FESTIVE RICE SALAD

- Cook rice according to package directions; cool. In a large bowl, combine the rice, peas, red pepper, onions and cranberries. In a small bowl, whisk the dressing ingredients. Drizzle over salad and toss to coat. Refrigerate until serving.

- To prepare the dressing, combine the vinegar, oil, water, dijon, garlic, and honey in a blender and blend until completely smooth. Set aside to let the flavors meld while you assemble the salad.

- Preheat oven to 375°F. Line a 15x10x1-inch baking pan with foil or parchment paper. Place cranberries and garlic cloves on pan. Drizzle with 1 tablespoon of the olive oil; sprinkle with 1/4 teaspoon each salt and pepper.
