1 1/2 lbs beef flank steak
1 (10 1/2 ounce) can beef consomme or 1 (10 1/2 ounce) can condensed beef broth
1/4 cup soy sauce
1 teaspoon fresh ginger, grated
1 garlic clove, crushed
1 bunch green onion, sliced diagonally into 1-inch pieces
3 tablespoons cornstarch
2 tablespoons water
1/4 lb sugar snap pea
1 1/2 cups fresh bean sprouts
2 cups cooked rice

Steps:

  • Thinly slice flank steak diagonally across the grain.
  • In a slow cooker, combine steak, consomme, soy sauce, ginger, onions, and garlic.
  • Cover and cook on LOW 5-6 hours or until steak is tender.
  • Turn control to HIGH.
  • Dissolve cornstarch in water in a small bowl and stir into cooker.
  • Cover and cook on HIGH 10-15 minutes or until thickened.
  • During the last 5 minutes, drop in vegetables and re-cover.
  • Serve over rice.

Mac and cheese goes international with this Greek inspired dish. To make it even more authentic, you could substitute ground lamb for the beef.

1 lb ground beef
1 large onion, chopped
1 clove garlic, minced
1 (8 ounce) can tomato sauce
1/2 cup water
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1 lb elbow macaroni, cooked and drained
1 egg, sligtly beaten
1/2 cup grated parmesan cheese
1/4 cup butter or 1/4 cup margarine
1/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
3 cups milk
2 eggs, lightly beaten
1/3 cup grated parmesan cheese

Steps:

  • In a skillet, cook beef, onion, and garlic over medium heat until beef is no longer pink; drain.
  • Stir in tomato sauce, water and seasonings.
  • Cover and simmer for 10 minutes, stirring occasionaly.
  • Meanwhile, in a bowl, combine macaroni, egg and Parmesan cheese; set aside.
  • In a large saucepan, melt butter, stir in flour and cinnamon until smooth.
  • Gradually add milk.
  • Bring to a boil over medium heat; cook and stir for 2 minutes or until slightly thickened.
  • Remove from the heat; cool slightly.
  • Stir a snall amount of hot mixture into eggs; return all to pan.
  • Cook and stir for 2 minutes.
  • Remove from the heat; stir in cheese.
  • In a greased 3-qt baking dish, spread half of the macaroni mixture.
  • Top with beef mixture and remaining macaroni mixture.
  • Pour sauce over the top.
  • Bake, uncovered at 350 for 45-50 minutes or until bubbly and heated through.
  • Let stand 5 minutes before serving.

2 lbs round steaks, cut 1/2 inch thick
1/3 cup flour
2 teaspoons salt
2 tablespoons shortening (or drippings)
1 cup celery, chopped into 1/2 inch pieces
1/2 cup water
1 (16 ounce) can tomatoes, diced
1 large green pepper, cut into thin strips
1 garlic clove, minced
1 bay leaf
1/8 teaspoon cayenne pepper

Steps:

  • Partially freeze round steak and cut into thin strips, 2 or 3 inches long.
  • Combine flour and salt and dredge strips.
  • Brown strips in shortening in large pan and drain.
  • Add celery and water. Cover tightly and cook slowly for 15 minutes.
  • Add tomatoes, green pepper, onion, bay leaf, and cayenne pepper.
  • Cover and cook slowly for 30 minutes, stirring occasionally.
  • Serve plain or over rice.

2 lbs round steaks
1/3 cup vinegar
1/4 cup brown sugar
2 tablespoons canola oil
1 teaspoon garlic salt
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1/4 teaspoon pepper
1/4 cup ketchup
1 (8 ounce) can tomato sauce
1 tablespoon cornstarch

Steps:

  • Cut steak into strips.
  • Combine next 9 ingredients in a large bowl to make a marinade.
  • Add beef strips, stir, cover and refrigerate for at least 6 hours or overnight.
  • Drain beef strips, reserving marinade.
  • In a hot skillet, brown the beef strips for 3-4 minutes.
  • Meanwhile, combine ketchup, tomato sauce, and cornstarch with reserved marinade.
  • Pour over beef strips and stir.
  • Simmer for 15-20 minutes.
  • Serve on a bun or over rice.
