HOISIN COUNTRY-STYLE SPARE-RIBS
Our family loves pork ribs! This recipe produces a tender meaty pork rib which we bake in the oven so it is great for the winter months when grilling isn't an option. *Note: Serving size depends on how many ribs there are in the packages.

Steps:
- Preheat oven to 350 degrees F.
- Mix vinegar, brown sugar & hoisin sauce together thoroughly. (Set aside).
- In skillet on medium high heat when oil begins to sizzle brown meaty ribs turning to lock in juices all four sides. (About a minute per side).
- Remove from stove.
- Place a sheet of baking parchment paper in the bottom of a roasting pan.
- Place the ribs on top and coat 1/2 of the "vinegar, brown sugar & hoisin sauce" mixture evenly on each rib.
- Bake ribs for 45 minutes.
- Turn them over and baste with remaining mixture and bake for another 20 minutes or until pork is cooked thoroughly with no hint of pink.
- Serve and enjoy!

- Combine 1/2 cup hoisin sauce, the vinegar, honey, soy sauce, Sriracha, ginger and garlic in a 6-quart slow cooker. Add the ribs and turn to coat. Cover and cook on low, 6 hours.
- Preheat the broiler and line a rimmed baking sheet with foil. Transfer 1 cup of the liquid from the slow cooker to a medium bowl; whisk in the remaining 1/2 cup hoisin sauce and the ketchup. Transfer the ribs to the prepared baking sheet and brush both sides generously with the sauce. Broil, bone-side down, until browned and bubbling, 3 to 5 minutes.
- Transfer to a cutting board and slice into individual ribs. Top with more sauce and sprinkle with the scallions. Serve with coleslaw.
HOISIN AND SRIRACHA-GLAZED BABY BACK RIBS

- Remove the inside membrane from the ribs. Whisk the vinegar, ginger, ponzu sauce, sesame oil and garlic together in a large bowl. Add the ribs, turning to coat evenly. Cover and refrigerate for at least 4 hours or up to overnight.
- Prepare an outdoor grill for medium-high direct and indirect grilling.
- Remove the ribs from the marinade and pat dry. Sprinkle on all sides with the five-spice powder and a few pinches of salt and pepper. Put on the indirect side of the grill, bone side down, and cover the grill. Cook until the meat is tender and the ribs are crisp on the outside, rotating halfway about through, 1 hour to 1 hour and 15 minutes.
- Whisk the hoisin and sriracha together in a small bowl. Transfer the ribs to the direct heat side of the grill and continue to cook for an additional 30 minutes, brushing with the sauce about every 10 minutes until the ribs are well glazed. Transfer the ribs to cutting board and let rest 5 minutes. Cut between the ribs and transfer to a serving platter. Scatter the scallions over the top if using.

- Make the hoisin barbecue sauce by combining all of the ingredients except for the ribs in a medium bowl.
- Trim any excess fat or flaps of meat and cut racks in half into 6- to 7-rib sections. Line a baking sheet with heavy duty aluminum foil. Place the rib racks on the baking sheet. Reserve 1 cup of the sauce and pour the rest over the rib racks. Coat both sides of racks evenly with sauce and arrange in a single layer, meaty sides up. Cover tightly with heavy duty aluminum foil and refrigerate for a minimum of four hours or overnight.
- Preheat the oven to 300°F. Place the covered ribs in the oven and bake, undisturbed, for 1½ hours. Remove the ribs from the oven and carefully remove the foil (the steam will be very hot and can burn). Using a pastry brush or back of a spoon, coat the racks generously with the reserved barbecue sauce. Turn the oven heat up to 350 degrees. Return pan to the oven, uncovered, and cook until the ribs are tender and starting to brown, about 30 minutes. Let cool briefly before cutting in-between the ribs to serve.
- Note: Ask your butcher to remove the white membrane on the underside of the ribs. If you need to remove it yourself, loosen it at the edge with a butter knife and peel it off (if it's slippery, grab it with a paper towel). Note that there appears to be another layer of membrane underneath the one you remove; you shouldn't remove it as it's what holds the meat and bones together.

- Bring a large pot of water to a boil. Score the underside of the ribs, making 4 long, deep slits across the backs of the bones. Cut each rack in half and season with salt and pepper.
