HIGH-PROTEIN OATMEAL RAISIN COOKIES

High-Protein Oatmeal Raisin Cookies image

These are adapted from Melissa Clark's "Classic Oatmeal Raisin Cookies" on the NY Times cooking site. I swapped healthier alternatives for some of the butter, flour, and sugar, and ended up with subtly sweet breakfast cookies that my boyfriend eats all day at work. Store in an airtight container at room temperature.

Categories     Desserts     Cookies     Oatmeal Cookie Recipes     Oatmeal Raisin Cookie Recipes

Time 45m

Yield 36

Number Of Ingredients 20

1 tablespoon chia seeds
½ cup water
½ cup unsalted butter, softened
½ cup brown sugar
2 tablespoons stevia powder
1 large egg
3 tablespoons water
1 tablespoon ground flax seeds
1 tablespoon vanilla extract

¼ cup whey protein powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
¾ teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground cardamom
3 cups rolled oats
1 cup raisins
1 cup chopped walnuts

Steps:

  • Prepare chia gel in advance by swishing chia seeds with 1/2 cup water and allowing to sit in a covered Mason jar for a minimum of 15 minutes.
  • Preheat the oven to 325 degrees F (165 degrees C). Grease 2 large cookie sheets, or line with parchment paper.
  • Beat butter with an electric mixer in a large bowl until creamy. Add brown sugar and stevia and beat until fluffy, 2 to 5 minutes. Beat in chia gel, egg, 3 tablespoons water, ground flax, and vanilla extract.
  • Stir whole wheat flour, almond flour, protein powder, baking soda, cinnamon, nutmeg, and cardamom together in a separate bowl. Set mixer on low speed and mix dry mixture into the wet ingredients. Stir in oats, raisins, and walnuts.
  • Spoon out dough by large tablespoonfuls onto the prepared cookie sheets, leaving at least 2 inches between cookies.
  • Bake in the preheated oven until cookie edges brown, about 15 minutes. Centers will be soft, but they'll firm up as the cookies cool. Cool on a wire rack.

  • Bring to a boil 1 cup Raisins, 1 cut water, and simer 5 minutes in small pan, Covered, turn off and let set till cool.
  • I do this the day before. If the Dates are hard you can do the same with them. You want the fruit to be soft so that it will mix into the other ingredients.
  • For the topping I use a food procser and grind the Walnuts, Sugar, and Flour till I have a fine meal. and set aside.
  • Now Drain the Raisins, Apricots and save the water from the Apricots. Now put the ingredients for the cookie in the mixing bowl and mix together for 4 minutes on low speed, Now add the water from the apricots (Apricots Juice ) and mix for 3 mintues, and then let set for 30 minutes so the dry can absorbe the wet,.
  • Now start droping the cookies with a #40 ice cream server into the topping mix and roll them once, then place them on a cookie sheet.
  • I use a 12 X 18 cookies sheets and place then 3 x 5.

GLUTEN-FREE OATMEAL PROTEIN COOKIES

Gluten-Free Oatmeal Protein Cookies image

For all you lean muscle building people (or moms trying to sneak some health food by your kids), and on a gluten-free diet, these are a must have staple. These are NOT regular oatmeal cookies, they are the best "health food" cookie I've ever had though. They beat a packaged protein bar by leaps and bounds, and they're budget-friendly as well!

Provided by addicted2creating

Categories     Dessert

Time 25m

Yield 24 cookies

Number Of Ingredients 8

2 cups gluten-free quick oats (Bob's Red Mill makes some)
1/2 cup milk
2 eggs
1/2 teaspoon salt
2 teaspoons vanilla
2 scoops vanilla whey protein powder (make sure it is gluten-free, I used Spirutein Vanilla Whey)
1 -2 tablespoon cinnamon, depending on your taste (it helps stabilize your blood sugar)
1/3 cup brown sugar (more if you like them really sweet) or 1/3 cup honey (more if you like them really sweet)

Steps:

  • Mix all ingredients together. The mixture should be like sticky cookie dough, not crumbly (add more milk if too dry and more protein powder if too wet). Drop by spoonfuls (about 1 1/2 tbsp/cookie) onto greased or parchment lined cookie sheets. Bake at 350 degrees for 15 minutes.

  • Chocolate Coconut Protein Cookies. Coconut has some notable health benefits including possibly boosting heart health, aids digestive health, and supports weight loss.
  • Vegan Protein Cookie Dough. You can skip the “Instructions: preheat oven”. Cookie dough is a guilty pleasure whether or not you are vegan. You’ll have a hard time finding this in a store.
  • Flourless Almond Butter Cookies. This recipe impressed me with not using any kind of flour but still managing to get a great chewy texture. It says the recipe has 4 grams of protein, but I used Transparent Labs protein powder and got 24 grams of protein.

  • Pumpkin Pecan Egg White Oatmeal. Lately, I've been really into adding egg whites to my oatmeal for a little extra protein. You can do it with pretty much any oatmeal recipe, by first cooking the oats without the egg whites, then stirring everything together in a bowl off the heat, then cooking the oatmeal and egg whites a second time over really low heat, just enough so that the egg whites cook but not so much that they start to scramble.
  • Oatmeal Cookie Overnight Oats. This easy make-ahead breakfast really does taste a little like an oatmeal cookie, thanks to raisins, honey, vanilla, and a little bit of peanut butter stirred in to make the mixture extra rich.
  • Carrot Cake Oatmeal. Sweet vegetable oatmeal might sound weird, but then again so does sweet vegetable cake, and carrots have been making that work for years.
  • Chocolate Strawberry Overnight Oat Pudding. This one is great if you want to switch things up without buying different ingredients. You stir together all of your overnight oat ingredients, then blend them into a puree before refrigerating.
  • Berry Cheesecake Overnight Oats. I love using frozen fruit in overnight oats, because it'll defrost as the oats sit in the fridge, it's easy to store, and it tastes great year-round.
  • Apple Pie Oatmeal. Cooking these in a whole cup of 2 percent milk makes them extra creamy and adds protein, while the combination of apples, vanilla, and cinnamon make the finished product taste a little bit like (healthy) pie.
  • Peaches and Cream Overnight Oats. There's nothing better than a super-ripe peach at the peak of summer, but frozen peaches will work just fine here too.
  • Pear and Almond Overnight Oats. A few drops of almond extract goes a long way in adding a deep layer of flavor to these overnight oats. If you don't have almond extract, don't sweat it—you can sub in vanilla extract and still end up with a good breakfast.
  • Savory Parmesan Oatmeal With a Poached Egg. I usually make sweet oatmeal, but every once in a while I'll switch things up and cook my oats with vegetables and a little bit of parmesan.
  • Overnight Oats With Grapes and Pecans. I love eating grapes straight out of the bag, but I often forget about them when it comes to actual meals. Here, they work alongside cottage cheese and pecans.
