Steps:
- Place butter, cocoa and mixed fruit in a saucepan and bring to the boil over a moderate heat.
- Add the egg whilst whisking and boil for another two minutes.
- Remove pan from the heat and add biscuits, vanilla and halved cherries.
- Press mixture into a lamington tin and let cool.
- Mix together the icing sugar, melted butter and lemon zest, add enough juice to make a smooth icing, spread over the slice then chill.

Steps:
- Grease a bundt cake pan with butter. Sift the flour, soda, salt and cinnamon tog. Set aside. Cream the butter and sugar; add eggs and vanilla and mix all tog. Mix the dry with the wet until well blended. Stir in the apples and pecans. Bake for 1 hr. at 375. Let cake rest in pan for 30 min then turn it onto a cooling rack.
