SAUSAGE AND BACON HUBBLE BUBBLE

Steps:
- Heat the oven (375F/190C/Gas Mark 5-6). Grease an ovenproof dish.
- Slice the cooked potatoes. Peel and chop the onion. De-rind the bacon. Prick the sausages.
- Heat the oil in a frying pan, and fry the sausages, bacon and onion gently for 5 minutes, turning frequently.
- Place the potato slices in the dish. Arrange the onions, sausages, and bacon on top. Beat the egg with the milk, salt and pepper in a small basin, using a whisk or fork. Pour the egg mixture over the top, and bake in a hot oven for about 15 minutes, until the egg mixture is set.

HOPPEL POPPEL
This is a German recipe - a farmer's omelet. I got it over 20 years ago from Southern Living (I think). This has been a family favorite since the recipe was introduced.

- Melt butter in 11 inch frying pan and saute potatoes and onion until lightly browned.
- Add ham and saute 5-7 minutes longer.
- Beat eggs with worcestershire sauce, salt, and pepper.
- Pour egg mixture over potato mixture.
- Sprinkle with parsley and reduce heat.
- Lift the cooked eggs from the edge of the pan with spatula so that liquid can run down and cook.
- When omelet is nearly done, sprinkle with grated swiss cheese and place under broiler until cheese is melted.

HOBBLE POBBLE
This recipe came from my aunt, who was a wonderful cook. We eat it both with and without the spinach or ham.

Steps:
- In a large heavy skillet, fry onion and hash browns in oil until lightly browned.
- Stir.
- Add spinach.
- Cover and cook until wilted.
- While the spinach is cooking down, stir eggs and milk in a bowl.
- Pour eggs on top of spinach.
- Salt& pepper to taste.
- Cover.
- Cook over low heat until eggs are set.
- Remove from heat.
- Add cheese.
- Cover and let set until cheese is melted.
- Cut into wedges and serve.
