This comforting Greek baked pasta, which bears a striking resemblance to lasagna, derives its name from the Italian word "pasticcio." That translates to English as "a mess," indicating the forgiving, flexible nature of the dish. Many traditional pastitsio recipes call for beef -- which you can certainly use here -- but we use ground lamb for a fresh take on a classic (and many cooks prefer a combination). Because kefalotyri cheese and the long tubular noodles traditionally used in pastitsio can't be found in most American supermarkets, we substituted Parmesan and ziti in their place, but by all means, if you can get your hands on the real things, use them. The noodles and spiced meat sauce are layered in a casserole dish then topped with a creamy béchamel sauce and baked until golden. It's project cooking that's perfect for a cold winter's night.

2 tablespoons olive oil
1 medium red onion, finely chopped
2 garlic cloves, finely chopped
2 pounds ground lamb
1 tablespoon roughly chopped fresh oregano
1 tablespoon roughly chopped fresh thyme
2 teaspoons ground cinnamon
Kosher salt and black pepper
1 (28-ounce) can crushed tomatoes
1 (14-ounce) can diced tomatoes
2 1/2 cups whole milk
4 tablespoons unsalted butter (1/2 stick)
1/4 cup all-purpose flour
1/4 teaspoon freshly grated nutmeg
1 1/2 cups grated Pecorino or Parmesan cheese
1 pound ziti or penne pasta

Steps:

  • Make the sauce: In a large, deep skillet, heat the olive oil over medium. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, 1 minute.
  • Add the lamb, breaking up the meat with a spatula or wooden spoon, and cook until the moisture has evaporated and the meat is browned, 12 to 15 minutes. Stir in the oregano, thyme and cinnamon, and season with salt and pepper.
  • Stir in the crushed and diced tomatoes and their juices and bring to a simmer. Cook, stirring occasionally, until the flavors meld, 20 to 25 minutes. Season to taste with salt and pepper and set aside.
  • Heat the oven to 350 degrees and bring a large pot of salted water to a boil. Start the béchamel: In a medium saucepan, bring the milk to a simmer over medium. Make the roux: In a small saucepan, melt the butter over medium-low. Whisk the flour into the butter until a smooth, golden paste forms, about 2 minutes. Gradually whisk the warmed milk into the roux and cook, stirring frequently, until the sauce is smooth and thick, about 3 to 5 minutes. Whisk in the nutmeg and 1 cup cheese, season with salt and pepper and set aside.
  • Once the water boils, cook the pasta according to package instructions until 2 minutes short of al dente (the pasta will finish cooking in the oven). Drain and transfer it to a 9-by-13-inch baking dish. Drizzle with 1/2 cup béchamel and carefully stir in 2 cups meat sauce. Spoon the remaining meat sauce on top, then drizzle evenly with the remaining béchamel. Sprinkle with the remaining ½ cup cheese.
  • Place dish on a parchment-lined sheet pan and bake until the top is golden and begins to bubble, about 25 to 30 minutes. Allow the pasta to stand for 10 minutes before serving.

Another Splendid Table supper recipe. The sauce is incredibly delicious, don't worry about the amount of cinnamon. The goat cheese turns it creamy; feta can also be used, but it should be a creamy type like Bulgarian sheep milk feta. If fresh tomatoes are available, use 2 pounds instead of the canned tomatoes and grate them to make pulp. I use 1/2 pound lean ground lamb in this sauce.

