Homemade Black Walnut Extract for Baking image

This homemade black walnut extract will elevate your baking with deep walnut flavor. See how to make this old-fashioned flavoring.

1/2 cup shelled black walnuts
1/2 cup vodka ((80 proof minimum))
1/4 cup bourbon whiskey

Steps:

  • Heat a large skillet over medium heat. Add the black walnuts and toast until the walnuts are fragrant and golden brown, about 5 minutes. Stir frequently to prevent scorching.
  • Place the toasted black walnuts in a clean jar.
  • Pour the vodka and bourbon into the jar. Cover and give the jar a good shake to mix.
  • Label and date the jar. Place it in a dark, cool location for at least 2 months. Shake the jar occasionally during this time.
  • After 2 months, strain out the walnuts from the liquid using a fine mesh strainer. Pour the extract into a clean jar. Discard the walnuts or use immediately in baked goods.
  • Use the homemade black walnut extract in your favorite recipes to add a deep, toasted walnut flavor. Yields about 3/4 cup.

I got this recipe from an old Army mess hall sergeant who later became a chef down in Savannah, GA. This is a wonderful, different nut cake. It is equally good served warm or cold. This cake can be wrapped and frozen 3 to 5 months. Thaw, and if desired, reheat to serve.

1 cup butter, softened
½ cup shortening
3 cups sugar
5 eggs
3 cups all-purpose flour
½ teaspoon baking powder
1 teaspoon ground cinnamon
1 cup milk
½ teaspoon vanilla extract
½ cup chopped black walnuts

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan.
  • In a large bowl, cream together the butter, shortening, and sugar until light and fluffy. Beat in the eggs one at a time, mixing just until the yellow disappears. Combine the flour, baking powder, and cinnamon; stir into the creamed mixture alternately with the milk. Stir in the vanilla and walnuts, and pour into the prepared pan.
  • Bake for 1 hour and 30 minutes, or until a knife or toothpick inserted into the crown comes out clean. Cool in the pan for about 15 minutes before turning out of the pan onto a wire rack to cool completely.

1 cup chopped black or English walnuts
3 cups all-purpose flour, divided
1 cup butter, softened
2 cups sugar
4 large eggs
1 teaspoon vanilla extract
2 teaspoons baking powder
1/4 teaspoon salt
1 cup whole milk
FROSTING:
1-3/4 cups sugar
4 large egg whites
1/2 cup water
1/2 teaspoon cream of tartar
1 teaspoon vanilla extract

Steps:

  • In a bowl, toss walnuts with 1/4 cup flour; set aside. In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla; mix well., Combine the baking powder, salt and remaining flour; add to the creamed mixture alternately with milk. Stir in the reserved nut mixture., Transfer to a greased and floured 10-in. tube pan. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., In a heavy saucepan, combine sugar, egg whites, water and cream of tartar. With a portable mixer, beat on low speed for 1 minute. Continue beating on low speed over low heat until frosting reaches 160°, about 9 minutes., Pour into the bowl of a heavy-duty stand mixer; add vanilla. Beat on high speed until frosting forms stiff peaks, about 7 minutes. Frost the cake.

2 large eggs, room temperature
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour

1 cup packed dark brown sugar
1 egg
½ teaspoon baking soda
1 teaspoon maple flavored extract
2 cups all-purpose flour
1 teaspoon baking powder
1 ½ cups chopped black walnuts

Steps:

  • Cream butter and sugar. Beat in egg and add flavoring. Add in flour and baking powder dissolved in a couple drops of water. Add nuts and mix well.
