CT's staff cooked up a fun-filled treat-resembling a canning recipe card! Their creation deliciously began with a rich devil's food cake. To top it off, they prepared colorful fondant and shaped a jam jar, lines and letters. Bring out this confection at your next event, and guests are sure to request the "recipe"-a big piece of dessert!

1 package devil's food cake mix (regular size)
1/4 cup chocolate chips
1/4 cup heavy whipping cream
FONDANT:
6 tablespoons plus 1/2 teaspoon water
4-3/4 teaspoons meringue powder
1/4 teaspoon peppermint extract
6-3/4 cups plus 2 tablespoons confectioners' sugar
Red, green and yellow paste food coloring
Additional confectioners' sugar
10 inch square covered board

Steps:

  • Prepare cake batter according to package directions; pour into two greased 9-in. square baking pans and two greased muffin cups. Bake the cakes at 350° for 25 minutes and the cupcakes for 20 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a small microwave-safe bowl, combine chocolate chips and cream. Microwave on high for 30 seconds or until chips are melted; stir until smooth. Refrigerate for 20 minutes or until cool. Beat on high speed until soft peaks form. Place one cake on covered board; spread with chocolate mixture. Top with remaining cake. , In a bowl, whisk water, meringue powder and extract until powder is dissolved. Place confectioners' sugar in a large bowl. Add meringue mixture; mix until well blended and a very stiff dough forms, about 1 minute., Place 1/4 cup fondant each in two bowls; tint one pink and one green. Place 2 tablespoons in another bowl; tint gold. Place remaining fondant in a bowl; leave white. Cover bowls with plastic wrap when not in use. , Set aside 2 tablespoons white fondant. On a work surface heavily dusted with confectioners' sugar, roll out remaining white fondant into a 12-in. square. Slide an icing knife between fondant and work surface to loosen; transfer to cake. Smooth sides and corners around cake. Trim any overlapping fondant with a pizza cutter., For jar label, shape the reserved white fondant into 2-1/2x1-1/2-in. oval. Shape 1 tablespoon of pink fondant into a 1-3/4x1-in. oval. Place on white oval; set aside., For canning jar, cut a thin slice off the top of cupcake. Cut each cupcake in half from top to bottom. Referring to photo at left for position, stack cupcake halves and place cut side down on one side of cake. Shape remaining pink fondant around the three bottom halves; trim. Place label on jar., Using a toothpick or thin brush dipped in green food coloring, write "Jam" on the label. For jar lid, shape the gold fondant and place over fourth cupcake; trim. Using a toothpick, press 1/2-in. lines into jar lid., Roll out green fondant to 1/8-in. thickness. Using 1-in. alphabet cookie cutters, cut out letters to spell "Recipe". Center near the top of cake. Cut remaining green fondant into 1/8-in.- to 1/4-in. wide strips for recipe card lines. Place on cake next to jar. Cover and refrigerate until serving.

Easy Home-Canned Sauerkraut image

Homemade cabbage sauerkraut that can be made in small batches and home-canned that is every bit as delicious as the more extensive and time-consuming recipes.

3 medium heads cabbage, finely shredded
6 tablespoons pickling salt
water as needed

Steps:

  • Inspect 4 half-gallon glass jars for cracks. Clean jars and place right-side up on a rack in a large pot. Fill the jars and pot with water to 1 inch above the tops of the jars. Bring to a boil. Boil for 10 minutes, then remove jars.
  • Firmly pack cabbage into the sterilized jars to within 2 inches of the top; you may only fill 3 jars. Add 2 tablespoons pickling salt to each jar, then pour in water to within 1 inch of the top. Place a clean paper towel on top of each jar and secure a rubber band to keep it in place.
  • Set jars in a baking dish (in case brine bubbles over during fermentation) at room temperature, and allow to sit for 6 days. Each day, skim and discard any mold from the surface, and press cabbage down under the liquid with a spoon. Replace paper towels if necessary.
  • When sauerkraut has fermented, inspect 12 pint-sized jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water for 10 minutes. Wash new, unused lids and rings in warm soapy water.
  • Skim and discard any mold from the surface of the sauerkraut. Firmly pack sauerkraut into the hot, sterilized pint jars to within 1 inch of the top. Pour brine over the sauerkraut to within 1/2 inch of the top. Wipe rims with a clean damp cloth. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 15 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

  • Applesauce. While apples can be preserved in a myriad of ways, canning applesauce may be one of the first recipes you try. It really doesn’t matter what kind of apples they are, just be sure to sample while cooking, to get a feel for how sour your sauce may be, and adjust the flavor accordingly.
  • Apricot jam. If you have a crate, or two, of apricots to preserve, dehydrating is a wonderful option if you also enjoy plenty of sunshine – or if you own enough racks in your dehydrator.
  • Raspberry jam. If you happen to have a raspberry patch nearby, it only makes sense to can a few jars of old-fashioned raspberry jam. It only takes two ingredients.
  • Strawberry jam. It is always fun to grow strawberries at home, but if that doesn’t provide for all of your canning and fresh strawberry eating needs, then go out and pick your own from a local farm.
  • Cherries in honey. One of my favorite fruits to harvest in early summer is sour cherries, followed by mulberries and cherries. You might easily switch that order around though, if you enjoy life on the sweeter side.
  • Dill pickle slices and spears. There isn’t anyone out there who doesn’t like a nice crisp and crunchy pickle. Right? Well, maybe there are a few who would turn their heads away from these dill pickle spears in apple cider vinegar, but you cannot trust everyone’s opinion.
  • Zucchini pickles. The first time I canned pickles was not with cucumbers. It was with a glut of zucchini instead. The flavors still remain imprinted in my mind.
  • Zucchini relish. Savory zucchini relish is a fantastic way to use up older zucchinis that are headed into seed production, and the recipe is easy to scale up or down, depending on how much shredded zucchini you have.
  • Apple chutney. You can only eat so many jars of canned applesauce or apple compote. When that realization hits you, hopefully now (in summer), not in winter, you can lean on chutneys to bridge that gap between jams and pickles.
  • Tomato chutney. Out of the 26 ways to preserve tomatoes, tomato chutney should probably be number one – that’s just my well-informed bias there. While only slightly more difficult than making tomato sauce, it will challenge you to keep improving your canning skills as you increase your confidence in the kitchen.

  • Canning Jar Cakes. Yes, you can bake a cake in a canning jar. Better yet, canning jar cakes make wonderful edible gifts. Follow this easy step-by-step tutorial and you'll have yourself some canning jar cakes—also known as Pirate Cakes—in no time.
  • Gather Your One-Pint* Canning Jars. Start with clean, dry one-pint canning jars. Be sure to follow the washing instructions on the canning jar box. If re-using jars, be sure to use brand new lids and seals.
  • Grease the Jars. Using spray oil, completely cover the inside of the canning jars. Preheat the oven to the temperature as directed in your cake or quick bread recipe.
  • Use a Baking Sheet. A baking sheet, preferably with sides, is needed to support the canning jar cakes in and out of the oven. Continue to 5 of 8 below.
  • Add Batter to Jar. Use a 1/4 cup scoop to add the batter to the jar. Any batter that sticks to the side, wipe out. Fill the jars to just under the 1-cup mark.

  • Cover the Jars. For the jars to seal themselves, the jars must still be hot. The lids should also be at least room temperature. Sit them on the stove, if necessary.
  • Decorate the Jars. To decorate the jars, try using a 10-inch square of fabric cut with pinking shears. If you'd like to spruce up this edible gift, write down the name of the cake on a blank business card, along with the ingredients on it, and attach it to the jar by using a hole punch and a tie.
