Quick and Easy Home Fries image

A quick way to make crispy home fries. Great for breakfast or as a side dish. Potatoes may be shredded and cooked in the same manner for crispy hash browns.

3 medium russet potatoes, cubed
3 tablespoons butter or margarine
salt and pepper to taste

Steps:

  • Rinse potato cubes with cold water, and drain well. Melt butter or margarine in a large skillet over medium heat. Place potatoes in the skillet, and stir to coat with butter. Season with salt and pepper. Cover with a lid, and cook for 10 minutes. Remove the lid, and cook for another 10 minutes, turning frequently until brown and crisp on all sides..

This homemade home fries recipe is made with uncooked cubes of red potatoes (skin on or off), onions, and red and green bell peppers fried until brown.

4 large red potatoes (washed, unpeeled, and cut into 1/2-inch dice)
2 tablespoons butter
1 large yellow onion (peeled and chopped)
2 cloves garlic (peeled and crushed)
1 ​large red bell pepper (washed and cut into 1/2-inch dice)
1 ​large green bell pepper (washed and cut into 1/2-inch dice
1/2 teaspoon paprika
Kosher salt (to taste)

Steps:

  • Gather the ingredients.
  • Heat a cast-iron skillet or another heavy-bottomed pan over medium heat.
  • Melt the butter, then add the onion and garlic and sauté until slightly translucent, about 2 minutes.
  • Add the diced red and green peppers and cook for another 2 minutes, stirring with a wooden spoon.
  • Add the potatoes and cook, stirring frequently, for another 15 to 20 minutes or until the potatoes are tender and lightly browned.
  • Season to taste with paprika and ​kosher salt.

My mom rushes into the kitchen whenever she hears I'm making these fries. They're great as a snack or a side dish.

2 russet potatoes, peeled and diced into one inch cubes (or 1 lb. of smaller potatoes, red or Yukon golds work, cut into quarters or in half for much smaller)
1/2 teaspoon tarragon
1/2 teaspoon rosemary (optional)
sea salt
fresh cracked pepper
1 -2 tablespoon olive oil (or vegetable oil)

Steps:

  • 1.) Heat olive oil in a large skillet and add the potatoes. Cover and cook for about 20 minutes, stirring every five minutes.
  • 2.) Sprinkle with sea salt, tarragon, a generous pinch of freshly cracked pepper, and rosemary (if you're using), stir, cover and let sit for about a minute or two to allow the flavors to be absorbed.
  • 3.) Uncover and stir the potatoes, cook them for about ten to fifteen minutes or until they're golden brown and serve hot. Eat them plain or add ketchup.

These dairy free cheese fries are a rich and comforting snack made with vegan and gluten free cheese sauce to drizzle over oven baked fries. This is the perfect side dish to go along with a burger or to make for your next BBQ or cookout. The cheese sauce can be made ahead of time, and heated to smother over fresh fries.

5 potatoes (cut into wedges)
1 tablespoon olive oil
1 teaspoon Montreal Steak Spice
2 tablespoons corn starch
2 carrots (roughly chopped)
1 potatoes (diced)
1 sweet onion (sliced)
1 tablespoon olive oil
1/2 teaspoon Himalayan sea salt
2 cups unsweetened soy or oat milk
1/3 cup nutritional yeast
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon mustard powder

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Cover 2 sheet pans with parchment paper.
  • Add all the fries ingredients to one Sheet Pan, toss well to combine and set aside.
  • On the other sheet pan add the carrots, potato, onion, olive oil, and salt. Toss well to combine.
  • Place both sheet pans in the oven, and roast for 40 minutes, flipping the vegetables halfway.
  • When vegetables are finished roasting, turn off the oven and leave the sheet pan with the fries in the oven. This will keep the fries warm as you make the cheese sauce. Add the carrots/potato/onion mixture to a blender with the reminder of the sauce ingredients.
  • Blend on high for 2 minutes until sauce is thick and creamy. If sauce is too thick, add 1/4 cup of plant milk until desired consistency.
  • Plate the fries, drizzle the cheese sauce on, and enjoy!
