1 tablespoon cornstarch
1/3 cup reduced-sodium chicken broth
4-1/2 teaspoons reduced-sodium soy sauce
4-1/2 teaspoons hoisin sauce
1 teaspoon sesame oil
3 cups fresh broccoli florets
1 tablespoon canola oil
4 green onions, chopped
3 garlic cloves, minced
1 teaspoon minced fresh gingerroot
1 pound uncooked medium shrimp, peeled and deveined
2 cups hot cooked rice

Steps:

  • In a small bowl, combine cornstarch and broth until smooth. Stir in the soy sauce, hoisin sauce and sesame oil; set aside., In a large nonstick skillet or wok, stir-fry broccoli in canola oil until crisp-tender. Add the onions, garlic and ginger; stir-fry for 3-4 minutes or until vegetables are tender. Add shrimp; stir-fry 4-5 minutes longer or until shrimp turn pink., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice.

Chewy, light rice noodles plus nice fat shrimp make a fabulous stir-fry that the entire family will love.

8 ounces rice noodles (linguine-width)
2 teaspoons cornstarch (dissolved in 2 tablespoons of water)
1 cup less-sodium chicken or vegetable broth
1/3 cup less-sodium soy sauce
2 tablespoons dry sherry
1 teaspoon sugar
1 tablespoon chili garlic sauce
2 tablespoons peanut, vegetable, or canola oil
1 tablespoon garlic (finely minced)
1 tablespoon ginger (finely minced)
2 pounds jumbo (21/25 count) shrimp (shelled and deveined)
3 tablespoons sliced chives

Steps:

  • Bring about 6 cups of water to a boil in a saucepan. Place the rice noodle in a large bowl, pour the water over, and use tongs or a fork to move the noodles about, stirring every minute or so until they are quite pliable but not soft. Drain the noodles and rinse them with cold water.
  • Meanwhile, in a container combine the cornstarch in water, broth, soy sauce, sherry, sugar, and chili garlic sauce. Shake to combine well.
  • Heat the oil in a wok, and add the garlic, ginger, and shrimp. Stir-fry for 2 minutes until the shrimp are mostly pink on the outside, then add the soaked rice noodles and toss to combine. Pour in the sauce (shaking it once more right before pouring in), and toss the shrimp and noodles occasionally as the sauce comes to a simmer and thickens about 3 minutes.
  • Serve hot with chives on top.

1 lb medium shrimp, in shells
1/2 cup water
1 tablespoon cornstarch
2 tablespoons soy sauce
1/2 cup hoisin sauce
1/4 cup oil
2 slices ginger, minced
1 garlic clove, crushed
3 scallions, cut in 1-inch pieces

Steps:

  • Remove shells from shrimp. De-vein and rinse. Pat dry on paper towels. Mix water, cornstarch, soy sauce and hoisin sauce in a small bowl. Set aside. Heat oil in wok; add ginger and garlic. Add shrimp and stir fry until they change to a pink color (about 5 minutes). Add scallions and stir fry for 1 minute; add sauce mixture and cook for 2 minutes.

2 teaspoons canola oil
1 cup carrot
2 garlic cloves, finely chopped
1 1/2 cups sugar snap peas
1/2 cup mixed mushrooms
1/2 lb shrimp
1 teaspoon flour
3 tablespoons hoisin sauce
2 tablespoons soy sauce

Steps:

  • In a wok or large skillet, heat your oil. Add the carrots and garlic. Cook over medium heat for about 3 minutes.
  • Add the mushrooms and snap peas. Cook until everything is tender.
  • Remove the veggies from the pan. Add the shrimp. Allow to cook on one side, then flip.
  • Sprinkle the flour over the shrimp and stir well until the flour lightly coats the shrimp.
  • Return the veggies to the pan.
  • Add the sauces, stir well to combine. Allow to heat for 1-2 minutes.
