Hoisin chicken - easy chicken stir-fry with vegetables in a savory Hoisin sauce. This recipe takes 20 minutes with easy-to-get store ingredients.

2 tablespoons oil
2 cloves garlic, minced
3 oz. (85 g) broccoli florets
4 oz. (115 g) chicken breast meat, sliced into thin pieces
4 shiitake mushrooms, sliced
1/4 small carrot, peeled and sliced
1 pinch salt and sugar, to taste
1/2 teaspoon shaoxing rice wine or rice wine
1/2 teaspoon corn starch
1 tablespoon hoisin sauce
1 teaspoon soy sauce
1/2 teaspoon sesame oil
3 dashes white pepper
1/2 teaspoon corn starch
4 tablespoons water

Steps:

  • Marinate the chicken with the Marinade for about 10 minutes. Mix all the ingredients in the Sauce in a small bowl, stir to combine well.
  • Heat up a wok with the oil. When the wok is heated, add the garlic and stir-fry until aromatic. Transfer the broccoli into the wok and do a few quick stir. Add the chicken and continue to stir-fry. Add the mushroom, carrot, and the Sauce (stir it before using) and stir to mix well with the other ingredients in the wok.
  • When the sauce thicken and the chicken is cooked, add a pinch of salt and sugar to taste (optional), dish out and serve immediately with steamed rice.

Hoisin (or Hoi Sin) sauce also known is Chinese barbeque sauce, can be found pre-made in a jar at the supermarket. I prefer to use the "Fountain" brand, but there are many options these days. I've served this recipe hot as a main meal with an Asian Vegetable Stir-fry as a side dish. I've also brought them to a social function and thread them on small skewers, they were eaten cold as finger food. Ten minute marinating time is included in preparation. You can marinate this overnight or just ten minutes.

500 g boneless skinless chicken breasts
1/4 cup hoisin sauce
1 tablespoon fresh ginger, minced
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 tablespoon sesame seeds (optional)

Steps:

  • Cut chicken breast into one inch pieces and set aside.
  • In a medium bowl add Hoisin sauce, fresh ginger, sesame oil and rice vinegar, mix well.
  • Reserve about two tablespoons of the sauce to base the chicken while it's cooking.
  • Add chicken and mix well.
  • Cover and refrigerate for ten minutes.
  • Preheat BBQ or grill to medium high heat.
  • After ten minutes, thread chicken onto metal or wooden skewers.
  • Place the chicken on the BBQ or grill and cook chicken. While cooking base chicken with reserve sauce and turn often. Cooking time will depend on the thickness of the chicken, but should take about eight minutes until its slightly charred.
  • Serve and garnish with a sprinkle of sesame seeds.
  • Enjoy.

2 tablespoons vegetable oil, plus more for brushing
2 tablespoons soy sauce
2 teaspoons grated peeled ginger
1/2 teaspoon Chinese five-spice powder
1/2 teaspoon ground white pepper
1 1/2 pounds skinless, boneless chicken thighs, quartered
2 red or yellow bell peppers, cut into 1-inch pieces
4 bunches baby bok choy, quartered lengthwise
1/4 cup hoisin sauce
Toasted sesame seeds and sliced scallions, for topping
Kosher salt

Steps:

  • Preheat a grill to medium high and brush the grates with vegetable oil. Combine 2 tablespoons vegetable oil, the soy sauce, ginger, five-spice powder and white pepper in a large bowl. Add the chicken and toss to coat. Thread the chicken onto four 10-inch skewers. Thread the peppers and bok choy onto 4 more skewers.
  • Grill the chicken, covered, turning occasionally, until well marked, 10 to 12 minutes, brushing with the hoisin sauce during the last minute of grilling. Sprinkle with sesame seeds and scallions.
  • Meanwhile, brush the vegetable kebabs with vegetable oil and season with salt. Grill until the vegetables are charred, about 3 minutes per side. Serve with the chicken kebabs.

3 pounds boneless, skinless chicken breasts, cut into large cubes
1 cup plain yogurt
1 cup lemon juice
1 cup onion juice
1 cup olive oil
½ teaspoon chopped garlic
½ teaspoon ground black pepper
½ teaspoon saffron
8 skewers, or as needed

Steps:

  • Mix yogurt, lemon juice, onion juice, olive oil, garlic, black pepper, and saffron together in a large bowl. Add chicken pieces to the marinade and toss to coat. Cover with plastic wrap and marinate, 8 hours to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove chicken from marinade; thread through skewers. Discard unused marinade.
  • Cook on the preheated grill, turning frequently, until golden brown on all sides and meat is no longer pink in the center, about 8 minutes per side.

1 tablespoon oriental sesame oil
1 tablespoon unseasoned rice vinegar
2 skinless boneless chicken breast halves, cut into 1-inch pieces
1 tablespoon sesame seeds

Steps:

  • Prepare barbecue (medium-high heat). Whisk first 4 ingredients in medium bowl to blend. Place 2 tablespoons sauce in small bowl for glaze. Mix chicken into remaining sauce; let stand 10 minutes. Thread chicken onto 4 metal skewers, spacing pieces 1/2 inch apart. Sprinkle lightly with salt and pepper. Grill chicken until cooked through and slightly charred, brushing with glaze and turning often, about 8 minutes. Sprinkle with sesame seeds.

4 onion sandwich buns
1/4 cup honey
1/4 cup soy sauce
1/2 cup hoisin sauce
1 garlic clove
1/4 teaspoon ginger
1/4 teaspoon dry mustard
1/4 cup shredded cabbage (to taste)
2 tablespoons green onions, sliced (to taste)
1 tablespoon mayonnaise (to taste)
1 tablespoon hoisin sauce (to taste)

Steps:

  • Cut chicken breasts into strips and set aside.
  • Mix together all sauce ingredients thoroughly and marinate chicken for at least 2 hours.
  • Drain chicken, reserving marinade. Grill for 10 minutes, basting with marinade.
  • Grill buns at the same time chicken is grilling.
  • You can also choose to stir fry the chicken and cooking time will decrease significantly, and simply toast the buns under the broiler.
  • Put the chicken on the onion buns and add desired toppings. Good served with your favorite coleslaw.
  • I use my bread machine onion buns "Recipe #296559".
