Oats, peanut butter and M&M's give this bar mass appeal. When I have free time, I often bake a pan and pop it in the freezer to take a future potluck or bake dale.

2 cups quick-cooking oats
1-1/2 cups all-purpose flour
3/4 cup packed brown sugar
1-1/2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup butter, melted
1 package (12.6 ounces) peanut M&M's
1 can (14 ounces) sweetened condensed milk
1/2 cup chunky peanut butter
1 tablespoon vanilla extract

Steps:

  • In a bowl, combine the oats, flour, brown sugar, baking soda and salt. Add butter; mix until crumbly. Set aside 1 cup. Press the remaining crumb mixture into a greased 13-in. x 9-in. baking pan. Bake at 350° for 9-11 minutes or until edges are lightly browned (bars will puff up slightly)., Meanwhile, set aside 1 cup M&M's; chop remaining M&M's. In a bowl, combine the milk, peanut butter and vanilla; mix well. Stir in chopped M&M's. Pour over crust; carefully spread evenly. Sprinkle with reserved M&M's; gently press into peanut butter mixture. Sprinkle with reserved crumb mixture. Bake 18-22 minutes longer or until edges are lightly browned. Cool on a wire rack before cutting.

1 cup packed brown sugar
2/3 cup butter, melted
1/2 cup plus 2/3 cup peanut butter, divided
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 package (11 ounces) butterscotch chips
1 cup semisweet chocolate chips
1 cup chopped salted peanuts

Steps:

  • In a large bowl, combine the oats, brown sugar, butter, 1/2 cup peanut butter, corn syrup and vanilla. Press into a greased 13x9-in. baking pan. Bake at 375° for 12-14 minutes or until mixture is bubbly around the edges., In a microwave-safe bowl, melt butterscotch and chocolate chips; stir until smooth. Stir in peanuts and remaining peanut butter; spread over the oat mixture. Cool for 10 minutes; chill until set.

5 to 6 cups Special K cereal (less cereal results in gooier bars)
1/2 cup unsalted butter
1 cup light brown sugar, packed
1 cup light-colored corn syrup
heaping 1/2 cup peanut butter
1/2 teaspoon vanilla extract
1/4 teaspoon salt
one 12-ounce bag semi-sweet chocolate chips
1/4 cup unsalted butter
holiday sprinkles, as desired

Steps:

  • Line a 9×13-inch pan with aluminum foil for easier cleanup and spray with cooking spray; set aside.
  • To a large bowl, add the Special K; set aside.
  • To a medium, high-sided stockpot, add the butter and heat over medium-high heat to melt.
  • After the butter is mostly melted, add the brown sugar, corn syrup, and whisk to combine. Boil for 3 minutes, stirring intermittently.
  • Remove the pot from the heat, add the peanut butter, vanilla, salt, and whisk to incorporate.
  • Pour mixture over the Special K and using a spatula, stir to toss and coat evenly.
  • Turn cereal out into prepared pan, lightly pressing it with a spatula; set aside while you make the topping.
  • To a medium microwave-safe bowl, add the chocolate chips, butter, and heat in 3-second bursts until chips and butter have melted and can be stirred smooth.
  • Turn the chocolate topping out over the cereal, smoothing the top lightly with a spatula to distribute it.
  • Evenly sprinkle with the sprinkles and allow bars and chocolate to set up before serving, about 2 hours. If you're in a rush, you can put the pan in the fridge to save time.

1 cup toffee bar bits

Steps:

  • Heat oven to 350°F. Grease 13×9-inch pan. In large bowl, beat together peanut butter, butter, brown sugar, granulated sugar and vanilla 5 minutes or until thick and creamy. Beat in eggs, flour and salt. Stir in 1 cup chocolate chips. Spread evenly into pan. Bake bars 25 minutes or until lightly browned. 1/2 cup butter (softened)
1 egg yolk (room temperature)
1/2 cup peanut butter (creamy)
3/4 cup brown sugar
1/2 cup old fashioned oats
1 1/2 cup flour (can use part whole wheat)
1/2 tsp salt
12 oz semi-sweet chocolate chips (2 cups)
6 oz peanut butter chips (1 cup - I use Reese's)
1 cup English toffee bits

Steps:

  • Line a 9x13 inch baking pan with foil. Leave enough foil at the edges of the pan so you can lift out the candy (similar to fudge).
  • Preheat the oven to 350 degrees.
  • Beat butter, egg yolk, peanut butter, and sugar on medium speed until the mixture is creamy and smooth.
  • Add in the flour, oats, and salt to the mixture and beat on low until the ingredients are combined.
  • Press the mixture into the bottom of the pan. Bake the crust for 15 to 20 minutes or until light golden brown in color.
  • Remove the pan from the oven and scatter the chocolate and peanut butter chips over the crust. Return to the oven and let it cook for another 1-2 minutes until the chips begin to melt.
  • Remove the pan and use a spatula to spread the chocolate and peanut butter over the crust evenly. The chocolate chips and peanut butter chips will finish melting while you spread.
  • Finally, sprinkle the English toffee bits over the melted chips and gently press them into place. Be careful because the melted chips are hot.
  • Let the pan cool for several hours until the chocolate and peanut butter has set. Use the foil to lift the candy from the pan.
  • Cut toffee into desired shapes and store in an airtight container.

