- In a small bowl, combine butter and salad dressing mix; spread 1 tablespoonful inside each bun. On bottom of each bun, layer one slice of meat, two slices of cheese and another slice of meat; replace tops. Spread 1 tablespoon butter mixture over top of each bun. , Place on a baking sheet. Broil 6 in. from the heat for 2-3 minutes or until tops are lightly browned.

- Heat an outdoor grill or grill pan over medium-high heat. Preheat the broiler.
- Season the steak with salt and pepper, to taste. Grill the meat until it is medium-rare, about 3 to 4 minutes per side.
- In a large bowl, whisk together the Worcestershire sauce, soy sauce, mustard, rosemary, and red pepper flakes. Set aside.
- Remove the steak from the grill to a cutting board, cover it with foil, and allow it to rest for 5 minutes. Slice the steak thinly and toss the slices in the Worcestershire sauce mixture.
- Spread the rolls open and arrange on a baking sheet. Sprinkle each roll with a 1/4 cup of the cheese and put them under the broiler until the cheese is melted and bubbling, about 1 to 2 minutes.
- In a small bowl, whisk together the mayonnaise and hot sauce. Spread the mayonnaise onto the bottom of each roll. Put a quarter of the beef into each of the rolls. (Reserve 4 pieces of beef for the Round 2 Recipe Couscous Stuffed Tomatoes). Cover with the roll tops, cut in half and serve.

- Place the vinegar and oregano in a small bowl. Slowly whisk in the oil until emulsified.

- Preheat the oven to 350 degrees. Place the rolls into a 9" x 13" baking pan, open-side up.
- Bake the rolls for 5 minutes and remove from oven.
- Place 3 folded slices of capicola hot ham onto the bottom of each roll.
- Add a layer of 3 folded pieces of salami onto the sandwiches.
- Divide the sliced banana peppers between the 6 sandwiches.

- In a large stand mixer, combine milk, yeast, sugar, salt, butter, egg and 3 cups flour. Knead on low until a smooth dough ball forms, adding more flour ¼ cup at a time to achieve desired texture. Your dough should be tacky, but not sticky.
- Transfer dough to a lightly greased mixing bowl, cover with a towel, and let rise until double in size, about 1 hour.
- Roll dough into a large rectangle, about 1/4 inch thick, and 24 inches wide. Cut the dough into 4 strips, about 6 inches wide on each.
- Roll strip up. Continue rolling gently until ends and seams are pinched together (otherwise it'll unroll in the baking process).
- Put rolls on a lightly greased jelly baking sheets. Let rise about 30 minutes.
- Preheat oven to 375 degrees. Bake rolls for 12-15 minutes until lightly browned.

- In a mixing bowl or bowl of a stand mixer, combine the warm water with the yeast and sugar. Let stand for 5 minutes. Combine the milk, egg, and olive oil in a cup and whisk to blend. Add the milk and egg mixture to the yeast mixture along with the bread flour and salt. Mix by hand or with a dough hook until the dough comes together. Knead by hand or with the dough hook for about 8 minutes, adding more flour or water if necessary. The dough should be firm and smooth but slightly tacky to the touch.
- Grease a large bowl with olive oil .
- Gather the dough into a ball and put in the oiled bowl. Turn to grease all sides of the dough ball. Cover the bowl with plastic wrap and let the dough rise for about 1 1/2 hours or until doubled in volume.
- Continue with the recipe or refrigerate overnight at this point. If you refrigerate overnight, let the dough come up to room temperature before shaping. 1 1/2 to 2 hours should be enough time.
- Line two baking sheets with parchment paper . Sprinkle lightly with cornmeal or semolina flour.
- Divide the dough into 10 portions, roughly 4 ounces each. Shape into 6-inch hoagie roll shapes and arrange on the prepared baking sheet.
- Cover the rolls with a light towel and let stand at room temperature for 1 hour.
- Preheat the oven to 425 F.
- With a baker's lame, sharp knife, or razor, cut a 1/4-inch-deep slit down the tops of the rolls just before they go in the oven.
- Put the rolls in the oven and reduce the temperature to 375 F.
- Bake the rolls for 15 to 18 minutes, rotating the pan once about halfway through the baking time. The rolls will be about 195 F in the center when done. Or check by tapping on the bottom of a roll. It will sound hollow when done.
- Makes about 41 ounces of dough for about 10 sandwich rolls. Note: If you are making kaiser rolls with a kaiser roll stamp, shape the dough portions into balls, then flatten slightly. Press with the stamp firmly, but don't cut through the dough. Arrange the stamped rolls upside-down on the parchment paper. Before baking, turn them right-side-up, brush with egg wash if desired, and bake as above.

