SPARKLING HIBISCUS ORANGE SODA
Hibiscus tea with freshly squeezed orange juice topped with club soda and crushed ice. This sparkling hibiscus orange soda is refreshing and delicious, perfect with brunch or for entertaining.

Steps:
- Brew hibiscus tea in hot water. Allow it to sit for several minutes before removing the tea bag.
- Divide the hibiscus tea into two glasses. Pour freshly squeezed orange juice into the glasses. Top with club soda.
- Serve the sparkling hibiscus orange soda topped with crushed ice.
HIBISCUS TEA (EGYPT)

In Egypt and Sudan, wedding celebrations are traditionally toasted with a glass of hibiscus tea. - Briefly rinse the dried flowers in cool water.
- In a saucepan heat two quarts (approximately two litres) of cold water. As soon as the water begins to boil, add the dried hibiscus. Immediately remove from heat and let the flowers steep for ten minutes.
- Pour the water from the pot into a pitcher using a strainer (lined with a cheesecloth) to separate the flowers from the water. (Be sure not to pour any of the flower sediment into the pitcher.).
- Stir in the sugar.
- Add any other flavorings (if desired).
- Add ice and chill completely.
- May be served over ice as well.
- Note: One common combination of flavorings is vanilla and mint. Bissap can be prepared double-strength, by using only half as much water. The resulting Jus de Bissap can be mixed with seltzer water, or lemon-lime soda. Jus de Bissap can also be mixed in cocktails.

- Make the hibiscus syrup: add 2 cups water, dried hibiscus flowers, orange juice + zest (avoiding the white rind) and sugar to a medium saucepan. Bring it up to a boil and let it simmer for 15-20 minutes. Stirring occasionally. Let it cool to room temperature.
- Sieve the flowers: Once cooled, pour the hibiscus syrup through a sieve. Add juice of half a lime. Mix with the remaining 4 cups of water.
- Serve it cold: After adding the lime juice and more water, let it cool in the fridge. Or if you're impatient, add a few ice cubes to a glass and pour yourself a glass of delicious hibiscus tea.
- Serve it hot: Run it through a sieve when it's still rather hot. Add lime juice and hot water and serve right away.

- Bring water to boil, turn off heat add the hibiscus flowers and cinnamon sticks.
- Cover and steep for about 20 minutes.
- Strain tea into a pitcher, add sugar to taste.
- Add orange slices and serve over ice.

- Chef Notes: This tea recipe can easily be doubled for a larger serving. When using herbs in tea making, longer is not better. Heating the herbs for extended time can release unfavorable qualities and bitterness found in herbs. The key is to add MORE herbs to strengthen flavor.

- Place 6 cups of water in a large saucepan; bring to a boil. Stir in the hibiscus petals, cinnamon, cloves, nutmeg, and allspice. Reduce heat to medium-low, and gently simmer until the water has turned a deep red, 30 to 45 minutes.n
- Stir the chopped piloncillo into the hibiscus water until dissolved, then set aside to cool 15 minutes. After cooling, strain the warm liquid into a 1 gallon pitcher through a wire mesh strainer. Squeeze as much liquid from the petals as you can, then discard the petals. Stir in the white sugar until dissolved, then pour in enough cold water to fill the pitcher. Serve immediately or let stand overnight for best taste.n
