Steps:
- Arrange a rack in lowest level of oven; preheat to 300°F. Leaving fat intact, remove outer rind from most of ham, leaving a band around the end of the shank bone. Score fat crosswise (do not cut into meat) on top of ham with parallel cuts spaced 1/2" apart. Place ham in a large roasting pan. Boil 1 cup Riesling and 7 cups water in a saucepan for 5 minutes. Pour into bottom of roasting pan. Bake ham, basting with pan juices occasionally, until an instant-read thermometer inserted into center of ham registers 110°F, 2 1/2-3 hours.
- Meanwhile, melt butter in a medium skillet over medium heat. Add shallots and thyme sprigs; cook, stirring often, until shallots are very soft, about 10 minutes. Remove pan from heat; stir in the remaining 1 cup Riesling. Return to stove. Increase heat to medium-high, bring to a simmer, and cook until reduced to 1/4 cup, about 8 minutes. Remove the thyme sprigs and transfer mixture to a food processor. Add thyme leaves, mustard, honey, pepper, and salt. Process until well blended.
- Remove pan from oven and increase heat to 350°F. Using a pastry brush, spread Riesling mixture over ham. Return pan to oven and bake ham, tenting with foil if browning too quickly, until internal temperature registers 135°F and crust is golden brown, 15-30 minutes.
- Transfer ham to a large platter. Let rest for 30 minutes before carving. Skim fat from pan juices, reheat, and pour juices into a medium pitcher; serve alongside.
EASY HOLIDAY HAM
I was tired of using the cola ham glaze that I had made so many times in the past, so I created this glaze on a ham we made during Thanksgiving. This ham was so popular that I am making the same exact ham for Easter.

- Place the ham in a roasting pan with a rack. Pour the Riesling and the water into the bottom of the roasting pan. You want an inch of liquid in the roasting pan, so add more water if necessary as the ham is roasting.
- While the ham is baking, whisk together the Dijon, whole grain mustard, honey, and brown sugar. After the ham bakes for an hour, remove from the oven and cover it in the glaze. It’s ok if some falls into the pan – it will flavor the sauce! If needed, add more water to the bottom of the roasting pan.

- Old-Fashioned Ham with Brown Sugar and Mustard Glaze. Before brushing on the simple, four-ingredient glaze, score the fat in a diamond pattern; the rough surface helps the glaze adhere.
- Pineapple-Glazed Ham. To make this classic holiday ham, lacquer a smoked Virginia ham with mustard and brown sugar, dot its surface with pineapple rings and maraschino cherries, and coat with a garlicky pineapple sauce before baking.
- Smoked Ham with Sweet Country Mustard Sauce. The world's easiest ham recipe: Instead of slathering on a glaze, serve the smoked meat alongside a piquant mustard sauce.
- Spiral Ham in the Slow Cooker or Crockpot. Using your oven to bake biscuits? Then turn to the slow cooker for your spiral cut ham. Once finished, the meat will be super-tender and you’ll have a great cooking liquid to sop up with biscuits—or with potatoes or egg noodles.
- Thyme Honey Glazed Ham. A super-easy thyme butter makes all the difference in the complex-tasting, lightly sweetened glaze on this honey-baked ham.
- Baked Ham. This old-school Joy of Cooking recipe—complete with jellied cranberry garnish—has enduring appeal. You can use it with a fully cooked (ready to eat) ham or one labeled "cook before eating."
- Glazed Ham. Reminiscent of classic fruit-studded hams, this one is draped in glazed orange slices for its last 30 minutes in the oven. For a more modern presentation, the fruit is removed and used to decorate the serving platter.
- Holiday Ham with Riesling and Mustard. Between being basted in its own Riesling-infused pan juices and then glazed with a combination of sautéed shallots, thyme, whole-grain mustard, honey, and more Riesling, this is one incredibly flavorful ham.
- Spiced Pomegranate and Orange Glazed Ham. This recipe calls for a whole leg of ham, with the bone in, that has been pre-cured and pre-cooked. If you can’t buy a pre-cooked ham, ask your local butcher for a cured leg and follow their cooking instructions before glazing.
- Spicy Tamarind-and-Honey–Glazed Spiral Ham. This recipe is a sweet, sour, and spicy take on the classic centerpiece ham, and the leftovers will taste awesome in a mini potato roll.
