Steps:
- Preheat oven to 400 degrees Fahrenheit. Cover 2 sheet pans with parchment paper.
- Add all the fries ingredients to one Sheet Pan, toss well to combine and set aside.
- On the other sheet pan add the carrots, potato, onion, olive oil, and salt. Toss well to combine.
- Place both sheet pans in the oven, and roast for 40 minutes, flipping the vegetables halfway.
- When vegetables are finished roasting, turn off the oven and leave the sheet pan with the fries in the oven. This will keep the fries warm as you make the cheese sauce. Add the carrots/potato/onion mixture to a blender with the reminder of the sauce ingredients.
- Blend on high for 2 minutes until sauce is thick and creamy. If sauce is too thick, add 1/4 cup of plant milk until desired consistency.
- Plate the fries, drizzle the cheese sauce on, and enjoy!

- In large skillet over medium heat, heat 1 tablespoon oil and cook onions and bell peppers until onions are softened, about 5 minutes. Add potatoes, herbs, spices and remaining oil, cook on medium to medium low heat, uncovered, for about 25 – 30 minutes stirring occasionally. You want the potatoes to brown and crisp a little on the edges. Be sure to scrap the bottom of the skillet as well to get all the pieces that may stick to the bottom, they will add nice flavor and some crispy texture to your dish.
- Leftovers can be stored in the refrigerator for up to 4 – 5 days, in a covered container. For longer storage, freeze for up to 2 months.

- Place the potatoes on a baking sheet and drizzle with 1 – 2 tablespoons olive oil and 2 tablespoons of fajita or taco seasoning. Mix everything well and bake for about 35 – 40 minutes, or until the potatoes are fork tender.
- While the potatoes are cooking, make the chipotle cream by placing everything but the cilantro in a blender and blending until smooth. Once smooth, add the cilantro and blitz it for 1 – 2 seconds, so little specs of green cilantro show throughout the sauce. Pour into a container and set aside.
- Next, place a large pan or large pot on medium heat. Once hot, add 1 tablespoon of olive oil, all of the bell peppers, and 1 tablespoon of fajita or taco seasoning. Stir well and cook for about 5 minutes, or until the peppers have softened slightly, but are not overcooked. You can cover the pot or pan with a lid to help the peppers cook faster, but be sure to watch them so they don’t burn.

- Peel (or leave skin on) and slice the potatoes to French fries shape. Try to keep them all about the same size, so they cook evenly.
- Place the potatoes in a bowl full of cold water and allow them to sit for 30 minutes, that way the potatoes release the starch and they will be super crispy. This step is optional, though.
