TRADITIONAL POPCORN BALLS

- Place popcorn in a large baking pan; keep warm in a 200° oven. , In a heavy saucepan, combine the sugar, corn syrup, water and salt. Cook over medium heat until a candy thermometer reads 235° (soft-ball stage). , Remove from the heat. Add the butter, vanilla and food coloring if desired; stir until butter is melted. Immediately pour over popcorn and stir until evenly coated. , When mixture is cool enough to handle, quickly shape into 3-in. balls, dipping hands in cold water to prevent sticking.

POPCORN CAKE
This is great for parties or any time. Looks pretty on a cake plate. Young and old enjoy this chocolate and popcorn combination. I have made this many times and has always been a hit.

Steps:
- Butter a bundt pan.
- Melt butter, oil and marshmallows in a large saucepan.
- Pour popcorn into a large bowl.
- Large roasting pan works for me.
- Add nuts and candies.
- Pour melted marshmallow mixture over corn, nuts and candies.
- Mix well, working quickly.
- Press mixture firmly into pan.
- Turn cake out immediately onto a large plate.
- Let set overnight for easy cutting.
- You may also use a 13 x 9 x 2 inch buttered pan and leave in pan for cutting.
- For Halloween make balls.

CANDY CORN POPCORN BALLS

- Heat a large pot over medium-high heat; add the popcorn kernels and peanut oil. When the oil starts to sizzle, sprinkle the sugar over the kernels. Cover with a tight-fitting lid and shake the pot until the popping slows down, about 8 minutes. Remove from the heat and set aside to cool. Spray a large bowl with cooking spray and add the popcorn, candy corn and peanuts.
- Combine the marshmallows and butter in a large pot over medium-high heat. Cook, stirring, until melted and smooth, about 5 minutes.
- Pour the melted marshmallow mixture over the popcorn mixture and gently toss to coat.
- Coat your hands with cooking spray, then shape the popcorn into 3-inch balls. Let cool.
HOLIDAY M&M'S POPCORN BALLS
Found this recipe in the Paula Deen's Holiday Baking Magazine and wanted to keep the recipe for christmas treats and gifts. The recipe is for using the microwave but this can also be made on stove top.

- Pop the kettle corn in the microwave as directed on package. Remove unpopped kernels.
- Microwave Method:.
- In a large bowl, combine marshmallows and butter. Microwave on high in 30 second intervals, stirring between each until marshmallows are melted and smooth (about 2 minutes)
- Add popcorn, stirring to coat.
- Cool 5 minutes.
- Stir in M&M's. Let set for 5 minutes.
- Dip hands in cold water and form mixture into 10 balls.
- Store popcorn balls in individual plastic bags at room temperature.
- Stove Top Method:.
- Melt butter in a large pot and add marshmallows.
- Stir until smooth and all melted.
- Add popcorn to a large bowl and pour the melted butter marshmallow mixture over top of popcorn. Stir well to coat popcorn.
- Let cool 5 minutes.
- Add M&M's and stir well. Let stand for 5 minutes.
- Dip hands in cold water and form mixture into 10 balls.
- Store popcorn in individual plastic bags at room temperature.

Steps:
- Spray large roasting pan sprayed lightly with nonstick cooking spray; add popcorn and place in 300ºF oven until warm.
- Combine sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to boil over medium heat. Continue stirring and boil 2 minutes.
- Remove syrup mixture from heat; stir in vanilla and baking soda.
- Pour syrup mixture over warm popcorn stirring to coat well. Add in sprinkles and mix to combine.
- Once mixture has cooled slightly and is able to be touched, spray your hands with nonstick cooking spray. Working quickly to shape twelve 3-inch popcorn balls.
- Cool completely. Wrap individually in plastic wrap.

- Spray large bowl, rubber spatula and piece of waxed paper with cooking spray; set aside. Pop kernel corn according to package directions. Remove all unpopped kernels and place half of popped corn (about 2 quarts) in bowl.
- Place 2 cups marshmallows and 2 tablespoons butter in microwave-safe bowl; microwave on HIGH 45 seconds or until marshmallows melt and mixture blends when stirred. Stir in food coloring.
- Pour marshmallow mixture over popped corn in bowl. Toss with rubber spatula to coat. Divide mixture and shape into 6 balls. Place on waxed paper. Decorate with coarse sugar and candy canes or gum drops, if desired.
- Repeat above steps with remaining popped corn, marshmallows and butter to make uncolored popcorn balls. Decorate with sugar and candy, if desired.
