This low carb Asian inspired hoisin chicken stir fry contains a combination of wheat and zucchini noodles and comes together in minutes. It is a healthy and delicious dinner idea the whole family will enjoy.

500 g chicken breast (skinless, cut into thin strips (approx.1cm))
4 tbsp Hoisin sauce
1½ medium zucchini (spiralized)
2 noodle nests (regular or wholewheat)
3 garlic cloves (chopped into matchsticks or finely chopped)
1 tbsp fresh ginger (chopped into matchsticks or finely chopped)
1 tsp chili flakes (or less if you want less heat)
2 spring onions
3 tbsp peanut or vegetable oil
Zest of 1 lime (and a drizzle of lime juice)
handful of cashews (for serving)

Steps:

  • Boil the noodles in salted water according to the packet instructions (or use ready-to-eat noodles). In a mixing bowl combine the chicken with 2 tablespoons of the hoisin sauce and 1 tablespoon of the oil and stir thoroughly. Set aside while you prepare the other ingredients.
  • In a wok heat up 1 tablespoon of the oil, add the chicken and stir fry over a fairly high heat for about 4 minutes or until cooked through. Transfer into a bowl (along with the juices) and set aside.
  • Wipe the wok clean (or give a quick rinse and wipe), heat up another tablespoon of the oil, add the garlic, ginger, chili flakes and spring onion (only the bulbs, roughly sliced) and stir fry over a medium heat for 3 minutes.
  • Toss in the spiralized zucchini, the rest of the hoisin sauce, sesame oil and stir to combine. Add the chicken (along with the juices) and noodles and stir fry for another 30 seconds just to heat through.
  • Remove from the heat, add a drizzle of soy sauce (or water if needed), scatter the sliced green onions, cashews and lime zest over the top, drizzle over a little lime juice and serve!

1 tablespoon olive oil
1 pound ground beef
1 medium onion (sliced)
3 cloves garlic (minced)
1 cup bok choy (shredded)
9 ounce ramen noodles
2 tablespoon oyster sauce
2 tablespoon hoisin sauce
1 tablespoon dark soy sauce
2 tablespoon sesame oil
2 teaspoon rice vinegar
3 green onions (chopped)
2 tablespoon sesame seeds
1 large carrot (shredded or sliced thin)

Steps:

  • Cook Noodles: Cook the ramen noodles according to package instructions until al dente. Drain and set aside.
  • Cook Beef: Heat the olive oil in a large wok or skillet over high heat. Add the ground beef and spread it out in the pan. Let it cook without touching it for at least 5 minutes or until all the meat juice has evaporated and there's a char on the bottom. Using a spatula flip the charred beef and toss it around.
  • Add veggies: Add the onion to the wok and cook for another minute, then add the garlic and cook for another 30 seconds or until aromatic. Add the bok choy and carrot and cook for another minute or until the carrot wilts just a bit. Turn off the heat.
  • Stir in noodles and sauces: Add the noodles to the wok then add the oyster sauce, hoisin sauce, dark soy sauce, vinegar and sesame oil to the wok and toss until everything is well combined.
  • Garnish and serve: Garnish with green onions, sesame seeds and serve.

1 tbsp soy sauce
1 tbsp dry sherry
2 tsp sesame oil
1 fat garlic clove , crushed
1 tsp finely chopped fresh root ginger (or fresh ginger paste in a jar)
200g lean sirloin steak , thinly sliced across the grain
1 tbsp sesame seeds
1 tbsp sunflower oil
1 large carrot , cut into matchsticks
100g mangetout , halved lengthways
140g mushrooms , sliced
3 tbsp hoisin sauce
Chinese noodles , to serve

Steps:

  • Mix together the soy sauce, sherry, sesame oil, garlic and ginger in a shallow dish. Add the steak and leave to marinate for about 20 minutes (or longer, if you have time).
  • Heat a large heavy-based frying pan or wok, add the sesame seeds and toast over a high heat, stirring, for a few minutes until golden. Tip on to a plate.
  • When ready to cook, heat the sunflower oil in a large frying pan or wok until hot. Add the steak with the marinade and stir fry for 3-4 minutes over a high heat until lightly browned. Remove, using a slotted spoon, on to a plate, leaving the juices in the pan.
  • Toss the carrots in the pan and stir fry for a few minutes, then add the mangetout and cook for a further 2 minutes.
  • Return the steak to the pan, add the mushrooms and toss everything together. Add the hoisin sauce and stir fry for a final minute. Sprinkle with the toasted sesame seeds and serve immediately.

