Holiday Turkey With Honey Orange Glaze image

The best recipe by far we have ever made for Thanksgiving. The glaze makes the turkey sweet and succulent!

2 teaspoons rubbed sage
2 teaspoons salt
1 pinch dried thyme
1 (16 pound) whole turkey, neck and giblets removed
¼ cup butter
⅓ cup orange juice
⅓ cup orange marmalade
1 ½ teaspoons honey
1 orange, peeled, sectioned, and cut into bite-size pieces

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
  • Combine sage, salt, and thyme in a small bowl. Rub half of the sage mixture all over the turkey, then place the turkey in a large roasting pan. Set remaining sage mixture aside. Bring butter, orange juice, orange marmalade, honey, and orange sections to a boil in a saucepan over medium-high heat. Reduce heat and simmer uncovered until thickened, stirring occasionally, 15 to 20 minutes. Stir in the remaining sage mixture. Brush the turkey with the glaze.
  • Bake the turkey in the preheated oven for 5 hours and 30 minutes, basting every 30 minutes. Cover turkey lightly with foil and continue baking until no longer pink at the bone and the juices run clear, 30 minutes to 1 hour, occasionally brushing with the glaze. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the turkey from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 10 to 15 minutes before slicing.

A vegan turkey made with vital wheat gluten and chickpeas or tofu.

1 1/2 cups chickpeas ((or white beans or 14 oz. pressed firm tofu))
1 cup vegan broth ((chicken-style vegan broth tastes best))
2 tablespoons nutritional yeast
2 tablespoons refined coconut oil (melted (or any other neutral-flavored oil))
2 teaspoons poultry seasoning
2 teaspoons soy sauce (Bragg's Liquid Aminos)
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 1/3 cup vital wheat gluten
1/2 cup broth
2 tablespoons light olive oil (or other neutral-flavored oil)
1 teaspoon soy sauce (or Bragg's Liquid Aminos)
1 teaspoon oregano
1/4 teaspoon fresh ground pepper

Steps:

  • Add 1 1/2 cups chickpeas, 1 cup broth, 2 tbsp nutritional yeast, 2 tbsp melted coconut oil, 2 tsp poultry seasoning, 2 tsp soy sauce, 1/2 tsp salt, 1/4 tsp garlic powder, and 1/4 tsp onion powder to a food processor or blender.
  • Blend for about 30 seconds until you have a thick liquid. (It's okay if there are still a few chunks of the beans in it.)
  • Pour the liquid into a glass bowl (gluten will stick to plastic) and sprinkle 3/4 cup of gluten flour over it and fold it in with a silicone spatula.
  • Sprinkle the remaining gluten flour over it and continue to fold it in. Once it gets firm, use your hands to knead the dough for about 30 seconds until all of the gluten is incorporated.
  • Form the dough into one large loaf and wrap it tightly and completely in foil.
  • Place the wrapped "turkey" in a large steamer basket, cover, and steam for 1 hour. (You can now eat the "turkey" or you can baste and bake it for more flavor.)

1 tablespoon lemon juice
1 teaspoon poultry seasoning
1 teaspoon dried sweet basil leaves

Steps:

  • Blend butter with remaining ingredients.
  • Stuff turkey or season with salt and pepper. As desired.
  • Rub half the herb butter under skin of turkey.
  • Cook turkey according to your favorite method, basting with herb butter every half hour until done.

1 large turkey, neck and giblets reserved
1/2 cup(s) red onions, roughly chopped
4 large sprigs rosemary
1/2 tablespoon(s) poultry seasoning
1/2 tablespoon(s) ground sage
1/2 tablespoon(s) freshly ground black pepper, or more to taste (i always use mixed peppercorns)
1/4 cup(s) basil lemon butter, room temperature
1/4 cup(s) butter, room temperature
1/2 teaspoon(s) smoked paprika, or as needed
freshly ground black pepper, to taste
1/2 cup(s) low-sodium chicken broth

Steps:

  • Preheat oven at 325ºF. Remove neck and giblets; set aside. Thoroughly rinse the turkey under cold water and drain well.
  • Transfer it to a cutting board and tuck wings under. Add onions, rosemary sprigs and freshly ground black pepper to the bird's cavity.
  • Using a rubber spatula, gently slide it between the skin and the meat of each breast half to separate it making sure not to pierce or break the skin. Take about 2 tbsp. of Basil Lemon Butter per breast, slide it under the skin and move it around to evenly distribute it. Rub regular butter all over the bird and transfer to a roasting pan.
  • Season the turkey generously with paprika and more freshly ground black pepper. Pour chicken broth around the outside to jump start the pan juice. Cover legs with foil and loosely place a sheet of foil on top of the breast. Insert a probe in the thickest part of the thigh and transfer the pan to the preheated oven. Cook until the internal temperature reaches 170ºF, basting often, about 3 ½ hours depending on the size of the turkey.
  • Remove the foil during the last hour of cooking. Baste the turkey with the pan juices. For brown crusty skin, increase temperature to broil. Remove turkey from oven, baste with broth from roasting pan, transfer to a serving plate and cover with a doubled sheet of aluminum foil; allow to rest in a warm area for 10 to 15 minutes before slicing.
