SPICY TILAPIA RICE BOWL

Spicy Tilapia Rice Bowl image

  • In a medium pot, add the rice and water. Squeeze the lime juice, and zest from 1/2 lime into the pot. Cook rice according to package directions, once cooked - stir in the herbs and a pinch of salt and pepper. Taste, and if the rice needs more lime juice - squeeze that in as well. Set aside.
  • While the rice is cooking, prep the fish. Rub the prepared baking sheet with olive oil. Pat the fish dry, and season with salt and pepper and place on the baking sheet. In a small bowl, mix together all the spices. Rub the spice mixture really well on both sides of the fish. Drizzle a tiny bit of olive oil over top of the fish. Bake in the oven for 10-12 minutes, remove and if the fish is flakey to the touch with a fork, it's done.
  • Roast the poblano pepper over a stovetop burner or in the oven (set the broiler to high heat and place it on the top rack). Once it is charred, remove and place in a bowl with an ice bath and remove the outer layer of the pepper. Place it in a food processor or blender, add the yogurt, olive oil, lime juice, dill, parsley and salt and pepper to the food processor and pulse until smooth. Taste and adjust anything you need.
  • In a small bowl, mix together the napa and purple cabbage. Squeeze lime juice over top and season with a pinch of salt.