1/3 cup hoisin sauce
2 garlic cloves, crushed
2 tablespoons dry sherry
1 tablespoon honey
2 tablespoons soy sauce
1/4 teaspoon Chinese five spice powder
4 boneless skinless chicken breasts, thinly sliced
1 lb egg noodles, fresh (I use yaki soba)
2 tablespoons vegetable oil
2 onions, sliced lengthwise
2 garlic cloves, crushed
4 bunches bok choy (4 lbs)
1 red bell pepper, thinly sliced
1 green pepper, thinly sliced
1 yellow pepper, thinly sliced
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • Combine all the marinade ingredients and the chicken in a dish and mix well.
  • Cover and refrigerate for several hours or overnight.
  • Drain the chicken from the marinade, reserve marinade.
  • Add the noodles to a pan of boiling water and simmer, uncovered for 3 minutes; drain.
  • Heat the oil in a wok or large pan, add the chicken in batches and cook, stirring, until the chicken is browned and tender; remove from the wok.
  • Reheat the wok, add the onions and garlic and cook, stirring, until the onion is soft.
  • Add the bok choy and bell peppers and cook, stirring, until the bok choy is wilted.
  • Add the noodles, toss well and then transfer to serving plates.
  • Blend the reserved marinade with the cornstarch and water.
  • Add to the wok and cook, stirring, until the mixture boils and thickens.
  • Return the chicken to the wok and stir-fry until heated through.
  • Spoon onto the bok choy mixture on the serving plates.
  • This recipe can be prepared a day ahead.

2 tbsp vegetable oil
500g (1 lb) beef mince
1 onion, sliced
2 garlic cloves, finely chopped
2 cups shredded Chinese cabbage (also known Napa or wombok cabbage)
1 cup shredded carrot
250g (9 oz) fresh Chinese egg noodles
2 tbsp oyster sauce
2 tbsp hoisin sauce
1 tsp dark sweet soy sauce
2 tsp white vinegar
¼ cup finely sliced spring onion (scallions)
sesame seeds, to serve

Steps:

  • Step 1.Heat the vegetable oil in a wok or large frying pan over high heat. Add the beef mince and spread it out in pan. Leave the beef to sear and cook for at least 5-6 minutes or until the meat juices evaporate and the beef starts to char. Now use a spatula to lift the charred beef from the pan and toss it around.
  • Step 2.Now add the onion and stir-fry for another minute. Add the garlic and stir-fry for another 20 seconds. Then add the cabbage and stir-fry for another 20 seconds. Then toss through the carrot until it's just wilted. Turn the heat off and set aside.
  • Step 3.Cook the noodles in boiling water for a minute or until just al dente. Drain and add to the pan with the beef. Turn the heat back to high and add the oyster sauce, hoisin sauce, dark sweet soy sauce and vinegar. Toss until well combined. Scatter over the spring onion and sesame seeds before serving.

Hoisin is the secret to creating an easy, no-cook Chinese sauce to serve with these cheap and cheerful noodles. Cooking the noodles and spinach in the same pan helps cut down on washing up, too. Make this dish for less than £1 per portion. Each serving provides 385 kcal, 18g protein, 56g carbohydrate (of which 8g sugars), 8.5g fat (of which 2g saturates), 5.5g fibre and 3.5g salt.

2 nests medium egg noodles
1 tbsp hoisin sauce
1½ tbsp soy sauce, plus extra for seasoning if needed
½ tsp toasted sesame oil
50g/1¾oz baby spinach
2 free-range eggs
2 large spring onions, thinly sliced
salt
toasted sesame seeds (optional), to garnish

Steps:

  • Cook the egg noodles in a pan of boiling water with a pinch of salt, over a medium-high heat according to packet instructions, until tender.
  • Meanwhile, whisk together the hoisin, soy sauce and sesame oil to make the sauce. You might want to add an extra half tablespoon of soy sauce, depending on how much salt there is in the hoisin sauce.
  • Remove the noodles from the heat and add the spinach to the pan.
  • While the spinach is wilting, dry fry the eggs in a non-stick frying pan over a high heat, taking care to ensure the eggs do not burn.
  • Drain the noodles and spinach well before returning them to the pan. Stir in the sauce and the spring onions. The spinach should contain enough residual water to help the sauce cover the noodles, but you can always add more of the reserved cooking water for a looser sauce. However, be careful not to make it too watery.
  • Divide the noodles between two bowls and top each with a fried egg. Sprinkle over the sesame seeds before serving, if using.
