GIANT BISCUIT RECIPE (HOE CAKE)



Giant Biscuit Recipe (Hoe Cake) image

2 cups all purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 cup milk
1-2 Tablespoons oil or bacon grease
1/2 cup cold butter

Steps:

  • Turn oven on to 425 degrees.
  • Put oil or bacon grease in a 8" or 9" baking pan - I prefer to use my cast iron skillet or a stoneware pan, but a cake or pie pan works, too.
  • Place the baking dish in the oven while you mix up your batter.
  • In a medium bowl, whisk together flour, baking powder and salt.
  • Use a pastry cutter or two knives to cut the butter in to the flour mixture.
  • Stir in milk just until the flour is moistened. Do not over mix!
  • Remove hot baking dish from oven and quickly pour batter in to the dish.
  • Return to oven and bake until browned, about 15-20 minutes.
  • Remove cake from oven and invert on to a serving platter.

cooking spray
2 ⅔ cups all-purpose flour, or more as needed
1 cup white sugar
1 tablespoon baking powder
1 tablespoon vanilla extract
2 pinches salt
3 eggs
¾ cup milk
¾ cup vegetable oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch cake tin with cooking spray and line with parchment paper.
  • Mix flour, sugar, baking powder, vanilla extract, and salt together in a bowl. Add eggs, milk, and vegetable oil. Mix by hand or use an electric mixer on low speed until smooth. Add more flour if batter is too runny. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 1 hour.
  • Remove from the oven and let cool, 15 to 30 minutes. Transfer to the refrigerator to chill slightly, 15 to 30 minutes more. Slice the cooled cake through the middle to make 2 layers.

  • Preheat oven to 425. Pour a thin layer of oil to cover the bottom of an eight-inch round cake pan and place it in the oven to heat.
  • Cut shortening into the flour well. Pour milk in and stir until wet.
  • Pour into the well-heated pan and bake for fifteen to twenty minutes or until browned.
  • Invert onto plate.

1 cup self-rising flour
1 cup self-rising cornmeal
2 eggs (beaten)
1 tablespoon sugar
¾ cup buttermilk
½ cup water
½ cup vegetable oil (divided)

Steps:

  • Add the flour, cornmeal, and sugar to a large bowl. Add the eggs and buttermilk to a smaller bowl and whisk well.
  • Combine the wet ingredients with the dry ingredients along with ¼ cup of vegetable oil and ½ cup of water. Mix well to combine all ingredients but don't over mix. The batter will be thick. If you think it is too thick, add a bit more water, about one tablespoon at a time, until it gets to the consistency you like.
  • Add ¼ cup of vegetable oil (I use peanut oil, but any kind will do) to a large skillet over medium heat.
  • When the oil is hot, add the batter using a large spoon or small ice-cream scoop. About two tablespoons of batter will make a hoecake about 3 inches across.
  • Cook the hoe cake for one to two minutes on each side or until each side is brown and the edges are crispy. Use a pancake turner or spatula to remove them and drain them on a paper towel.
  • Serve immediately.

My father has made this recipe for years, and it is always requested from his grandchildren. A slice of hoe cake will warm your insides -- slathered with some homemade apple butter alongside of some butter beans, freshly sliced tomatoes and a good tall glass of sweet tea. I promise your family will love this truly Southern recipe!

2 pinches garlic salt

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a well-seasoned cast iron skillet with the shortening, and place it in the oven as it heats.
  • Whisk together the flour and milk in a bowl, to make a thick but still runny batter.
  • Remove the hot greased skillet from the preheated oven, and quickly sprinkle a pinch of garlic salt over the bottom of the skillet. Immediately pour in the batter, and sprinkle the top with a pinch of garlic salt.
  • Return the skillet to the oven, and bake in the preheated oven until the cake has risen and the top is golden brown, about 20 minutes.

1 egg
1/2 teaspoon salt
2/3 cup oil (I use canola oil for cooking)

Steps:

  • Mix meal, milk, egg and salt together. Drop by spoonful into hot oil. Brown on one side then turn and fry until golden brown on both sides.

Steps:

  • In cast-iron or other heavy skillet, heat about 2 tablespoons oil over medium heat. For each hoecake, pour about 1/4 cup batter into hot skillet. Cook until browned on both sides. Repeat with remaining batter, adding more oil to skillet as needed.
