HIBISCUS RUM COCKTAILS
The hibiscus brings a sweet and tart flavor to this crimson cocktail (think cranberry). Find the dried flowers in specialty foods stores or look for them online.

- Bring 3 cups water and the ginger to a boil in a medium saucepan over high heat. Add the sugar, stir until dissolved and remove from the heat. Add the hibiscus flowers, and let the tea steep for 10 minutes. Strain the tea through a fine-mesh strainer, and refrigerate it until completely cooled, about 15 minutes.
- Fill 6 wineglasses with ice. Add 4 ounces of the hibiscus tea and 2 ounces of the rum to each glass. Stir, and garnish with orange wedges.
HIBISCUS SPARKLING SODA SPRITZERS
This recipe makes about 1 ¼ cups hibiscus syrup, enough for 6 spritzers. I always make a double batch of syrup-it keeps at least a month and freezes well too. And when the weekend rolls around I'm ready for hibiscus margaritas!

- Pour boiling water over the flowers and let steep 20 minutes or up to an hour. Strain, pushing on the plumped flowers to extract maximum juice. Stir the honey into the liquid and reheat just enough to dissolve the honey completely. If you want to use the syrup right away, pour it into a metal container and place in an ice bath, stirring until the syrup is nice and cold.
- Fill a tall glass with ice. Pour 2 (or more) tablespoons of syrup over the ice. Fill the glass to the top with sparkling water. Sip and refresh!

It's hard to beat the natural sweetness, unique tartness and stunning color of hibiscus, but this fizzy drink can be modified with any chilled tea. Don't turn away at the mention of apple cider vinegar: It's decidedly tame. But if you're into the aggressive sourness of vinegar, feel free to add more.

- Combine hibiscus tea, agave nectar or honey, and apple cider vinegar in a large rocks glass. Fill with ice and top with soda water. Garnish with a slice of grapefruit.
HIBISCUS FIZZ COCKTAIL
Steps:
- Combine the sugar and 3 cups water in medium saucepan set over high heat. Bring to a boil and cook until the sugar is dissolved. Add the tea bags and steep for 5 minutes. Remove the bags, return the mixture to the heat and cook until reduced by half. Transfer the mixture to a container with a lid, and refrigerate until cold, at least 1 hour.
- Combine the cooled hibiscus syrup, grapefruit juice, tequila and lime juice in a pitcher. Add the limes, oranges and raspberries, and then cover and refrigerate for at least 1 hour to allow flavors to meld.
- Fill tall glasses with ice and add about 1/2 cup of the mixture to each. Then fill to the top with the cold club soda and serve.

- When you’re ready to serve, fill four medium glasses with ice. Fill each halfway with hibiscus tea. Top each with about a tablespoon of lime juice and 1 teaspoon of the honey simple syrup, and stir to combine. Fill the rest of each glass with sparkling water, gently stirring afterward to combine. You may want to adjust to taste by using less lime juice or more simple syrup—totally up to you! Serve promptly.
