrees F (160 degrees C). Spray the inner basket with cooking spray and place as many wontons in basket as will fit, without overcrowding. Lightly mist wontons with cooking spray.
- Air-fry for 5 minutes. Remove to a cooling rack and dust with powdered sugar. Let cool while you cook the remaining wontons in batches. Best served slightly warm or at room temperature.
