CHRISTMAS FRUIT DROP COOKIES

Why wait for the holidays to make a chewy, fruit- and nut-packed homemade cookie? They're delicious.

2 cups packed brown sugar
1 cup shortening
1/2 cup buttermilk
2 eggs
3 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups candied cherries, cut in half
2 cups chopped dates
1 1/2 cups chopped pecans
Pecan halves, if desired

Steps:

  • In large bowl, beat brown sugar, shortening, buttermilk and eggs with electric mixer on medium speed until blended, or mix with spoon. Gradually stir in flour, baking soda and salt. Stir in cherries, dates and chopped pecans. Cover and refrigerate 1 hour.
  • Heat oven to 375°F. Grease cookie sheet. Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet. Place a pecan half on each cookie.
  • Bake 8 to 10 minutes or until almost no indentation remains when touched lightly. Immediately remove from cookie sheet to wire rack.

Number Of Ingredients 7

2 packages cream cheese, softened
1 package ranch dressing mix
Freshly ground black pepper
5 flour tortillas
1/2 cup finely diced green bell peppers
1/2 cup finely diced red bell peppers
2 green onions, sliced

Steps:

  • Mix the cream cheese, ranch dressing mix and the black pepper together thoroughly.
  • Spread the mixture on the tortillas, and then sprinkle over the diced bell peppers and green onions. Roll up tightly, wrap in plastic wrap and refrigerate until party time (for at least 1 hour).
  • Slice into small wheels and serve.

These are chewy dropped cookies with a wonderful brown-sugar flavor. They're just ideal for Christmas. Recipe from one of the little recipe pamphlets Pillsbury used to include in their bags of flour at Christmastime.

3 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, at room temperature
2 cups light-brown sugar, firmly packed
2 eggs
1/2 cup buttermilk
1 teaspoon vanilla extract
1 1/2 cups chopped pecans or 1 1/2 cups walnuts
2 cups candied cherries, halved
2 cups cut-up pitted dates

Steps:

  • Sift together the flour, baking soda, and salt. Reserve.
  • Cream the softened butter and add the brown sugar and eggs. Beat until mixture is light and fluffy.
  • Add the buttermilk, vanilla, and flour mixture. Mix well. Stir in the nuts, cherry halves and cut-up dates.
  • Drop by teaspoonfuls on lightly greased cookie sheets. If you wish, you may top each cookie with a nut half for decoration. Bake in preheated oven 12 to 15 minutes, or until lightly browned.

Small vanilla wafer cookies wrapped in fruit snacks make brightly colored holiday ornaments.

20 vanilla wafer cookies
1 box Betty Crocker™ Fruit Roll-Ups® Blastin' Berry Hot Colors® chewy fruit flavored snacks
20 (3-inch) pieces string licorice
Coarse sugar, if desired

Steps:

  • Line cookie sheet with waxed paper or cooking parchment paper. Unroll and remove paper from Betty Crocker Fruit Roll-Ups. Cut each in fourths.
  • Making a loop for ornament using string licorice, and attach to back side of cookie, securing under fruit snack as you wrap fruit snack around cookie. Decorate with sugar, or cut pieces from remaining fruit snack to decorate. Place on cookie sheet.

These cookies truly say 'Christmas' to me, and they are a family favorite at holiday time! The dried currants, cinnamon, lemon, walnuts, butter, and dusting of powdered sugar make an absolutely delicious tasting cookie. They freeze well too. Recipe is from my dear father, who was a spectacular baker. From my family to yours...I hope you enjoy!

2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
3/4 cup butter
2 eggs
3/4 cup sugar
1 teaspoon lemon peel, grated
1 cup chopped walnuts
1 cup dried currant
confectioners' sugar

Steps:

  • Combine flour, baking powder, salt and cinnamon.
  • Cut butter into dry ingredients until crumbly.
  • Beat eggs; add sugar and beat well.
  • Stir into dry ingredients.
  • Add lemon peel, nuts and currants; mix well. Optional Tip: To soften the currants, add them to @ 2 tablespoons lemon juice and a tablespoon of brandy- - bring to a boil (I use the microwave) and remove from heat, cover and let steep for 15 to 30 minutes, then drain and add to recipe.
  • Drop by teaspoonfuls onto lightly buttered cookie sheets.
  • Bake in preheated 350 degree oven 12 to 15 minutes.
  • Remove to wire racks to cool.
  • Sprinkle with confectioner's sugar.
  • Makes 6 1/2 dozen.

1/3 cup butter, softened
1 tablespoon Gold Medal all-purpose flour
1 egg
2 boxes Betty Crocker™ Fruit Roll-Ups® Blastin' Berry Hot Colors® chewy fruit flavored snacks
1 box Betty Crocker™ Fruit Roll-Ups® Flavor Mixers chewy fruit flavored snacks
1 box Betty Crocker™ Fruit Gushers® red fruit flavored snacks (from tropical flavors variety pack)
1 container Betty Crocker™ Whipped fluffy white frosting
Coarse sugar

Steps:

  • Heat oven to 375°F. In medium bowl, mix cookie mix, butter, flour and egg until soft dough forms. On lightly floured surface, roll dough 1/4 inch thick. Cut dough with holiday cookie cutters. Place on ungreased cookie sheet.
  • Bake 7 to 9 minutes or until edges are light golden brown. Cool.
  • Unroll and remove paper from Betty Crocker Fruit Roll-Ups. Cut using same holiday cookie cutters, and place on top of same-shaped cookies, or cut different shapes and place on top of round cookies. Decorate cookies with remaining ingredients as desired, using suggestions below and referring to photos.
  • For holly leaf and berries, use Betty Crocker Fruit Gushers and green Betty Crocker Fruit Roll-Ups. For snowflake, use blue Betty Crocker Fruit Roll-Ups and coarse sugar. For candy cane, use red Betty Crocker Fruit Roll-Ups. For gift, use Betty Crocker Fruit Roll-Ups Flavor Mixers. For ornament, use Betty Crocker Fruit Roll-Ups Blastin' Berry. For bell, use Betty Crocker Whipped fluffy white frosting, melted in small microwavable bowl in microwave and Betty Crocker Fruit Roll-Ups Blastin' Berry.
