I recently purchased the new Hungry Girl Cookbook and this is one of the recipes that sounds really good to me that I would definitely like to try. Here is what the book says: "It may seem odd to use nothing but pumpkin and cake mix for this recipe, but it works perfectly well. Hope you love it!"

1 (18 1/4 ounce) box devil's food cake mix
1 (15 ounce) can pumpkin puree

Steps:

  • Preheat the oven to 400 degrees.
  • Prepare a 12-cup muffin pan with nonstick spray.
  • Mix the two ingredients together. Don't add anything else that may be mentioned on the box, like eggs, oil or water. The mixture will be very thick, so you might be tempted to add in other things to make the batter smoother. Do NOT do this!
  • Place batter into the prepared muffin cups and place in the oven and bake for 20 minutes.

1 (15 ounce) can pumpkin puree
1 1/4 cups whole wheat flour
1/4 cup all-purpose flour
1/2 cup liquid egg substitute (like Original Egg Beaters)
1/2 cup Splenda granular
1/4 cup brown sugar (not packed)
1/4 cup dried craisins, chopped or 1/4 cup regular raisins
2 1/4 teaspoons baking powder
1 1/2 teaspoons cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt
1/3 teaspoon pumpkin pie spice

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine both types of flour, Splenda, brown sugar, baking powder, cinnamon, salt, and pumpkin pie spice (in other words, all dry ingredients except for the Craisins or raisins).
  • In a medium bowl, mix together pumpkin, egg substitute, and vanilla extract (all the wet ingredients). Add this mixture to the bowl with the dry ingredients, and stir until just blended.
  • Slowly sprinkle chopped Craisins or raisins into the batter, making sure they don't all stick together, and mix to distribute them.
  • Spoon batter into a large loaf pan (about 9" X 5") sprayed with nonstick spray. Bake for about 50 minutes, until the top of the loaf is firm to the touch. (Bread may be moist inside. This doesn't mean it's undercooked.) Allow to cool, and then cut into 8 slices. Enjoy!

1 cup whole wheat flour
1 cup blueberries
1/2 cup light vanilla soymilk
1/4 cup sugar-free syrup
1/4 cup fat free egg substitute (like Original Egg Beaters)
1/4 cup Splenda granular, Splenda No Calorie Sweetener (granulated)
3 tablespoons brown sugar (not packed)
2 tablespoons light butter, whipped, room temperature (or light buttery spread, room temperature)
2 tablespoons no-sugar-added applesauce (get Mott's Blueberry Delight if you can find it!)
1 1/2 teaspoons baking powder
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • In a mixing bowl, combine flour, Splenda, brown sugar, baking powder and salt. Mix well.
  • In a separate, large mixing bowl, combine soymilk, syrup, egg substitute, butter, applesauce and vanilla extract. Using an electric mixer or a whisk, mix until thoroughly blended. (Don't worry if butter bits do not break up completely.)
  • Add dry ingredients from the first mixing bowl to the mixture in the large one. Mix until completely blended. Then fold in the blueberries.
  • Line a 6-cup muffin pan (or half a 12-cup pan) with baking liners and/or spray with nonstick spray. Evenly distribute batter among the 6 cups.
  • Place in the oven and bake for about 22 minutes, until a toothpick inserted into the center of a muffin comes out clean. Enjoy!

4 ounces boneless skinless chicken breasts, cooked, shredded
1 cup diced tomato, undrained
1/2 cup sweet whole kernel corn, canned
1/2 cup onion, chopped
1 tablespoon jalapeno pepper, chopped
1 tablespoon lime juice
1 tablespoon fajita seasoning mix
1 teaspoon garlic, minced
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
6 baked corn tortilla chips, crushed
cilantro (optional)
nonfat sour cream (optional)
fat-free cheese (optional) or low-fat cheese, shredded (optional)

Steps:

  • In a medium pot sprayed with nonstick spray, cook onions, garlic, seasoning and spices over medium heat until onions soften, 3 to 5 minutes.
  • Add chicken broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
  • Add the corn and diced tomatoes and continue to cook for 5 minutes.
  • Add chicken, jalapeno and lime juice. Stir for 2 to 3 minutes to thoroughly blend flavors.
  • Once ready to serve, top each serving with crushed chips and, if desired, the optional toppings.

1 cup cream-style corn, canned
2/3 cup all-purpose flour
1/2 cup yellow cornmeal
1/2 cup fat free egg substitute (like Egg Beaters)
1/2 cup nonfat sour cream
1/2 cup reduced-fat cheddar cheese, shredded
1/4 cup scallion, chopped
2 tablespoons artificial sweetener (i. e. Splenda granulated)
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon hot sauce

Steps:

  • Preheat oven to 375 degrees.
  • Combine flour, cornmeal, Splenda, baking powder and salt in a large bowl.
