MOM'S PERFECT SUB SANDWICH

Steps:
- Stir together the oil, vinegar and salt and pepper to taste.
- Using a serrated knife, slice open the rolls. Drizzle half the dressing on the roll bottoms and sprinkle on the oregano. Divide the cold cuts, cheese, tomatoes, lettuce, onion and pepperoncini evenly among the bottom rolls. Top with the basil, if using. Drizzle the remaining dressing on the top halves of the rolls and place on top to make sandwiches. Wrap in wax paper. Slice in half and serve.
BAKED ITALIAN HOAGIE RECIPE

- Preheat the oven to 350 degrees. Place the rolls into a 9" x 13" baking pan, open-side up.
- Bake the rolls for 5 minutes and remove from oven.
- Place 3 folded slices of capicola hot ham onto the bottom of each roll.
- Add a layer of 3 folded pieces of salami onto the sandwiches.
- Divide the sliced banana peppers between the 6 sandwiches.
- Fold each slice of provolone cheese in half to break into two pieces and place on top of the banana peppers.
- Return the pan to the oven and bake for 20 minutes. Serve immediately with Italian dressing.

- In a medium glass jar add garlic, italian seasoning, salt, pepper, red pepper flakes, vinegar and olive oil. Shake and set off to the side.
- Cut the sub buns in half horizontally but leaving one side still attached. Tear out some of the soft bread in the center of each sub bun.
- Shake the sub dressing before spooning some of it on the inside of the sub bun.
- Place the mozzarella on the top side and the provelone on the bottom side of the sub bun. Layer the pepperoni, salami, sopressata and capocollo before topping with lettuce, tomato and any other desired toppings.

- Slice your sub bun in half in the middle.
- Fold the sliced meat in half and place them in threes on the sub bun (ham, turkey, beef) and then repeat until you've reached the end of the bun. - Slice the rolls lengthwise, cutting only half way through. Remove the thick, fluffy dough center of the bread and discard it. Set rolls aside.
- In a small bowl whisk together the vinegar and oregano; slowly add in the oil, whisking as you pour to emulsify the mixture.
- Drizzle a small amount of the oil/vinegar mixture on the rolls, then layer the cheese and meats.

MARY ALICE'S HOAGIE DIP

- Chop the onion, pepperoncini, lettuce and tomato into bite-size pieces. Dice the meats and cheese.
- Combine the chopped vegetables, meats and cheese in a large bowl. Add the mayonnaise, olive oil, oregano, basil and red pepper flakes and stir until everything is all mixed up and tasty. Refrigerate until ready to serve.
- Carve out the center of the bread loaf to make a bowl (don't cut through the bottom) and cut the scraps into bite-size pieces. Serve the hoagie dip in the bread bowl, with the extra bread and hoagie rolls to scoop it up. Yummers!

- Place the vinegar, mustard, sugar, Italian seasoning, salt, pepper, garlic and shallots in a blender or food processor. While the machine is running, slowly drizzle the olive oil through the blender top or feed tube until the dressing is combined and emulsified. Adjust the seasoning if necessary; add more oil if you want it less acidic. Store the dressing up to 2 weeks in the fridge.
SUBMARINE FLAVORS
This sounds absurdly simple but is wonderful, especially when really great Italian meats and cheeses are used; but it really jazzes up routine lunch meats on a sub, too. I highly recommend the addition of a good dollop of Holland House hot cherry pepper relish. It's heavenly - had it at a sub shop on Boylston Street in Boston in the 70's and dreamed about it for years. Finally discovered it at an Italian grocery in Seattle and was thrilled to discover that same fabulous flavor. Try it, you'll love it!
