HILL COUNTRY PEACH COBBLER

Makes 8 to 10 servings

Number Of Ingredients 9

½ cup unsalted butter, melted
2 cups all-purpose flour
1½ cups sugar
2 teaspoons baking powder
½ teaspoon salt
1⅓ cups milk
12 large fresh peaches, peeled, pitted, and cut into chunks
1 cup chopped pecans
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°. Pour melted butter into a 13x9-inch baking dish.
  • In a medium bowl, whisk together flour and next 3 ingredients. Gradually whisk in milk until smooth, and pour into butter in pan (do not stir). In same bowl, stir together peaches, pecans, and cinnamon. Pour peach mixture onto batter in pan.
  • Bake for 45 to 50 minutes or until golden brown. Let cool for at least 30 minutes before serving. Cover and refrigerate up to 3 days.

1 cup granulated sugar
1 cup all-purpose flour
1 Tbs baking powder
pinch salt
3/4 cup milk
3 cups sliced fresh peaches
1/2 tsp ground cinnamon
1/2 cup firmly packed brown sugar

Steps:

  • Preheat the oven to 350. Melt the butter in a small saute pan set over medium-high heat until it bubbles and turns a nutty-brown color. Watch it carefully to prevent it from burning. Pour the butter into an 8-inch square baking dish. In a medium bowl, stir together the granulated sugar, flour, baking powder, salt, and milk. Pour the mixture over the butter, but do not stir. Arrange the peaches evenly on top of the batter, and sprinkle with cinnamon and then the brown sugar. Bake the cobbler for 40-45 minutes, until the top is golden brown. Miraculously, the batter will migrate from the bottom of the pan to the top to cover the peach slices. Serve warm with vanilla ice cream, or at room temperature.

In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

129 ounce can sliced peaches (in juice), (do not drain)
1 tablespoon cinnamon sugar
1 1/2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
4 tablespoons salted butter, (cubed and cold)
1 cup heavy cream

Steps:

  • Preheat oven to 375F degrees. Spray an 8x8-inch baking dish with nonstick cooking spray.
  • Pour canned peaches with juices into bottom of baking dish (spreading them out evenly).
  • Sprinkle peaches with cinnamon sugar mixture.
  • For the topping, in a medium bowl, combine flour, sugar and baking powder.
  • Then add in the cubed butter.
  • Begin to "cut" it into the flour mixture with a pastry cutter or your fingers.
  • Just work it in with the flour until it becomes small pebbles and has been worked in with the flour/sugar mixture.
  • Then pour in heavy cream.
  • Combine until all the flour mixture has become moist. It will be very thick.
  • Using a spoon, begin plopping the topping all over the peaches. Just put it on in clumps. Doing your best to cover the peaches. Don't worry about smoothing it out.
  • Bake for about 40 minutes.
  • Top will be golden brown, and you can stick a toothpick in the top to make sure the topping has completely baked through (toothpick should come out clean.) Serve with ice cream.
