1/4 cup soy sauce
1/4 cup packed dark-brown sugar
2 tablespoons sherry
2 tablespoons freshly squeezed orange juice
2 tablespoons hoisin sauce
2 tablespoons peeled and grated fresh ginger
2 cloves garlic, minced
2 scallions, white and green parts, thinly sliced, plus more for garnish
1 tablespoon dry mustard
1 teaspoon crumbled dried chile, or crushed red pepper flakes
Zest of 1 orange

Steps:

  • Whisk together ingredients in a nonreactive bowl. Arrange meat in a shallow nonreactive dish or resealable plastic bag. Add marinade; rub gently into meat. Cover; refrigerate for length of time specified below, turning meat occasionally.
  • Before cooking, remove the meat from refrigerator and let it come to a cool room temperature. Cook as desired, basting with marinade during the first half of cooking to create a glaze. Garnish with scallions.

2 tablespoons oil
2 cloves garlic, minced
3 oz. (85 g) broccoli florets
4 oz. (115 g) chicken breast meat, sliced into thin pieces
4 shiitake mushrooms, sliced
1/4 small carrot, peeled and sliced
1 pinch salt and sugar, to taste
1/2 teaspoon shaoxing rice wine or rice wine
1/2 teaspoon corn starch
1 tablespoon hoisin sauce
1 teaspoon soy sauce
1/2 teaspoon sesame oil
3 dashes white pepper
1/2 teaspoon corn starch
4 tablespoons water

Steps:

  • Marinate the chicken with the Marinade for about 10 minutes. Mix all the ingredients in the Sauce in a small bowl, stir to combine well.
  • Heat up a wok with the oil. When the wok is heated, add the garlic and stir-fry until aromatic. Transfer the broccoli into the wok and do a few quick stir. Add the chicken and continue to stir-fry. Add the mushroom, carrot, and the Sauce (stir it before using) and stir to mix well with the other ingredients in the wok.
  • When the sauce thicken and the chicken is cooked, add a pinch of salt and sugar to taste (optional), dish out and serve immediately with steamed rice.

4 racks of higher-welfare baby back pork ribs, (1.5-2kg)
2 teaspoons Chinese five-spice
olive oil
1 bulb of garlic
2 oranges
290 ml hoisin sauce
1 bunch of fresh rosemary or thyme (30g), optional
450 g jasmine rice
SALAD
1 bunch of spring onions
1 bunch of radishes
1 bulb of fennel
3 fresh mixed-colour chillies
1 bunch of fresh coriander, (30g)
3 tablespoons sesame oil
1 tablespoon rice wine vinegar
1 teaspoon low-salt soy sauce
4 cm piece of ginger

Steps:

  • Preheat the oven to 160°C/325°F/gas 3.
  • Sprinkle the ribs with the five-spice and a good pinch of sea salt and black pepper, drizzle with 1 tablespoon of olive oil, then rub all over. Arrange the ribs in a large roasting tray. Break apart the garlic bulb and scatter over the unpeeled cloves, then halve and add the oranges.
  • Cover the tray tightly with tin foil, and roast in the middle of the oven for 3 hours, or until tender and cooked through.
  • Meanwhile, for the salad, trim the spring onions, radishes and fennel, and deseed the chillies, then finely slice it all lengthways and place into a bowl of ice-cold water to make it super-crisp. Pick in the coriander leaves and put aside.
  • Make a quick salad dressing by mixing the sesame oil, rice wine vinegar and soy together. Peel and finely grate in the ginger, then taste and season to perfection with black pepper.
  • Remove the tray from the oven and move the ribs to a board. Carefully squeeze the sticky orange juice back into the tray. Squeeze the soft garlic flesh out of the skins and mash it up, scraping up all the sticky bits from the tray.
  • Place the tray over a medium heat on the hob or over your barbecue, let it start to bubble, then pour in the hoisin sauce. Let it tick away for a few minutes, or until thick and shiny, then remove.
  • Now, dunk each rack of ribs in the glaze, using your woody herbs as a brush to generously coat them all over, and transferring to the cool side of the barbecue as you go. Cook for another 10 minutes or so, covered with the air valve open.
  • Meanwhile, cook the jasmine rice according to the packet instructions, then fluff up and divide between your plates. Drain and dry the salad veg, then toss with the dressing and plate up. Pile the sticky ribs on top, get stuck in, and get messy!

  • Oyster Sauce. Oyster sauce is probably the best hoisin sauce substitute since it is all about umami and used in the preparation of similar dishes. The dark brown condiment tastes like a combination of BBQ and soy sauce and is made from oyster extracts, sugar, and thickeners such as corn starch.
  • Soy Sauce. Soy sauce is also of Chinese origin and is made from fermented soybean paste. Traditionally the production process involves soaking and cooking soybeans, mixing them with other ingredients to ferment in brine, and then pressing, straining, and pasteurizing the brown salty liquid for bottling.

  • Fish Sauce. This is often used together with oyster sauce to flavor stir-fry. It is made from salt fermented fish or krill and although it lacks the sweetness of hoisin it has a salty and pungent flavor that will offer umami complexity in your dish.
  • Tamari. Tamari is very similar to soy sauce, with the main difference being that it does not contain wheat. It is made with fermented soybeans and also has a high salt content and low sweetness.
  • Worcestershire Sauce. Worcestershire sauce is dark brown with a very thin consistency. It is made from a blend of vinegar, spices, sugar, anchovies, garlic, onions, molasses, salt, and tamarind extract.
  • A1 Steak Sauce. With a similar taste to Worcestershire sauce, A1 Steak Sauce is a little thicker, which makes it a better substitute. It also has sweet and sour notes, with a similar dark color to hoisin.
