HOISIN BARBECUE SAUCE
Hoisin creates a sweet and salty base that firmly identifies this barbecue sauce's Chinese influence.

Steps:
- Heat oil in medium saucepan over medium heat until shimmering. Add onion and cook until softened, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Add hoisin sauce, ketchup, sherry, vinegar, honey, soy sauce, Sriracha, Szechuan peppercorns, white pepper, and five-spice powder; stir to combine. Bring to a boil, then reduce heat to low and simmer until slightly thickened, about 15 to 20 minutes, stirring occasionally.
- Blend sauce until smooth with a stick blender, or transfer to jar of a regular blender and blend. Let cool to room temperature, transfer to a jar and store in refrigerator for up to a month.
HOISIN BBQ SAUCE
Steps:
- Cook 2 minced garlic cloves in a saucepan with olive oil, 1 minute. Stir in 1/2 cup hoisin sauce, 2 tablespoons each rice vinegar and dry sherry, 1 tablespoon each soy sauce and ketchup and 1/3 cup water. Simmer until thick, stirring, 20 minutes. Let cool, then add 1/2 teaspoon sesame oil and 1 chopped scallion.
HOISIN-BBQ-GLAZED CHICKEN THIGHS
Baste grilled chicken thighs with an Asian-style BBQ sauce, and serve extra for drizzling.

- Preheat an outdoor grill for medium heat.
- Sprinkle the chicken thighs generously with salt and pepper. Lightly oil the grill grates. Grill the chicken until grill marks appear and an internal temperature of 170 degrees F, about 15 minutes per side.
- While the chicken cooks, make the sauce: Heat the vegetable oil in a small saucepan over high heat. Add the ginger and garlic and cook until soft, 1 to 2 minutes. Add the ketchup, hoisin, sherry, sesame oil, soy sauce and chili garlic sauce. Whisk until smooth and bring to a boil. Remove from the heat and let cool.
- Brush the chicken thighs with about 1/2 cup of the sauce several times in the last 5 minutes of cooking time. Serve the chicken with the extra sauce and with cooked broccoli and white rice.
BAKED PORK RIBS WITH HOISIN BARBECUE SAUCE

- Place ribs in large roasting pan. Pierce meat with fork. Sprinkle with Chinese five-spice powder and onion powder; rub mixture into meat.
- Whisk remaining ingredients in small bowl to blend. Pour sauce over ribs, turning to coat. Turn ribs meat side down; cover pan with aluminum foil and refrigerate overnight.
- Preheat oven to 400°F. Bake ribs, covered, until just tender, about 30 minutes. Uncover and turn ribs meat side up; bake until ribs are cooked through, basting occasionally, about 35 minutes. Cut meat between bones to separate ribs and serve.

HOISIN OVEN BARBECUE CHICKEN

Steps:
- To prepare the barbecue sauce: combine the first 6 ingredients in a medium bowl.
- Place 3/4 cup sauce in a large bowl; cover, and chill the remaining barbecue sauce.
- Add the chicken legs and thighs to the sauce in the large bowl; toss to coat.
- Cover, and marinate in the refrigerator for 8 hours, or overnight.
- Set oven to 375 degrees.
- Remove the chicken from the fridge.
- Place the chicken on a broiler pan coated with cooking spray; reserving the marinade from the bowl.
- Bake at 375 for 30 minutes.
- Turn the chicken; baste with reserved marinade.
- Bake an additional 20 minutes, or until the chicken is done, and discard the marinade On top of the stove, bring the 3/4 cup of the reserved marinade from the fridge to a boil in a small saucepan; reduce heat, and cook until slightly thickened to about 1/2 cup (this should take about 5 minutes).
- Drizzle the hot chicken with the sauce before serving, or serve the sauce at the table.
