3 cups white sugar
4 eggs
⅔ cup water
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground allspice
3 ½ cups all-purpose flour
2 teaspoons salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 (15 ounce) can pumpkin puree
1 cup chopped walnuts
1 cup raisins
1 cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7 x 3 inch loaf pans.
  • Mix oil, sugar, and eggs together in a large bowl. Mix in pumpkin puree and water. Stir together flour, soda, baking powder, salt, and spices. Add to the pumpkin mixture, and mix until just combined. Stir in nuts and raisins. Divide batter into prepared pans.
  • Bake for 1 hour. Cool on wire racks.

½ cup unsalted butter, softened
1 cup white sugar
2 eggs
1 (15 ounce) can pumpkin puree
½ teaspoon ground cinnamon
⅛ teaspoon Chinese five-spice powder
⅛ teaspoon ground allspice
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
¾ cup chopped toasted walnuts

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Spray a 9x5-inch loaf pan with cooking spray.
  • Mix butter and sugar in a large bowl until light and fluffy.
  • Whisk in eggs one at a time until combined.
  • Whisk in the pumpkin puree, cinnamon, Chinese five-spice powder, and allspice until combined.
  • Stir flour, salt, baking powder, and baking soda into the pumpkin mixture and mix until just combined. Stir in chopped walnuts.
  • Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

3 cups sugar
2 cups all-purpose flour
1 teaspoon each ground cinnamon, nutmeg and allspice
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 large eggs
1 can (15 ounces) solid-pack pumpkin
1 cup vegetable oil
1 teaspoon vanilla extract
1-1/2 cups chopped pecans

Steps:

  • In a bowl, combine the sugar, flour, spices, baking powder, baking soda and salt. In another bowl, combine the eggs, pumpkin, oil and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in pecans., Spoon into two greased and floured 8x4-in. loaf pans. Bake at 350° for 65-75 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pans to wire racks.

2 cups all-purpose flour
1-1/2 cups plus 4 teaspoons sugar, divided
1 cup whole wheat flour
1/2 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
2 large eggs
1 can (15 ounces) solid-pack pumpkin
1/2 cup canola oil
1/2 cup water
1 teaspoon vanilla extract
1/2 cup chopped pecans

Steps:

  • In a bowl, combine the all-purpose flour, 1-1/2 cups sugar, whole wheat flour, brown sugar, baking powder, cinnamon, allspice, baking soda, salt and nutmeg. Combine the eggs, pumpkin, oil, water and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in pecans., Spoon into two 8x4-in. loaf pans coated with cooking spray. Sprinkle with remaining sugar. Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pans to wire racks.

I honestly have no idea where I got this recipe. It's been hanging out in my recipe box as long as I've been doing holiday baking and I make it every year to put in my gift baskets at Christmas. It's always a huge hit and it's a little lower cal than most pumpkin breads. Oh . . . and it's milk free for those with milk allergies! Hope you like it as much as we do!

1 1/2 cups flour
1/2 teaspoon salt
1 cup sugar
1 teaspoon baking soda
1 cup pumpkin
1/2 cup olive oil
2 eggs (beaten)
1/4 cup water
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon allspice
walnuts (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Sift together flour, salt, sugar and soda.
  • Mix the pumpkin, olive oil, eggs, water, nutmeg, cinnamon and allspice.
  • Combine the two mixes (not to thoroughly).
  • Stir in walnuts* (*Optional and should be chopped).
  • Pour batter into well buttered pan.
  • Bake 50-60 minutes until toothpick comes out clean.
  • Turn out of pan and let cool on rack.

1/2 teaspoon ground cloves
1 (15 ounce) can pumpkin puree
1 cup chopped walnuts (can substitue pecans if desired)
1 cup raisins (your preference-white or purple)
1 cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F. Grease loaf pans (can make in bundt pans but need to adjust timing). Mix oil, sugar, and eggs together in a large bowl. Mix in pumpkin puree. Stir together flour, soda, baking powder, salt, and spices. Add to pumpkin mixture and mix until just combined. Fold in nuts and raisins and spread evenly into desired baking pan. Depending on oven, bake for 45 minutes-1 hour or until done. Set aside to cool on wire racks before slicing.
