HIDDEN SLOPPY JOE

Hidden Sloppy Joe image

This recipe came from my The Best of Bisquick from Betty Crocker cookbook. In this picture I used chopped leftover beef roast in place of the ground beef. Was very good also. The recipe looks like it maybe a lot of work but it is very easy to put together and it does make a very filling meal with a side dish of toss salad or...

Number Of Ingredients 9

1 lb ground beef
1 medium onion, chopped
3 Tbsp ketchup
2 Tbsp prepared mustard
1 can(s) condensed chicken gumbo soup
3 c biscuit mix
2/3 c milk
2 Tbsp butter or margrine, softened
2 eggs

Steps:

  • 1. Cook ans stir ground beef and onion until browned; drain and stir in catsup, mustard, and soup( I use cream of chicken soup because its what I always have in my cupboard). Heat to boiling; reduce heat. Simmer uncovered stirring occasionally.
  • 2. Heat oven to 375 degrees.Generously grease a 12 cup bundt pan. Mix remaing ingredients; beat vigorously. 30 seconds. Drop remaining batter by teaspoonfuls about 1/2 inch apart onto ground beef mixture. Bake until light brown and firm. Invert onto serving platter.
  • 3. Hidden Reuben; Omit ground beef, onion, catsup, mustard and soup. Mix 1 can (12 ounces) corn beef finely chopped, 1 can (8 ounces) sauerkraut well drained, 1/4 cup mayonnaise or salad dressing and 1 tablespoon catsup. Continue as directed except sprinkle 1/2 cup shredded Swiss cheese over batter in pan. Spoon corn beef mixture evenly on top of batter.

Time 55m

Number Of Ingredients 23

1.5 tablespoons olive oil
1 yellow onion (peeled and minced)
1 bell pepper (small dice)
8 ounces baby bella mushrooms (finely chopped or minced (about 227 grams or 1/2 a pound))
2 carrots (peeled and shredded)
3 cloves garlic (minced)
1 tablespoon chili powder
1 teaspoon smoked paprika
1 teaspoon paprika
1/2 teaspoon ground cayenne pepper (or to taste)
1/2 teaspoon salt (or to taste)
1/2 teaspoon freshly ground black pepper
1 tablespoon Dijon mustard (or yellow mustard)
3 tablespoons tomato paste
1 (14-ounce) can tomato sauce (1 3/4 cups)
1 cup low sodium vegetable broth (or water or mushroom broth)
1/4 cup water (rinse out the empty can of tomato sauce and use that water)
12 ounces plant-based "meat" crumbles (about 3/4 of a pound)
1/2 tablespoon apple cider vinegar
15 slider buns
8 ounces shredded cheddar cheese (about 2 cups)
3 to 4 tablespoons garlic butter (melted)
Sesame seeds (garnish to taste (optional))

Steps:

  • Preheat oven to 350 degrees Fahrenheit for use later.
  • Meanwhile, heat olive oil in a 12-inch sauté (or deep) pan on the stovetop over medium heat.
  • Add onion to pan. Cook, stirring often, for 3 to 5 minutes until onion has softened.
  • Stir in bell pepper, mushrooms, carrot, garlic, chili powder, smoked paprika, paprika, cayenne pepper, salt and black pepper. Cook, stirring often, for 5 minutes.
  • Stir in Dijon mustard, tomato paste, tomato sauce, vegetable broth and water. Cook, stirring occasionally, for about 8 to 10 minutes.
  • Stir in plant-based meat crumbles and cook for another 3 to 5 minutes. Stir in apple cider vinegar.Note: When the veggie meat crumbles are added it will thicken things. If you want a looser or thinner consistency, stir in more broth or water (a little at a time).
  • Cut slider buns in half horizontally (so you have a top portion and bottom portion, while still leaving slider buns in tact) and place bottom half (cut side up) in a 9-inch x 13-inch baking dish. Top with sloppy joe mixture. Sprinkle over cheddar cheese, then place the top buns over top (cut side down) to form your sliders. Brush top buns with melted garlic butter. Sprinkle with sesame seeds, if using.
  • Cover with aluminum foil and bake for 15 minutes. Carefully remove aluminum foil and bake for another 5 minutes more or until the cheese has melted.
  • Cut into individual sliders. Serve and enjoy!

  • Add the canola oil, chicken and onions to a large skillet on medium high heat breaking it apart but leaving some chunks about the size of a raspberry or small grape (don't crush the heck out of it, the larger crumbles will help give the sandwich stability).
  • Cook until well browned (5-6 minutes), then add in the tomato sauce, tomato paste, and Italian seasoning and continue cooking until the sauce starts to evaporate and the mixture becomes "sloppy" (about 5-6 minutes).
  • In a smaller skillet add the olive oil on medium high heat then add in the panko stirring until it starts to toast (about 1-2 minutes) then remove from the pan into a bowl to stop the cooking.

  • In a large saucepan or skillet, saute ground beef in 1 tablespoon of olive oil over medium heat, breaking it up as it cooks. Once the meat has browned, add the carrots, celery, bell peppers, onion, and salt. Cook, stirring occasionally, until the vegetables are beginning to soften, about 5-8 minutes. If the mixture seems dry at any point you can add another drizzle of olive oil.
  • Add brown sugar, vinegar, Worcestershire sauce, tomato sauce, ketchup, and beef broth to the meat and vegetable mixture. Stir to combine. Simmer over medium-low heat, partially covered, stirring occasionally, for about 20 minutes until the vegetables are tender. If the sauce gets too thick you can add another splash of beef broth and/or water. If the sauce is thinner than you like you can simmer it uncovered and the extra liquid should cook off.
  • Season to taste with salt and pepper. Scoop the sloppy Joes into split buns or baked potatoes and serve.
