1 ½ cups warm water (110 degrees F/45 degrees C)
2 tablespoons dry milk powder
2 tablespoons vegetable oil
2 tablespoons molasses
2 tablespoons honey
1 ½ teaspoons salt
2 ¼ cups whole wheat flour
1 ¼ cups bread flour
1 cup whole bran cereal
2 teaspoons active dry yeast

Steps:

  • Place ingredients in order indicated by your manufacturer. Select the whole wheat or whole grain setting.

CRUNCHY NUT & SEED KETO BREAD



Crunchy Nut & Seed Keto Bread image

Chewy dense nut and seed bread is super easy to make. It's full of healthy fiber and tastes great. As is or lightly toasted with butter, avocado or spinach dip, you will love it.

1 cup almonds or hazelnuts (chopped see post tips for the easy way to do this)
3/4 cup pumpkin seeds (toasted)
1/4 cup chia seeds
3 tbsp sesame seeds
1/4 cup sunflower seeds
1/4 cup pecans or walnuts (chopped)
1 tbsp caraway seeds
1 tsp salt
1/4 cup flax seed powder
1/4 cup Erythritol (*optional if you want a hint of sweetness)
5 eggs
1/3 cup olive oil (melted coconut oil is fine too.)
1 tsp apple cider vinegar (*optional)

Steps:

  • Preheat the oven to 325F. Mix the dry ingredients in a large bowl.
  • Mix all wet ingredients into dry ingredients. Mix well until incorporated.
  • Place the dough in a greased bread pan (5 x 10 inch). Bake for 50 minutes to one hour. Turn off the heat and allow the loaf to completely cool with the oven door ajar.

BOB'S HIGH FIBER BREAD

I was looking for a lower-carb (good carbs only), higher-fiber bread and came across this recipe in the Bob's Red Mill cookbook. **Cooking time includes rise time.

1/4 teaspoon sugar
1 1/4 cups warm water
2 1/4 teaspoons active dry yeast
2 1/2 cups hard whole wheat flour
1/3 cup natural bran
1/3 cup barley flour
1/2 cup rolled oats
1/4 cup wheat germ
2 teaspoons salt

Steps:

  • In a small bowl, combine sugar and water. Sprinkle the yeast into water while stirring. Let stand approximately 5 minutes, or until foamy.
  • In a large bowl, whisk 2 cups of whole wheat flour with bran, barley flour, oats, wheat germ, and salt. Create indent in the middle of mixture and pour in the yeast liquid. Stir to slowly incorporate ingredients to form dough; add more wheat flour if necessary.
  • Knead dough on lightly floured surface for 10 to 15 minutes, until dough is smooth and elastic.
  • Coat a bowl with nonstick cooking spray and place the dough inside. Roll dough in spray to cover. Next, cover dough with a clean dish towel and allow to rise for 45 minutes. Dough should double in volume.
  • Line a baking sheet with parchment paper or dust with cornmeal.
  • Punch the dough down and return it to the floured surface. Divide into two pieces, then roll each piece into a loaf about 12 inches long, tapering each end. Place loaves onto prepared baking sheet (2 12-inch bread pans can work, as well) and cover again with dish towel.
  • Dough should rise for another 45-60 minutes, doubling in size once again. After rising, the dough should remain dented when poked instead of springing back.
  • Bake at 425 Fahrenheit for 30 minutes, until loaves sound hollow when tapped. Cool on wire racks, slice and serve!
  • 1 serving is 1/12 of a loaf.

1 ⅔ cups warm water
4 teaspoons molasses
1 tablespoon active dry yeast
2 ⅔ cups whole wheat flour
¾ cup ground flax seed
⅔ cup bread flour
½ cup oat bran
⅓ cup rolled oats
⅓ cup amaranth seeds
1 teaspoon salt

Steps:

  • Place water, molasses, yeast, wheat flour, ground flax seed, bread flour, oat bran, rolled oats, amaranth seeds, and salt in the pan of a bread machine in the order recommended by manufacturer. Select dough cycle; press start and allow machine to run complete dough cycle.
  • Turn dough onto a lightly floured surface. Form dough into 2 loaves and place on baking stone. Cover loaves with a damp cloth and let rise until doubled in volume, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven until top is golden brown, 20 to 25 minutes. Slide loaf onto a work surface and gently tap bottom of loaf. If it sounds hollow, bread is done.

HIGH FIBER WHOLE WHEAT BREAD

This bread has heart healthy fats thanks to flaxseed and is high in fiber.

one and a half cups warm water
1 table spoon brown sugar
1 tsp. salt
1 table spoon red star, high acting yeast
1 table spoon wheat gluten (optional)
4 tablespoons ground flaxseed
half a cup wheat bran
3 cups whole wheat flour sifted (total of dry ingredients = 4 cups)

Steps:

  • Makes one, 1, 5 lb loaf or 16 large pretzels or rolls. The serving size depends on how thicky the bread is sliced (1 oz. slices = 24 slices from a 1.5 lb. loaf).
  • Preheat oven to 425 F. Spray one loaf pan with cooking spray.
  • Place warm water, salt and sugar in a large bowl and stir with a wooden spoon until dissolved.
  • Sprinkle yeast over the liquid and stir to dissolve.
  • Add flaxseed, wheat bran, whole wheat flour and gluten; about 1 cup at a time and stir until the dough is firm yet slightly sticky.
  • Kneed the dough by hand for about 5 minutes until dough is smooth. Place in the loaf pan. Cover with a damp cloth and allow to rise in a warm place until the dough reaches the top of the tin (about 30-60 minutes).
  • Bakein a hot oven for 20-25 minutes or until the bread sounds hollow when tapped.
  • Alternatively this recipe can be made in a bread maker. Place all the ingredients (water, sugar, salt, flour, flaxseed, bran, gluten and yeast) into the bread machine. Run on dough cycle. Remove dough, place in loaf pan, allow to rise and then bake.
  • Note: Some people can be allergic to (ground) flax seed. You might want to test a little ground flax seed sprinkled on cereal before making bread if you have allergies. If you are than omit the flaxseed from the bread recipe and replace it with more wheat bran. The total amount of dry ingredients (flour, flax seed, and/or bran) is 4 cups.
