Steps:
- Combine blackberry juice, sugar, cloves, cinnamon stick, and lemon zest in a large saucepan. Slowly bring to a boil, stirring until sugar dissolves, about 5 minutes. Remove from heat and allow to cool.
- Strain to remove spices and add rum.
- Pour liqueur into a sterilized bottle and seal. Store in a cool, dark place.

BLACKCURRANT CORDIAL
This easy recipe is a great way to use up a pick-your-own glut of blackcurrants and makes a refreshing summer drink

- Put the sugar in a large saucepan with 300ml water. Bring to a simmer then add the lemon zest and juice followed by the blackcurrants. Cook the mixture over a medium heat until the blackcurrants start to soften and burst.
- Pour the mixture through a sieve lined with muslin into a clean, heatproof jug then transfer to sterilised bottles. Keeps in the fridge for up to 1 month.
- Serve approx. 25ml of cordial per 100ml sparkling or still water, or dilute to taste.

- Add all ingredient to a large sauce pan and stir to combine. Bring to a boil over high heat.
- Once the mixture comes to a boil, continue to boil and stir for 5 minutes. Stir continuously and do not leave the mixture unattended.
- Next, turn off the heat, but leave the sauce pan on the burner. Allow the mixture to steep and cool for 1 hour.
- After the hour has passed, pour the mixture through cheesecloth to drain and to remove all of the berry seeds and/or pulp.
- Transfer to a sterile bottle or jar. Keep refrigerated.
- To use, pour approximately 1/4 cup of the syrup into a large drinking glass. Add ice and pour in 1 1/2 cups of cold water. Stir and enjoy.

BERRY CORDIAL
This is an easy way to make cordial and it's good for gifts! Other berries such as raspberries, strawberries or blueberries may be used in place of blackberries, and rum or brandy may be used in place of the vodka.

- Pour the sugar into a 1 quart jar. Fill the remaining space with berries, but do not pack down. Fill the jar with vodka so that the berries are completely covered. Seal the jar. Let the jar stand for 2 months, shaking the jar every week. The sugar should dissolve, and the vodka will become colored.
- Strain the liquid through a metal sieve, and then through a coffee filter to remove the fruit. Pour into pretty bottles. Drink as a cordial, or use it to flavor lemonade or iced tea.

I made some of this for the first time and am amazed at how much better it than the store bought stuff. Next time i make it I am planning to use blackberries instead and see how that is. - 1. Rinse the berries in a strainer pour into a large bowl and set aside and cover with plastic wrap.
- 2. Place 12 cups of cold water in a large pot add the sugar and place on the stove over medium heat and heat the water and sugar to boiling stirring constantly to dissolve the sugar, about 10 or 15 minutes.
- 3. Unwrap the bowl with the berries and add the lemon juice and stir till all berries are covered, then pour the hot water in the bowl with the berries.Stir it but don't stir to the point where the berries become mash. Just enough to move them around in the water. Cover the bowl again with plastic wrap and set aside in a cool dark place to cool for 12 hours. After the 12 hours place in the fridge for another 24 hours so as to let it blend.
- 4. After the 24 hours strain the berries with a fine mesh strainer or triple cheese cloth. Now at that point you can throw away the berries or save them for other recipes or freeze them for desserts later. Once straining is done just use a kitchen funnel to bottle the cordial or pour into gallon jugs or pitchers whatever you prefer. This cordial can be stored in the fridge for up to 1 month. Note: I'm not sure how many servings you can get but I came up with a gallon and plus some. Enjoy!
HOMEMADE BERRY CORDIAL RECIPE
Homemade cordial, also known as squash, syrup or in Scandinavia it's saft, is the perfect way of using a lot of ripe fruit and berries. Using high quality berries or even elderflower and you can get the taste of Summer all year around.