HOAGIES WITH QUICK PEPPER RELISH

- For the pepper relish: Heat the olive oil in a large skillet over medium heat. When the oil is hot, add the Fresno chiles, garlic, jalapenos, bell peppers and onion and sauté for to 4 minutes to soften. Add the vinegar, honey and mustard seeds. Bring to a boil and cook, stirring occasionally, until thickened, about 10 minutes.
- For the sandwiches: While the relish cooks, grease a griddle with the butter and place it over medium-high heat. When the griddle is hot, add the sausage pieces cut-side down and cook until well browned and crisp, about 3 minutes. Flip and place 2 pieces of provolone onto each sausage piece. Cook until the cheese has melted completely, another 2 to 3 minutes. Remove to a plate.
- Build the sandwiches by spreading the mayonnaise on the bottoms of each bun and laying on a piece of lettuce. Top each with a cheese-covered sausage piece and a generous portion of the pepper relish. Replace the top half of the buns and serve.

- Preheat broiler, with a rack 6 inches from heating element. Combine parsley and carrots in a bowl. Toss with cherry-pepper brine and oil; season with salt and pepper.
- Heat butter in a small saucepan with garlic, oregano, garlic powder, and 1/2 teaspoon salt until melted. Scoop out some of top of each roll to make room for filling. Brush split sides with garlic butter.
- Arrange mushrooms on a broiler pan; season with salt. Broil, flipping once, until tender and shriveled slightly, 10 to 12 minutes. Push to one side of pan and sprinkle with Parmigiano.
- Place rolls, split-sides up, on other side of pan. Broil 1 minute. Top mushrooms with provolone and broil until bread is golden brown and cheese is melted, 30 seconds to 1 minute more. - PREP: Preheat the oven to high broil (optional). Thinly slice the peppers, onion, and mushrooms. See Note 1. Mince the garlic and chop up the ham.
- COOK: In a large (12 inch) oven-safe skillet, heat the olive oil on medium-high. Add in the sliced peppers and onion. Season with salt and pepper, about 1/8 teaspoon each. Sauté, stirring occasionally, for about 5 minutes or until softened and onion is translucent. Add in the sliced mushrooms and garlic. Stir-fry for another 3-5 minutes or until veggies are crisp tender. Add in the chopped deli ham along with the parsley, basil, Italian seasoning, and dried thyme. Season again with salt and pepper to taste; I add about 1/4 teaspoon of each. Stir and heat through the ham for about 2-3 minutes.
- BROIL: In the pan, separate the mixture into 4 equal parts and section those parts into 4 mounds in the skillet about the width of the Provolone cheese slices (see picture in post). Place a slice of cheese over each section. Cover the pan and let melt for a few minutes, or slide into the oven and broil for 1-2 minutes, watching closely to avoid burning anything. Gently mix the cheese into the peppers and onions in each individual portion. The cheese will help hold everything together.
- HOAGIE BUNS: If desired, spread butter on the insides of the buns. Add to a skillet or griddle and lightly brown the buns over medium heat. Add one scoop of the cheesy meat and veggies per bun. Enjoy while hot!
