1 package (17-1/2 ounces) sugar cookie mix
40 to 45 mint Andes candies
3 ounces each red and green candy coating disks
Decorating sprinkles, optional

Steps:

  • Prepare cookie dough according to package directions. Cover and chill for 15-20 minutes or until easy to handle., Pat a scant tablespoonful of dough in a thin layer around each mint candy. Place 2 in. apart on ungreased baking sheets. Bake at 375° for 7-9 minutes or until set. Cool for 1 minute before removing from pans to wire racks to cool completely., In microwave-safe bowls, melt each color of candy coating; stir until smooth. Drizzle over cookies. Top with decorating sprinkles if desired.

2 cups white whole wheat flour or whole wheat pastry flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 teaspoon espresso powder (optional but delicious)
1 1/4 cups chopped Andes mints or Andes Crème de Menthe Baking Chips
1/2 cup packed brown sugar (light or dark)
1/2 cup granulated sugar
1/2 cup unsalted butter (melted and cooled to room temperature)
1 teaspoon vanilla extract
1/3 cup unsweetened almond milk or nonfat milk (at room temperature (may need to add an additional 1 or 2 teaspoons))

Steps:

  • In a medium mixing bowl, stir together the white whole wheat flour, baking powder, baking soda, salt, and espresso powder. Fold in the Andes mints or baking chips.
  • In a large bowl, whisk together the brown sugar, granulated sugar, melted butter, and vanilla until evenly combined. Add the milk and whisk again until the milk is incorporated into the butter and it is nice and smooth.
  • Scatter the flour mixture over the top, and, by hand with a wooden spoon or sturdy rubber spatula, stir to combine. Stop as soon as the flour disappears so that you don't overwork the dough. If the dough seems very dry, add 1 to 2 teaspoons of milk until it comes together. (It will become moist faster than you think!)
  • Clear space in your freezer and line 2 baking sheets with parchment paper or silicone baking mats. With a cookie scoop or spoon, portion the dough by 1 1/2 tablespoonfuls (the dough balls will be about 1 1/2 inches across). Arrange on the baking sheets, leaving at least 2 inches of space around each cookie. Freeze for 30 minutes or refrigerate for 24 hours. Alternatively, you can cover the bowl of dough with plastic wrap, then refrigerate it in the bowl for 24 hours or up to 3 days. Let stand the bowl stand at room temperature for 10 minutes, until the dough is softened enough to scoop, then portion as directed.
  • When ready to bake, place racks in the upper and lower thirds of your oven and preheat the oven to 350 degrees F. Bake on the upper and lower racks for 11 to 12 minutes, until barely dry on top and just turning golden on the edges, switching the pans' positions once halfway through. The cookies will look underdone but will firm up as they cool. (You can also bake the pans one at a time in the center rack of your oven.)
  • Place the baking sheet on a wire cooling rack. Let the cookies rest on the sheet for 3 minutes, then transfer them to the cooling rack to finish cooling completely.

1 ¼ cups all-purpose flour
½ cup unsweetened cocoa powder
¼ teaspoon salt
½ cup butter, softened
1 cup white sugar
1 egg
½ teaspoon mint extract
3 (1 ounce) squares semisweet chocolate, chopped
¼ cup butter

Steps:

  • In a large bowl, beat 1/2 cup butter or margarine until creamy. Add the sugar, and beat until mixed well. Beat in egg and mint extract.
  • Sift flour, cocoa, and salt together into a small bowl. Add flour mixture by halves into creamed mixture, beating well after each addition.
  • Divide dough in half. On lightly floured surface roll dough into two 1 1/2 inch diameter cylinders. Wrap each cylinder in waxed paper, and refrigerate 5 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Thirty minutes prior to baking, place both cylinders in freezer.
  • Remove one cylinder at a time, and slice 1/4 inch thick pieces with very sharp knife. Place on cookie sheets about 1 1/2 inches apart. Bake 10 to 12 minutes.
  • Melt 1/4 cup butter or margarine and the semisweet chocolate in a double boiler or in the microwave. Drizzle over warm cookies. Place on wire racks, and let cool and harden completely.

1/3 cup shortening
1/3 cup butter, softened
3/4 cup sugar
1 large egg, room temperature
1 tablespoon 2% milk
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1/3 cup baking cocoa
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/8 teaspoon ground cinnamon
PEPPERMINT LAYER:
4 cups confectioners' sugar
6 tablespoons light corn syrup
6 tablespoons butter, melted
2 to 3 teaspoons peppermint extract
CHOCOLATE COATING:
2 packages (11-1/2 ounces each) milk chocolate chips
1/4 cup shortening

Steps:

  • In a large bowl, cream the shortening, butter and sugar until light and fluffy, 5-7 minutes. Beat in the egg, milk and vanilla. Combine the flour, cocoa, baking powder, salt and cinnamon; gradually add to the creamed mixture. Cover tightly and refrigerate for 8 hours or overnight. , On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with a lightly floured 1-1/2-in. round cookie cutter; place on ungreased baking sheets. , Bake at 375° until set, 6-8 minutes. Cool for 2 minutes before removing to wire racks to cool completely. , In a large bowl, combine all the peppermint layer ingredients. Knead for 1 minute or until smooth. Shape into 120 balls, 1/2 in. each. Place a ball on each cookie and flatten to cover cookie. Place on waxed paper-lined baking sheets; refrigerate for 30 minutes. , In a microwave, melt chocolate chips and shortening; stir until smooth. Spread about 1 teaspoonful over each cookie. Chill until firm.

1/4 cup shortening
1/4 cup butter or 1/4 cup margarine
1/2 cup granulated sugar
1/4 cup brown sugar (packed)
1 egg
1 tablespoon water
1/2 teaspoon vanilla
1 1/2 cups flour
2 tablespoons flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 dozen chocolate-covered mint candies (I use Andes creme de menthe thins)

Steps:

  • Mix the shortening, sugars and egg.
  • Stir in water and vanilla.
  • Stir together the dry ingredients then mix into the batter.
  • Chill the dough.
  • Enclose each wafer into about 1 tablespoon of dough.
  • Place each on a greased baking sheet and bake in a 400 degree oven for 8-10 minutes, or until no imprint remains when touched lightly.

1 (18 ounce) package refrigerated sugar cookie dough, slice 1/4-inch thick
14 ounces mint chocolate wafers or 14 ounces andes creme de menthe thin candies
1 egg, beaten
1 tablespoon walnuts or 1 tablespoon pecans, coarsely chopped

Steps:

  • Preheat oven according to package directions.
  • Slightly butter cookie sheet.
  • Place slices of cookies on sheet 2-3" apart.
  • Top each slice with chocolate wafer or mint.
  • Cover wafer or mint with another slice of cookie dough.
  • Brush dough with beaten egg.
  • Press nuts on top of dough.
  • Bake for 10 minutes.
  • Voila, you have cookies ready to eat!

Place cookies 2 inches apart on ungreased baking sheet. Bake 9 to 10 minutes, until light brown (cookies will appear underdone). Let cool on baking sheet for 1 minute, then remove cookies to wire rack to cool completely, at least 30 minutes.
  • For the Perfect Icing: Follow the directions for Perfect Icing. If multiple colors of icing are desired, transfer undyed icing to different bowls (1 bowl for each color). Stir in food coloring a few drops at a time, until the desired color intensity is reached. Dip cookies in icing or drizzle with the tines of a fork. Decorate with sprinkles as desired, then allow icing to set.
