  • Lightly toast the walnuts and pecans in the oven for 4-5 minutes at 350 degrees F and set aside. Once cooled, use your hands to break up the nuts into rough pieces. Break up the crackers into smaller pieces, but be careful not to crush them too fine.
  • Melt the butter in a large non-stick skillet over medium low heat. While we’re not a huge fan of non-stick cookware, it makes this recipe (and clean-up) much easier.
  • Add the marshmallows, and stir until melted (about 3 to 4 minutes).Once the marshmallows and butter are melted together, turn down the heat to low and immediately stir in the vanilla extract, toasted nuts, pistachios (or pumpkin seeds) and cranberries.
  • Add the crackers, breaking any larger pieces as you stir them. Use a folding motion to mix and stir the entire mixture until everything is uniformly coated. Do not compress the mixture together when stirring.

  • Pour 1/2 cup cold water into the bowl of a stand mixer fit with a whisk attachment. Pour the two gelatin packs over the cold water and let sit for about 10 minutes. If will firm to solid – that’s right.
  • In a medium saucepan over medium heat, bring sugar, corn syrup, molasses, salt and the remaining cold water to a boil. Stir to dissolve the sugar. Attach a candy thermometer to the side of the pan and bring mixture up to 240 degrees F. There’s no need to stir the mixture, just let it get hot hot hot!
  • When the sugar is heated to between 240-245 degrees F, turn the mixer with the gelatin and water on low speed. Carefully stream the hot sugar mixture into the bowl as the whisk moves. Be careful not to pour into the whisk and spatter the hot sugar all over the sides of the bowl. Gradually increase the speed of the mixer until you’ve added all of the hot sugar mixture. Beat on high for several minutes until a thick, fluffy, white marshmallow batter has formed… about 8 minutes. You want the whip until the batter holds is shape for several seconds before collapsing. Pour in the vanilla extract and spices and beat for another 2 minutes.

  • Step 1: Melt the butter and chocolate togetherThis could be done in a variety of ways. I chose to use a glass bowl and microwaved the 2 ingredients together for 1 minute. Then I stirred until the chocolate squares started to melt, microwaved for 30 more seconds, and stirred again until the chocolate was completely melted. (The microwave time may vary based on the strength of your microwave.) Step 2: Add powdered sugar and egg and beat well Make sure the melted mixture isn’t too hot, and stir in the powdered sugar and egg. The recipe I used is very old and called for an egg, so I used one! However, I did have my hesitation in putting a raw egg into a no bake recipe. So, if you’d rather not, just omit the egg. The recipe will turn out just fine without it. Beat the mixture together well until it’s nice and smooth. Step 3: Add marshmallows Pour in the whole package of marshmallows and stir until they are even distributed. Step 4: Lay out a large sheet of wax paper and pour on a generous a
  • Pour in the whole package of marshmallows and stir until they are even distributed. Step 4: Lay out a large sheet of wax paper and pour on a generous amount of coconut.I used the biggest flake coconut I could find, and used almost the whole bag. Step 5: Spoon the marshmallow mixture onto the center of the coconut and form a log shape.
  • Once the mixture was spooned out, I wet my hands with hot water and formed the mixture into a tight log. Then I spooned some of the coconut onto the top, and rolled the waxed paper around it. Step 6: Chill for at least 30 minutes and then slice

  • Melt the chocolate and the coconut oil in a tall mason jar in the microwave in 30 second increments. This will ensure that you don't burn the chocolate. Microwave it for 30 seconds, stir and do it again until it is completely melted.
  • Using a skewer, dip one marshmallow at a time in the melted chocolate then pull it out and shake it a little to let the excess chocolate drip off.
  • Turn the marshmallow up right with the skewer fitting in between the fork tines and gently pull out the skewer.
  • Using the skewer slowly and carefully push the marshmallow off the fork and onto the prepared and lined baking sheet.