1 medium onion, chopped
1/3 tighly packed cup coarsely chopped fresh flat leaf parsley
salt and pepper
1 tablespoon tomato paste
6 garlic cloves, minced
1 1/4 teaspoons dried oregano
2 teaspoons ground cinnamon
1 teaspoon sugar
1 teaspoon other mild-hot chilies or 1/2 teaspoon red pepper flakes
1/2 cup wine (dry, either red or white)
one 28-ounce can whole tomatoes with their juice
1 1/2-2 cups diced cooked chicken (optional) or 1 1/2-2 cups lamb (optional)
1 lb ziti pasta, broken into pieces bout 2 inches long or 1 lb a short hollow pasta
1 1/2 cups fresh goat cheese, crumbled

Steps:

  • Bring 5 quarts salted water to a boil to cook the pasta.
  • Generously film the bottom of a straight-sided 12-inch saute pan with olive oil and heat it over medium-high heat. Stir in the onions, parsley, and generous sprinklings of salt and pepper. Saute the onions to golden brown, then stir in the tomato paste, garlic, oregano, cinnamon, sugar, and Aleppo pepper. Turn the heat down to medium and saute for 1 minute. Add the wine and cook for 1 minute.
  • Add the canned tomatoes, crushing them with your hand as they go into the pot. If using fresh grated tomatoes, add the pulp and their juice. Raise the heat to medium-high and cook the sauce for 8 minutes, or until thick. Taste for seasoning, add the optional cooked meat, cover the pan and remove it from the heat.
  • Cook the pasta until it is tender but still has a little bite, about 8 minutes. As pasta cooks, reheat the sauce over medium-high heat. Drain the cooked pasta and add it to the sauce, tossing it over the heat for a minute to help the sauce permeate the noodles. Turn half the pasta mixture into a serving bowl and dot with half the cheese. Add the rest of the pasta and top with the remaining cheese.

1 package (16 ounces) elbow macaroni
1 pound ground beef
1 large onion, chopped
1 garlic clove, minced
1 can (8 ounces) tomato sauce
1/2 cup water
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1 large egg, lightly beaten
1/2 cup grated Parmesan cheese
SAUCE:
1/4 cup butter
1/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
3 cups 2% milk
2 large eggs, lightly beaten
1/3 cup grated Parmesan cheese

Steps:

  • Cook macaroni according to package directions. In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the tomato sauce, water and seasonings. Cover and simmer for 10 minutes, stirring occasionally. , Drain macaroni and place in a large bowl. Stir in egg and cheese; set aside. , For sauce, in a large saucepan, melt butter; stir in flour and cinnamon until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until slightly thickened. Remove from the heat. Stir a small amount of hot mixture into eggs; return all to pan, stirring constantly. Stir in cheese. , In a greased 3-qt. baking dish, spread half of the macaroni mixture. Top with beef mixture and remaining macaroni mixture. Pour sauce over the top. Bake, uncovered, at 350° for 45-50 minutes or until a thermometer reads 160°. Let stand for 5 minutes before serving.

  • Heat the olive oil in a medium saucepan over low heat and cook the onions until wilted and lightly browned, about 12 to 15 minutes. Stir in the garlic and swivel around in the pot a few times to soften. Stir in the mushroom powder and cocoa and cook for a minute or so to release their flavors.
  • Add the tomatoes, white wine, cinnamon stick, allspice berries, nutmeg and bay leaves. Bring to a simmer and add 2 cups of water. Bring back to a simmer. Season with salt and pepper. Cover and cook over low heat for about 45 minutes to an hour, until the sauce is thick and reduced to about 6 cups. Add additional water during the cooking if needed. Taste the sauce and add petimezi or honey and balsamic to adjust the balance. Add additional salt and pepper to taste. Remove the spices and bay leaves before serving.
  • To preserve the sauce: In a saucepan filled with water bring 2 – 3 clean jars and their caps to a simmer. Remove with kitchen tongs. Add the hot tomato sauce to the hot jars. Let cool. Screw the lids on loosely. Using tongs with a good grip and a potholder if necessary, place the jars in a saucepan with enough water to come about an inch beneath the lids. Bring to a simmer. Remove carefully with tongs and using a kitchen towel tighten the lids. Turn the jars over to stand on their lids and let cool. Store in a cupboard or refrigerator and refrigerate after opening if you don’t use all the sauce.
