NEW ZEALAND HOLLY COOKIES

Almost too pretty a cookie to eat, but they taste so good! I actually won first prize for these cookies when I was a girlscout at age 13. Although I am unsure of the origin of the recipe, I thought it was too good to keep to myself. If you're creative and are up for a challenge, this is a perfect recipe for you. (requires a clean small paintbrush)

Number Of Ingredients 13

2 cups flour
1 cup sugar
1 teaspoon cinnamon
3/4 teaspoon baking powder
2/3 cup raspberry jam
1/2 teaspoon vanilla
1/2 cup butter or 1/2 cup margarine
1/4 cup milk
1 large egg, beaten
2 -3 teaspoons milk
2 cups powdered sugar
red cinnamon candies
green food coloring

Steps:

  • Combine flour, sugar, cinnamon, baking powder and 1/4 tsp salt.
  • Cut in margarine (like pie dough).
  • Make a well in the center of the dough.
  • Combine egg and 1/4 cup milk and pour them into the well.
  • Stir dough until moist.
  • Flour a flat surface and roll dough out to 1/8" thick.
  • Cut into 2" circles.
  • Bake at 375°F for 8-10 minutes.
  • Place on a rack to cool.
  • Once cooled, place 1/2 tsp jam on the bottom of one cookie.
  • Cover the jam with another cookie, ie cookie- jam- cookie.
  • In a small bowl stir together powdered sugar, vanilla and enough milk to make a glaze.
  • Glaze the top of one side of each double cookie and place 2-3 cinnamon candies into the glaze.
  • The candies are to be the holly berries.
  • Allow glaze to set.
  • Use a small clean paintbrush to paint several holly leaves and a stem on each cookie using green food coloring.

These super simple Holly Cookies are a great addition to holiday baking!

1/2 cup (1 stick) butter
30 large (regular, not jumbo) marshmallows
1/2 teaspoon vanilla extract
1½ teaspoons green food coloring
3½ cups corn flakes
red cinnamon candies

Steps:

  • In a large pot, melt the butter and marshmallows over medium heat, stirring constantly. Add the vanilla and food coloring. Stir in the corn flakes.
  • Grease a spoon and drop spoonfuls of the mixture onto a greased cookie sheet, or vegetable oil sprayed wax paper. Place 3 red cinnamon candies on each bunch of "holly," pressing slightly so they stick.
  • Let sit until they have cooled and set.

  • prepare cookie sheet with a little oil or a silicone mat. place a rounded tbsps of dough on cookie sheet.

2 cups all-purpose flour
1 cup sugar
1 teaspoon ground cinnamon
3/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cold butter, cubed
1 large egg, room temperature
1/4 cup 2% milk
2/3 cup seedless raspberry jam
GLAZE:
2 cups confectioners' sugar
2 tablespoons 2% milk
1/2 teaspoon vanilla extract
Red Hots
Green food coloring

Steps:

  • In a large bowl, combine the first 5 ingredients. Cut in butter until mixture resembles coarse crumbs. In a small bowl, beat egg and milk. Add to crumb mixture just until moistened. Cover and refrigerate for 1 hour or until dough is easy to handle. , On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a 2-in. round cookie cutter. Place on ungreased baking sheets. Bake at 375° until edges are lightly browned, 8-10 minutes. Cool on wire racks. Spread jam on half of the cookies; top each with another cookie. , In a small bowl, combine the sugar, milk and vanilla until smooth; spread over cookies. Decorate with Red Hots before glaze is set. Let dry. Using a small new paintbrush and green food coloring, paint holly leaves on cookies.

I enjoy making these delectable treats for Christmas, along with the help of my husband. After I prepare the cookies and place them on a baking sheet, my husband then tops each with the Red Hots Cinnamon Candies. We love these no-bake cookie treats, they are colorful, festive, and delicious!

1/2 cup butter
30 large marshmallows
1-1/2 tsp. vanilla extract
1 tsp. green food coloring
4 cups corn flakes cereal
Red Hots cinnamon candies, to garnish cookies

Steps:

  • 1. Line 2 large baking sheets with wax paper; then set sheets aside.
  • 2. In a large kettle or Dutch oven, add the butter. (I used a 5-quart Teflon coated Dutch oven.)
  • 3. Melt the butter over low heat, then add the marshmallows; stirring constantly until the marshmallows have melted completely.
  • 4. Remove kettle from heat, and add the vanilla extract and food coloring; stirring until the food coloring has blended well into the melted marshmallow mixture.
  • 5. Drop mixture, one heaping tablespoon at a time onto the wax paper; spacing them at least 1-inch apart, then decorate each with 2-3 red hots cinnamon candies (quickly before they set).
  • 6. Allow cookies to set on the wax paper for a few hours, so they will harden.
  • 7. To store cookies, place them in an air tight container with a lid.
  • 8. Note: When I display the cookies on a platter, I keep them intact on the wax paper. If giving cookies to others, I cut closely around the wax paper and cookies with a scissors. And when ready to eat the cookies, just peel off the wax paper.

3/4 cup butter, softened
1 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2-3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Tinted frostings, colored sugars, edible glitter and nonpareils

Steps:

  • In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs and vanilla; mix well. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Chill until firm, 1 hour. , On a lightly floured surface, roll out dough to 1/4-in thickness. Cut out with Christmas cookie cutters of your choice. Using a floured spatula, transfer cookies to greased baking sheets. Bake at 375° until lightly browned, 8-10 minutes. Cool completely on wire racks., Decorate cookies with frosting and colored sugars.
