Provided by Trisha Yearwood

Categories     side-dish

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 14

2 russet potatoes
2 sweet potatoes
2 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh rosemary
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon granulated garlic
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup packed fresh dill
1/4 cup packed fresh flat leaf parsley
1 tablespoon spicy brown mustard
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt

Steps:

  • For the taters: Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • Thoroughly wash the skins of the potatoes. Cut each in half lengthwise, then slice the halves into 2 to 3 wedges each.
  • Place the wedges in a large mixing bowl. Drizzle in the olive oil and sprinkle in the rosemary, salt, black pepper and granulated garlic. Toss until the potatoes are thoroughly coated.
  • Spread the potatoes out on the prepared baking sheet, being sure to leave space in between the wedges. Bake in the middle of the oven until almost tender, about 25 minutes. Flip the wedges over and bake until the edges are crispy and turning brown, about 10 minutes more.
  • For the dipping sauce: Meanwhile, place the mayonnaise, sour cream, dill, parsley, mustard, pepper and salt in a food processor. Pulse until the fresh herbs are chopped and the ingredients are combined, about 30 seconds. Pour into a small bowl and serve alongside the warm potato wedges.

Not too spicy, not too bland, just right for your taste buds. It is not your usual seasoned potato recipe; it has a lot of seasonings but it is amazing.

GREEK SEASONED BAKED POTATOES

Greek Seasoned Baked Potatoes image

My sister told me about this years and years ago. It's the only way I've made baked potatoes since then. The measurements are approximate because I really don't measure out the seasonings, I just sprinkle them on until it looks good! After baking, I like to top mine with butter, sour cream and shredded cheese. My DH is not a big fan of russet potatoes, so sometimes I use red or yellow potatoes.

Time 1h5m

Yield 1 serving(s)

Number Of Ingredients 4

1 medium baking potato
Pam cooking spray
1/4 teaspoon McCormick's Season All
1/4 teaspoon Cavenders All Purpose Greek Seasoning

Steps:

  • Preheat oven to 400 degrees.
  • Scrub potato, then use a sharp knife to pierce the skin several times all over.
  • Place the potato on a piece of foil and spray one side with PAM.
  • Sprinkle half of the seasoned salt and half of the Greek seasoning on the potato.
  • Flip the potato over and repeat steps with the rest of the seasonings.
  • Wrap potato securely in the foil and place in the hot oven. They tend to leak so you might want to place them on a piece of foil to help with clean up.
  • Bake for approximately 1 hour. Time will vary based on the size of the potato. I check mine by using a pot holder to gently squeeze the potato. It should feel soft and slightly mushy.
  • Note: Sometimes my husband also likes for me to substitute the Greek seasoning for Tony Chachere's Cajun seasoning on his.

BAKED POTATO WEDGES

Baked Potato Wedges image

These oven roasted potato wedges taste just like the deep-fried kind, but they're easier and less messy to make. They're great served with fish or any meat dish. -Melody Haney, Barberton, Ohio

HOLLY TATERS - SEASONED BAKED POTATOES

Holly Taters - Seasoned Baked Potatoes image

I grew up with a chain of fried chicken fast food joints. They had the best seasoned potatoes. Below is my late grandma's recipe for baking instead of frying. These are also great to make ahead and bake later. I take these to work when we have lunch for the staff.

1/2 cup margarine

Steps:

  • Preheat oven to 375. Melt stick of margarine in METAL baking pan(glass pans seem to make the taters soggy) . Wash and quarter the potatoes - keep the skin on. In a plastic zip-loc bag put all the dry ingredients. Coat the potatoes and place in a single layer in pan. Bake for 45 minutes.
  • I keep the mix in the fridge for making one or two potatoes.