Steps:

  • Preheat oven to 350 degrees.
  • Line a 9x13 baking dish with parchment paper.
  • In a stand mixer, cream together softened butter, brown sugar and granulated sugar.
  • Blend in egg, egg yolk and vanilla.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt together.
  • With the mixer on low speed slowly pour in flour mixture.
  • Mix on medium low speed just until the flour is just incorporated.
  • Pour in chocolate chips and mix.
  • Press cookie dough evenly on the bottom of the parchment lined dish.

  • Let it cool in the pan for 1 hour.
  • Carefully remove the cookies from the pan by lifting up on the parchment paper.
  • Using a sharp knife, cut into 12 bars.
  • Serve.

1 Stick + 1 tbs Butter
2.5 c Light Brown Sugar, lightly packed
2/3 c Whole Milk
1 c Peanut Butter
1 tsp Vanilla Extract
4 c Confectioners Sugar

Steps:

  • Melt butter in a sauce pan over medium low heat.
  • Add the brown sugar and mix to incorporate.
  • Add the milk and vanilla and mix to combine. Bring the mixture to a simmer stirring constantly until the sugar is dissolved.
  • Remove from heat and add the peanut butter. Stir until the peanut butter is melted into the mixture.
  • Add confectioners sugar to a mixing bowl and pour the wet mixture over it.
  • Use a hand mixer, starting on low speed, to mix everything together. Increase speed until well incorporated. The mixture will become very thick.
  • Add the easy peanut butter fudge bar mixture to an 8 x 8 pan. I used a disposable foil pan but you could line a regular pan with parchment paper.
  • Cover and refrigerate for two hours to allow the fudge bars to set up.
  • Remove from the refrigerator. You can easily remove the entire set up fudge from the pan at this point. After removing, cut into squares.
  • Bag each bar into a holiday plastic gift bag and close with a twist tie. Finish with ribbon.

Healthy, easy to make peanut butter bars with chococolate

1 ½ cup natural peanut butter (or nut butter)
¼ cup maple syrup (or syrup sweetener (agave, honey, etc.))
6 tbsp coconut flour
3 tbsp ground flax meal
1 cup chocolate chips (I used Hu Kitchen (refined sugar free))
1 tsp coconut oil
flaky sea salt for topping (optional)

Steps:

  • Line an 8x8 inch pan with parchment paper going both ways.
  • In a mixing bowl, use a rubber spatula to mix together the peanut butter, syrup, coconut flour and ground flax meal untill well blended. Press the mixture into the bottom of the prepared pan.
  • Place the chocolate chips and coconut oil into heat proof bowl and melt using a microwave (15 second increments, stirring between each until smooth) or a double boiler.
  • Pour the chocolate over the peanut butter layer and smooth it out in an even layer. Chill for 1 hour in the refrigerator.
  • Use a sharp knife to cut into bars. For smooth and perfect edges, let the knife sit in hot water for 1 minute, wipe it dry and then slowly cut the bars so the knife melts the chocolate as it cuts. Serve!

¼ cup unsalted butter
⅓ cup brown sugar
1 teaspoon vanilla extract
¼ teaspoon Kosher salt
½ cup creamy peanut butter
2 ½ cups old-fashioned rolled oats
½ cup roasted salted peanuts
¼ cup mini chocolate chips

Steps:

  • Line a 9x9-inch baking dish with parchment paper so that some of the parchment hangs over two sides. Spray with cooking spray.
  • Add the honey, butter, and brown sugar to a medium saucepan. Cook over medium heat until the butter melts and the sugar dissolves, stirring occasionally. Let the mixture come to a light bubble for 1 minute while stirring.
  • When the butter mixture is ready, remove it from the heat, and stir in the vanilla, salt, and peanut butter.
  • Add the oats and the peanuts to the saucepan, and stir to combine. Make sure none of the oats are dry.
  • Place all of the oat mixture in the prepared pan. Use a rubber spatula or the bottom of a greased measuring cup to press firmly the mixture into the pan very well.
  • Let this cool for about 10 minutes before sprinkling the mini chocolate chips over the top. Press the chocolate chips into the granola bars with the bottom of a measuring cup.
  • Let the granola bars cool for at least 2 hours. Lift the bars from the pan using the edges of the parchment, and place them on a cutting board. Cut into desired shape and size and serve.
