THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

HIDDEN SLOPPY JOE
This recipe came from my The Best of Bisquick from Betty Crocker cookbook. In this picture I used chopped leftover beef roast in place of the ground beef. Was very good also. HIDDEN VEGGIE SLOPPY JOES
From Cooking Light, Jan 1997. Original calls for 6 oz. ground round and 6 oz turkey breast. I have had really good luck feeding this to toddlers and veggie-phobic adults! Feel free to play with the veggies to your own preference; tonight I made these with 1 c mushroom and 1 c finely diced zucchini squash. I also prefer balsamic or cider vinegar here to the red wine. Finally, this does tend to turn out pretty "saucy", so if you like your joes thicker you might consider adding a bit of tomato paste. Enjoy!

KOREAN BEEF SLOPPY JOES
Steps:
- In a large skillet add in the beef, lower the heat to medium and cook well, breaking it apart but leaving some chunks about the size of a raspberry or small grape (don't crush the heck out of it, the larger crumbles will help give the sandwich stability).
- Cook until well browned (5-6 minutes), then add in the garlic, sesame oil, ketchup, hoisin, water, soy sauce, rice wine vinegar and sriracha and stir together well until the sauce starts to evaporate and the mixture becomes "sloppy" (about 5-6 minutes).
- Toast the buns then spoon over the mixture and top with green onions.

- MEAT: Heat the butter in a large skillet over medium-high heat. Add the beef and crumble using a wooden spoon. Allow the meat to cook for 3 minutes before adding the minced bell pepper, onions, garlic, and tomato paste and cooking for another 5 minutes.
- SIMMER: Then, add the remaining ingredients along with ½ teaspoon of salt and ½ cup of water and allow the mixture to start bubbling, then lower the heat to low, cover with a lid and cook for 20 minutes.
- FINISH: Remove the lid and give the sloppy Joe filling a stir. Then, kick the heat up to medium and continue cooking for 5-7 minutes or until the mixture thickens to your liking. If at any point the mixture dries out too much, just add a small splash of water to thin it back out. Taste and adjust with additional salt as needed (it just depends on how salty your tomato sauce and ketchup are, you may not even need anymore)
- SERVE: Place a big scoop of the sloppy joe mixture on buttered and toasted buns and serve with potato chips and pickles.
