CANDIED ALMONDS RECIPE



Candied Almonds Recipe image

Candied Almonds are a classic snack and great dessert and salad topper. This easy candied holiday nuts recipe is made in the oven!

1 egg white
1 teaspoon cream of tartar
2 teaspoons vanilla extract
4 cups almonds
1/2 cup brown sugar
1/2 cup white granulated sugar
1 teaspoon salt
1 teaspoon cinnamon (optional)

Steps:

  • Preheat your oven to 275 degrees F
  • Line a baking sheet with a silicone baking mat or parchment paper. If you are using parchment paper, you may want to apply a light mist of cooking spray to prevent sticking. Set the prepared sheet aside.
  • Beat the egg white and cream of tartar together until light and frothy. This is best done with a stand mixer or electric hand mixer and will take about 4 minutes. Lightly beat in the vanilla extract to combine.
  • Fold the almonds into the beaten egg whites, until completely coated.
  • Put the two sugars and the sea salt in a small bowl and mix together. If you are adding cinnamon or hot pepper do so now.
  • Now stir this sugar mixture into the bowl with the egg coated almonds. Stir until well mixed.
  • Scoop the coated almonds onto your prepared pan and spread out. Avoid the almonds touching each other.
  • Bake for 45 minutes to 1 hour 20 minutes. Stir in 15 minute increments, to ensure even coating. Bake until the almond coating is nearly as crunchy as you like. The nuts will be a sticky at this point, as they cool to room temperature, but that stickiness will go away.
  • Cool the candied nuts completely on the baking sheet. Then break them up to enjoy or store in an airtight container.

1 cup butter, softened
1 cup almond paste
2-1/4 cups sugar, divided
2 large eggs, room temperature
1 teaspoon almond extract
2 cups all-purpose flour
1/2 cup slivered almonds

Steps:

  • In a large bowl, cream the butter, almond paste and 2 cups sugar until light and fluffy. Beat in eggs and extract. Gradually add flour just until moistened., Spread into a greased 13x9-in. baking dish. Sprinkle with remaining sugar; top with almonds. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares. Store in the refrigerator.

1 egg white
1 teaspoon cold water
4 cups whole almonds
½ cup white sugar
¼ teaspoon salt
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch jellyroll pan.
  • Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.
  • Bake for 1 hour in the preheated oven, stirring occasionally, until golden. Allow to cool, then store nuts in airtight containers.

1/2 cup packed brown sugar
1 teaspoon apple pie spice or pumpkin pie spice
1/2 teaspoon curry powder
1/4 teaspoon salt
1 tablespoon egg white
2 cups blanched almonds

Steps:

  • In a small bowl, combine brown sugar and seasonings; set aside. In another bowl, whisk egg white until foamy. Add almonds; toss to coat. Add spice mixture; toss to coat. , Spread on a greased foil-lined baking sheet. Bake at 325° for 20-25 minutes or until lightly browned, stirring occasionally. Cool completely. Store in an airtight container.

This is a delicious recipe for almond roca. My boyfriend's family loved this last Christmas, but I didn't want to tell them the recipe because it's so easy. Cook time does not include cooling time.

1 lb butter
2 cups sugar
1/4 teaspoon vanilla
12 ounces chocolate chips
1 -2 cup slivered almonds or 1 -2 cup sliced almonds

Steps:

  • Line a large cookie sheet (or two smaller) with aluminum foil, or lay aluminum foil over a large area on the counter or table.
  • Cook butter, sugar and vanilla in a saucepan to hard crack stage (285-290F), while stirring constantly.
  • Once heated, pour onto the aluminum foil lined surface.
  • Spread out to about 1/4-inch thickness.
  • Sprinkle with chocolate chips, let sit until beginning to melt, then spread chocolate out.
  • Sprinkle the top with almonds.
  • Let cool for 2 hours, then break into pieces.

Baked Brie With Almonds image

This easy baked Brie is a great appetizer if you're hosting a small holiday party. This Brie recipe is quick to make, but it'll disappear just as quickly.

1 Brie wheel (8-12 oz.)
¼ cup honey
Honeycomb pieces
¼ cup Marcona almonds
4-5 figs, quartered
Rosemary sprigs
Crackers

Steps:

  • Preheat oven to 350ºF.
  • Line a baking sheet with parchment paper and place Brie in the center. Bake for 8-10 minutes. To check if it's ready, gently touch the center of the Brie; it should be very soft.
  • With a spatula, carefully transfer Brie to a serving plate, drizzle with honey, and top with honeycomb pieces, Marcona almonds, figs, and rosemary sprigs. Serve with crackers.
