You'll need just five ingredients for this cool salad that's nicely sized for two people. "I like trying new recipes," shares Katie Anderson from Cheney, Washington. "When I found this salad, I loved it. It's really nice on those hot summer days."

1-1/2 cups frozen peas, thawed
1/2 cup shredded cheddar cheese
2 tablespoons finely chopped onion
1/4 cup mayonnaise
1-1/2 teaspoons prepared mustard

Steps:

  • In a large bowl, combine the peas, cheese and onion. Stir in the mayonnaise and mustard. Cover and refrigerate until serving.

A while back I tried hearts of palm and decided that I really loved it. So I decided to try a recipe with it, when some one told me that it can go well with anything. So I put this one together. I also used frozen corn here because I had plenty in the freezer, and didn't think I needed to go out and buy canned corn. If you do decide to use canned corn, make sure it is plain, and not creamed or flavoured with anything, as it will change the taste and/or texture of the recipe.

1 (598 ml) can hearts of palm, diced
1 (19 ounce) can chickpeas
2 cups corn, frozen
1 large avocado, diced
4 green onions
1/3 cup olive, chopped
1 tablespoon lemon juice
2 tablespoons olive oil
1/2 teaspoon salt
1 teaspoon black pepper

Steps:

  • Put the first 6 ingredients in a bowl and mix.
  • Add the next four ingredients and mix again. Refrigerate for at least an hour (trust me, it tastes much better after being refrigerated than it does served right away).
  • Serve with your lunch or supper.

50 g romaine lettuce or 50 g spinach
100 g green peppers
100 g celery
42 g carrots, peeled
3/4 cup chickpeas
2/3 cup peas
2 tablespoons ranch dressing
1/3 cup shredded cheddar cheese

Steps:

  • Chop veggies into small pieces and shred lettuce.
  • Mix all ingredients together in a bowl or plastic container.
  • Eat slowly and savor this yummy salad.