- Wash the berries, no need to remove all leaves and vines. Discard rotten and bruised berries.
- In the casserole that fits the cordial steamer snuggly, fill with water, leaving 2.5in (3cm) at the top. Top with the cordial steamer and pin the tube so the juice doesn't come out.
- In the cordial steamer, layer berries and sugar. Place the lid on and place something heavy on top. Do not open the lid during the steaming process.
- How long it will steam depends on your berries, but my red currant cordial needs about 80-90 minutes. It's usually not less than an hour, although raspberries, plums and pears need less, about 45 minutes.
- When it's done, take the pin off the tube and fill your sterilized glass bottles. Keep in a cool and dark place.
- Add the washed berries and water to a large casserole. Let it boil (covered with a lid) until the berries are pale and have released most of their juices. Make sure the berries don't break, as this will make your cordial cloudy.
- Add a damp old kitchen towel or cheesecloth to a large colander and the colander over a new casserole or big bowl. Pour the berry water in. Let this drip for at least one hour, do not help it as this will also make the cordial cloudy.
- Once it's done, pour the berry water back into a large saucepan along with sugar (and spices if using). Bring this up to a boil, remove foam with a spoon and once the foam is gone, pour into sterilized glass bottles. Keep in a cool and dark place.
- This method retains the most amount of nutrients in the berries, but it is also the one that keeps the worst. Plus, it needs more sugar to help preserve the cordial.
- Add washed berries to a blender or mash in a large bowl. You may need some water to help mash it. Pour over water and lemon juice (or citric acid/tartaric acid). Let this mixture sit overnight.
- Strain it through a sieve covered in a cheesecloth or damp old kitchen towel - remember to keep a bowl underneath. Combine with sugar. Pour into sterilized glass bottles.
- This will keep for up to 3 weeks in the fridge, but the best way to preserve it is to freeze it! To freeze: pour into smaller bottles, leaving some room as the liquid expands once frozen.
- When ready to serve, add 1 part cordial with 4 parts water to a glass. You may want more or less water depending on your own preference. Delicious both warm and cold, in a gløgg for Christmas or in this blackberry martini!

BLACKBERRY CORDIAL
After trying lemoncello, and learning how simple it is to make, in the middle of berry season here, this was inevitable. Blackberries, vodka and simple syrup combined to produce an absolutely delicious nectar. I used what I had on hand, which was 80 proof vodka, and it does freeze. For this reason I suggest using 100 proof vodka. Other than that nothing could be simpler.

- Fill quart jars with blackberries. Pour vodka in to cover berries. Put on the lids and put jars in a cool, dark place and forget about them for 2 to 4 weeks. Then, pour contents through a strainer and reserve liquid. In a heavy saucepan combine sugar and water and bring to boil, long enough to dissolve sugar. When this syrup cools a bit, add to blackberry liquid and stir. Pour liquid into container of choice and put in freezer. When chilled, it's good as is or, as we tried it, in a juice glass with ginger ale. It's indescribably good.

- Combine 2 1/2 pounds washed and stemmed blueberries and 1-quart good-quality vodka in a large, sterilized glass container. Seal and set in a dark, cool place for 1 week.
- After one week, pour through a sieve, reserving blueberries, and transfer blueberry-infused vodka into a clean, sterilized glass container and seal.
- Add 2 cups sugar to reserved blueberries, mix well, and transfer to a separate clean, sterilized glass container and seal. Place both containers in a dark, cool place for one month.

- Place the blackberries and lime zest in a medium saucepan with 100ml water and cook over a very low heat for 10-12 minutes, stirring regularly, until the fruit collapses. Strain through a fine-mesh sieve into a jug (see Kitchen Secret), pushing gently to extract all the juice. Transfer the juice to a medium saucepan and add the sugar – you should have about 500ml juice, but if you have significantly more or less, bear in mind that you'll need 350g sugar for every 500ml of juice, so just adjust the quantities accordingly. Discard any seedy pulp left in the sieve (or keep it and sweeten it up with a little honey before stirring through a bowl of yogurt for breakfast).
- Gently stir the blackberry juice and sugar mixture over a low heat until the sugar has completely dissolved, then increase the heat and bring just to the boil. Once it boils, immediately remove from the heat, then stir in the lime juice and pour the cordial in sterilised bottles.
- To serve, dilute 1 part cordial with 5 parts chilled water in a jug. Pour over crushed ice with a slice of lime.
