TRADITIONAL HOLIDAY STUFFING

1 package (12 ounces) reduced-fat bulk pork sausage or breakfast turkey sausage links, casings removed
3 celery ribs, chopped
1 large onion, chopped
2 tablespoons reduced-fat mayonnaise
2 tablespoons prepared mustard
4 teaspoons rubbed sage
1 tablespoon poultry seasoning
2 loaves (16 ounces each) day-old white bread, cubed
1 loaf (16 ounces) day-old whole wheat bread, cubed
3 large eggs, lightly beaten
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
Chopped fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large nonstick skillet cook, sausage, celery and onion over medium heat until meat is no longer pink, breaking up sausage into crumbles; drain. Remove from heat; stir in mayonnaise, mustard, sage and poultry seasoning., Place bread cubes in a large bowl; add sausage mixture and toss. In a small bowl, whisk eggs and broth; pour over bread cubes and stir gently to combine. Transfer to two 3-qt. baking dishes coated with cooking spray., Bake, covered, 30 minutes. Uncover and bake until lightly browned and a thermometer reads 165°, 12-18 minutes longer. If desired, top with chopped parsley.

This recipe was given to me by my friend Gloria 15 years ago. I have used it ever since then. No other dressing will serve the purpose, according to my adult son.

1 (7.5 ounce) package dry cornbread mix
1 cup butter
2 onions, chopped
1 green bell pepper, chopped
6 stalks celery, chopped
1 pound pork sausage
16 slices white bread
2 teaspoons dried sage
1 teaspoon dried thyme
1 teaspoon poultry seasoning
1 teaspoon salt
½ teaspoon ground black pepper
½ cup chopped fresh parsley
2 eggs
4 cups chicken stock

Steps:

  • Prepare corn bread as directed on package. Cool, and crumble.
  • Melt butter in a large skillet over medium heat. Cook onions, bell pepper, and celery in butter until tender, but not brown. In another pan, cook sausage over medium-high heat until evenly browned.
  • Place corn bread and bread slices in a food processor. Pulse until they turn into a crumbly mixture. Transfer mixture to a large bowl. Season with sage, thyme, poultry seasoning, salt, and pepper. Mix in chopped parsley, cooked vegetables, and sausage with drippings. Stir in eggs and chicken stock. This mixture should be a bit mushy. Transfer to a greased 9x13 inch pan.
  • Bake at 325 degrees F (165 degrees C) for 1 hour.

MAMA'S HOLIDAY DRESSING

Number Of Ingredients 11

Preheat oven to 425
Makes 10-12 large dressing mounds
4 cups bread, day old or somewhat stale, cubed into bite size pieces
2 ½ cups Pepperidge Farms Herb Seasoning mixture, can use similar brand product
3 ½ cups Pepperidge Farms Herb Seasoned CUBE Seasoning mixture, divided, can use similar brand product
¼ cup oil, bacon drippings excellent
1 cup sweet onions, small dice
1 cup celery with leaves, small dice/chop
1 Tbl. garlic paste
3 ½ cups turkey stock, preferably made from boiling the neck, gizzard, livers of the bird, can use prepacked chicken or vegetable stock or some of the liquid from the oven cooked bird
6 oz. butter, chilled, cut into medium dice

Steps:

  • In a very large bowl, combine the bread, herb seasoning and 3 cups of the cube seasoning mixture. Mix and blend. Add salt and pepper to taste. In a medium size skillet over medium high heat, put the oil. When hot add the onions, celery and garlic paste. Sauté (stirring and blending often) until soft and tender, about five minutes. Pour directly into the dry bread mixture. Deglaze and clean skillet with about ½ cup of the stock mixture. Add another two cups of liquid and blend well. Add the remaining liquid, as needed, to achieve a thick pliable and 'stick' to mixture. Make individual dressing mounds and place on a parchment paper lined cookie sheet. Make sure there's adequate space, about two inches, all around each dressing mound. Place a few of the remaining seasoning cubes and diced butter on top each of the dressings. Bake in a preheated 425 oven for about 30 to 35 minutes. Remove and serve.

This great-tasting recipe will solve your oven space problem if you don't usually stuff your holiday turkey. It's a newspaper clipping recipe that I tweaked just a little and I wouldn't plan to make my future dressing any other way, even if I had three ovens!

1 cup butter or 1 cup margarine
2 cups onions, chopped
2 cups celery, chopped
1/4 cup fresh parsley, chopped
12 ounces fresh mushrooms, sliced thin
12 cups dried bread, cubed
1 teaspoon paul prudhomme's poultry magic seasoning
1 1/2 teaspoons rubbed sage
1 teaspoon dried thyme
1/2 teaspoon dried marjoram
1 1/2 teaspoons kosher salt
1/2 teaspoon fresh peppercorn, ground
4 1/2 cups chicken broth
2 raw eggs, beaten

Steps:

  • Melt the butter in a skillet over medium heat and saute the onions, celery, mushrooms and the parsley until tender but not browned.
  • In a large mixing bowl, spoon the sauteed vegetables over the bread cubes and then add all the spices and herbs into the mix. Stir.
  • Mix the beaten eggs with the chicken stock and add this to the mix a little at a time as you stir carefully. You may not need every bit of the stock-egg blend so be careful to not turn your dressing into soup. You should still be able to discern the bread cubes but they should be fairly wet.
  • Transfer the mix into your crock pot (a large one is best) and cover.
  • Cook on High for an hour and then reduce to the Low setting and allow it to cook for four to eight more hours until it reaches the consistency that you like.
  • If you don't have the Paul Prudhomme seasoning you can use seasoned salt or, better yet, poultry seasoning.

  • ?Place your cubed bread onto a large baking ?sheet, and toast for 10-15 minutes at 325. Check halfway through and stir to ensure even toasting. You can use whatever is your favorite kind of bread. Multigrain adds great texture. Sourdough is wonderful as well. Even just a plain french loaf would be incredible. Bake your own if you are feeling especially ambitious, or buy from the bakery section, but stay away from the boxed and bagged stuffed mixes!
  • While your bread is toasting, melt butter in a large non-stick skillet and saute celery and onion. Add seasonings and herbs, stir to mix and then set aside.
  • Remove toasted bread from oven and place into a large bowl. Stir in butter/onion/celery/herb mixture and toss to evenly coat bread. Gently stir in broth, and place into a greased oven-safe baking dish. For stuffing, gently stuff into cleaned turkey or chicken cavity.
  • Bake at 325 for 30-40 minutes for dressing. For in-the-bird stuffing, make sure the internal temperature of the stuffing reaches a minimum of 165 degrees.

  • Cut off ends of plantains, cut them in half, then peel them. Slice plantains, and place them in a food processor. Pulse, scraping the bowl down as necessary, until plantains are about the consistency of rice.
  • Place olive oil in a large saucepan over medium low heat. When oil is warm, add onions and maple syrup. Cook low and slow, stirring occasionally, until onions are caramelized. (Be patient. This part takes a while!)
  • Turn heat down to low. Add carrots and celery. Cover and cook until vegetables are soft, about 5 minutes.
  • Bring heat to medium. Add riced plantains and cranberries. Sauté for 2 minutes. (The plantains will stick. Persevere.) Stir in the rest of the ingredients, and heat through. Taste for salt, and adjust if necessary. Serve!
