GRUYERE FONDUE DINNER

- For the dippers: Preheat the oven to 400 degrees F.
- Lay the carrots, potatoes and cauliflower on a rimmed baking sheet and drizzle with half the olive oil, some salt and pepper and 1 teaspoon caraway seeds. Toss to coat. Bake for 15 minutes. Remove from the oven and push the vegetables over to one side. Lay the green beans, bread cubes, salami and grapes on the empty side and drizzle those with the remaining olive oil, some salt and pepper and the remaining teaspoon caraway. Return to the oven and roast until starting to brown on the edges and the vegetables are tender, an additional 7 to 10 minutes. Serve hot or at room temperature with fondue.
- For the fondue: Bring the white wine to a low simmer in a fondue pot. Toss the cheeses, cornstarch, mustard and nutmeg together in a large bowl. Add in handfuls to the simmering wine, whisking to melt before adding more. Continue to add until all of the cheese has melted and the fondue is thick and smooth, 2 to 3 minutes. Whisk in the kirsch and serve with the dippers.

- Chop 8 Lit'l Smokies smoked sausages and reserve the rest. In a saucepan over medium-high heat, heat chopped smoked sausages in olive oil with garlic until just browned.
- Add white wine and milk. In a separate bowl, toss the brie and Cheddar cheeses with flour, thoroughly coat. Slowly whisk cheese mixture into the saucepan. Continue to whisk until smooth and thick, about 5 minutes. Remove from heat and season with salt, pepper and nutmeg.
- Saute the remaining smoked sausages in a skillet until browned. Serve warm fondue with Lit'l Smokies smoked sausages, apple slices and toasted baguette. Drizzle fondue and apples with honey.

- Heat oil in a large skillet.
- Add potatoes and mixed vegetables. Cover and cook 6-8 minutes, stirring occasionally.
- Meanwhile, slice kielbasa in half lenghtwise and then into very thin slices.
- Stir kielbasa into skillet. Cook and cover another 8-10 minutes, stirring occasionally.
- Remove skillet from heat and stir in cheese. Salt and pepper to taste.

HILLSHIRE FARM AUTUMN COUNTRY FONDUE
For weekend family fun when the weather turns cool, there's nothing like gathering around the table for some fondue dipping. I found this on the iVillage website, but haven't had a chance to try it yet.

Steps:
- Combine onion soup mix, 1 cup of wine and lemon juice in heavy saucepan over medium heat. Turn setting to low and add cheeses in small amounts, stirring until cheese is melted. Add remainder of wine as needed.
- Transfer sauce to heating dish or fondue pot. Serve fondue with smoked sausage and bread chunks. Dip in the pieces of smoked sausage with fondue forks, allowing to sit for a few seconds to heat through. If you prefer, you could quickly fry the sausage before serving.
- Tip: You could also use bread sticks and fresh veggies with this fondue.
