SPICY TILAPIA RICE BOWL
I love healthy living and tilapia is a staple in my kitchen. Fresh vegetables are always good but take more prep time, so I use boil-in-bag rice for a shortcut. -Rosalin Johnson, Tupelo, Mississippi

- Sprinkle fillets with Cajun seasoning. In a large skillet, heat 2 tablespoons oil over medium heat. Add fillets; cook until fish just begins to flake easily with a fork, 4-6 minutes on each side. Remove and keep warm. Wipe pan clean., In same skillet, heat remaining oil. Add squash; cook and stir 3 minutes. Add stir-fry blend and tomatoes; cook until vegetables are tender, 6-8 minutes longer. Stir in fajita seasoning mix; cook and stir until slightly thickened, 1-2 minutes longer., In a small bowl, mix beans, salt and pepper. Divide rice among 4 serving bowls; layer with beans, vegetables and fillets. If desired, serve with toppings.

Steps:
- Pat tilapia filets dry with paper towels and season both sides with salt and pepper.
- In large skillet, heat oil and add tilapia filets. Cook until fish releases easily with a spatula; flip and cook until fish is cooked through and flakes easily with a fork, 5 to 8 minutes. Remove from skillet and set aside, tenting loosely with foil to keep warm.
- Add beans, corn, water, salsa, cumin, chili powder and contents of rice package to skillet, stir well. Bring to a boil, cover and reduce heat. Simmer until water has been absorbed and rice is tender, about 7 minutes.
- Place rice in a serving dish and top with fish. Serve immediately.

- Rinse the tilapia pieces and pat dry with a paper towel. Combing the flour, salt, pepper, and taco seasoning in a pie plate or shallow dish. Lightly dredge the tilapia pieces through the flour, shaking off any excess back into the dish. Set aside.
- Heat 1 Tbsp. vegetable oil in a cast iron skillet over medium-high heat. Once hot, add the onion, bell peppers, and cumin to the pan and cook, stirring occasionally, until browned and tender crisp. Remove from the skillet and set aside.

- In a medium pot, add the rice and water. Squeeze the lime juice, and zest from 1/2 lime into the pot. Cook rice according to package directions, once cooked - stir in the herbs and a pinch of salt and pepper. Taste, and if the rice needs more lime juice - squeeze that in as well. Set aside.
- While the rice is cooking, prep the fish. Rub the prepared baking sheet with olive oil. Pat the fish dry, and season with salt and pepper and place on the baking sheet. In a small bowl, mix together all the spices. Rub the spice mixture really well on both sides of the fish. Drizzle a tiny bit of olive oil over top of the fish. Bake in the oven for 10-12 minutes, remove and if the fish is flakey to the touch with a fork, it's done.
- Roast the poblano pepper over a stovetop burner or in the oven (set the broiler to high heat and place it on the top rack). Once it is charred, remove and place in a bowl with an ice bath and remove the outer layer of the pepper. Place it in a food processor or blender, add the yogurt, olive oil, lime juice, dill, parsley and salt and pepper to the food processor and pulse until smooth. Taste and adjust anything you need.
- In a small bowl, mix together the napa and purple cabbage. Squeeze lime juice over top and season with a pinch of salt.
