I make these tangy-sweet appetizers every year during the holidays, and it doesn't take long for them to disappear.-Elaine Sweet, Dallas, Texas

2 tablespoons cornstarch
2 large eggs, lightly beaten
1/4 cup minced fresh chives
3 tablespoons dry bread crumbs
3 tablespoons hoisin sauce
4 teaspoons minced fresh gingerroot
3 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
3/4 pound lean ground beef (90% lean)
1/2 pound ground pork
2 to 3 tablespoons canola oil, divided
SAUCE:
1/2 cup red currant jelly
1/2 cup hoisin sauce
2 tablespoons mirin (sweet rice wine)
3 garlic cloves, minced
1-1/2 teaspoons Thai red chili paste
WRAPS:
36 small Bibb or Boston lettuce leaves
1/4 cup minced fresh cilantro

Steps:

  • Place cornstarch in a shallow bowl. In a large bowl, combine the next 7 ingredients. Add beef and pork; mix lightly but thoroughly. Shape into 1-in. balls; coat with cornstarch., In a large cast-iron or other heavy skillet, heat 2 tablespoons oil over medium heat. Brown meatballs in batches, adding additional oil as needed. Remove with a slotted spoon; drain on paper towels., Add sauce ingredients to skillet; cook and stir over medium heat until blended. Return meatballs to pan; bring to a boil. Reduce heat; simmer, uncovered, until meatballs are glazed and cooked through, 5-8 minutes, stirring occasionally. Serve meatballs in lettuce leaves; sprinkle with cilantro.

Just be sure to have plates or napkins available since the mixture can sometimes drip a little. To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Wrap the lettuce around the meat like a burrito and enjoy!

16 Boston Bibb or butter lettuce leaves
1 pound lean ground beef
1 tablespoon cooking oil
1 large onion, chopped
¼ cup hoisin sauce
2 cloves fresh garlic, minced
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
2 teaspoons minced pickled ginger
1 dash Asian chile pepper sauce, or to taste
1 (8 ounce) can water chestnuts, drained and finely chopped
1 bunch green onions, chopped
2 teaspoons Asian (dark) sesame oil

Steps:

  • Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  • Heat a large skillet over medium-high heat. Cook and stir beef and cooking oil in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease; transfer beef to a bowl. Cook and stir onion in the same skillet used for beef until slightly tender, 5 to 10 minutes. Stir hoisin sauce, garlic, soy sauce, vinegar, ginger, and chile pepper sauce into onions. Add water chestnuts, green onions, sesame oil, and cooked beef; cook and stir until the onions just begin to wilt, about 2 minutes.
  • Arrange lettuce leaves around the outer edge of a large serving platter and pile meat mixture in the center.

Baked Hoisin Chicken Meatball Lettuce Wraps image

Take on the takeout with healthy meatball lettuce wraps starring extra-moist baked Asian chicken meatballs.

Number Of Ingredients 12

1/4 cup whole milk
1/4 cup Panko breadcrumbs
1 1/2 lbs ground chicken
1/4 cup finely chopped scallions (white and green parts)
1 Tablespoon minced garlic
2 teaspoons minced fresh ginger
2 Tablespoons low sodium soy sauce
1 large egg, lightly beaten
1/2 cup hoisin sauce
1/4 cup blackberry preserves
1 head Boston lettuce, leaves separated
Sesame seeds, for garnish

Steps:

  • Preheat the oven to 500ºF and spray a mini-muffin pan or baking dish with cooking spray.
  • In a large bowl, stir together the milk and Panko breadcrumbs and let them sit for 5 minutes.
  • Add the ground chicken, scallions, garlic, ginger, soy sauce and egg to the bowl with the breadcrumbs. Use your hands to mix the ingredients just until combined. (See Kelly's Notes.)
  • Shape the meat mixture into balls using about 3 tablespoons of meat per meatball. Place the shaped meatballs into the prepared pan and bake for 15 minutes, or until the meatballs are fully cooked.
  • While the meatballs are baking, whisk together the hoisin sauce and blackberry jam in a small sauce pan over medium heat.
  • Remove the meatballs from the oven and either transfer them in batches into the glaze, tossing to coat, or brush the meatballs with the glaze. Place one or two meatballs in each leaf of lettuce, sprinkle with sesame seeds and serve.

1 lb boneless skinless chicken breast, 2-3
2 cups shredded coleslaw mix, with carrots
1 cup bean sprouts
1/4 cup sliced green onion
1/4 cup coarsely chopped dry roasted peanuts
1/4 cup hoisin sauce
1 teaspoon minced fresh ginger
1 dash hot sauce (to taste)
8 large lettuce leaves

Steps:

  • Place chicken in single layer in large saucepan and add enough water to cover by 1/2-inch. Bring to a boil, reduce heat to simmer, cover, and poach 12 to 15 minutes or until chicken is no longer pink inside. Drain and set aside to cool.
  • Place slaw mix in large bowl.
  • Add bean sprouts, scallion, peanuts, hoisin sauce, ginger and hot sauce.
  • Chop cooled chicken or shred to make about 2 cups and add to slaw mixture. Toss to combine well.
  • To serve, place lettuce leaves on platter or individual dishes and divide chicken mixture evenly among lettuce leaves, about 1/3 cup per leaf.
  • Or, allow guests to make their own lettuce wraps!
  • Fold sides over and roll up from stem end.
  • 4 servings.

1 lb pork loin (or chicken)
2 cups shiitake mushrooms or 2 cups portabella mushrooms, sliced
3 garlic cloves, crushed
1 tablespoon fresh ginger, grated
sea salt & freshly ground black pepper, to taste
1 small red pepper, seeded and finely chopped
0.5 (8 ounce) can water chestnuts, drained and chopped
3 green onions, chopped
1/4 cup hoisin sauce
16 romaine lettuce leaves

Steps:

  • Heat oil in large wok or skillet.
  • Cook pork over medium-high heat until pork is opaque.
  • Add mushrooms and cook until they begin to turn golden.
  • Add garlic, ginger, red pepper, water chestnuts, green onions, salt and pepper. Cook for 1 minute.
  • Add hoisin and toss to coat.
  • Transfer to platter and serve with lettuce leaves.
  • To eat, simply fill leaves with pork mixture, and enjoy!
