OLD FASHIONED HARD FUDGE

Old Fashioned Hard Fudge image

Sink your teeth into this decadent fudgy treat and let yourself be transported back to Grandma's house with this mouth-watering confection. Quick and easy-to-make, this rich and irresistible fudge will be a favorite for you and your family to savor.

Time 50m

Yield 2 lbs

Number Of Ingredients 6

3 cups sugar
2/3 cup cocoa powder
1/8 teaspoon salt
1 1/2 cup milk
1/4 cup butter
1 teaspoon vanilla extract

Steps:

  • Line a 8 or 9-inch square pan with foil. Generously grease the foil with butter. Combine the sugar, cocoa powder, and salt in a large, heavy saucepan over medium heat. Mix well. Using a wooden spoon (do not use a whisk), stir in the milk. Cook, stirring constantly, until the milk comes to a full, rolling boil. Let it boil without stirring until it reaches 234 degrees F on a candy thermometer (soft ball stage, drop a small amount in very cold water to test it - it should form a soft ball that flattens when removed from the water). Remove the pan from the heat. Add the butter and vanilla to the saucepan but DO NOT STIR. Just let the mixture sit until it has reached 110-120 degrees F. Once cooled, beat the fudge with the wooden spoon until it thickens and has lost some of its glossiness. Quickly spread the fudge in the greased pan. Let cool slowly (do not rush the cooling process or it may not set up) then cut into squares when completely cooled. Store the fudge wrapped loosely in foil in the refrigerator. cook's notes You can use other flavor extracts in place of vanilla (peppermint, caramel, strawberry, coffee, etc). Add-ins such as dried fruit or nuts can be added as it sets. Do not use margarine as it has a higher water content that can keep the fudge from setting up properly.

COOKED CHOCOLATE FUDGE ICING

Cooked Chocolate Fudge Icing image

This icing is made with granulated suagar instead of confectioners. Back in the day when my husband and I were in school, the cafeteria served a chocolate cake with "hard" icing. You could literally break it off and eat it like (fudge) candy. It still had a soft texture though. My husband is always after me to make it. I've searched and searched and this recipe comes closest to what I remember. I found this one on Food.com but tweaked the directions to ensure that the icing sets right and added 1 tsp. vanilla as an option. Original recipe calls for margarine, I haven't tested it with butter.

Categories     Cakes

Number Of Ingredients 5

3 cup(s) sugar, granulated
3/4 cup(s) cocoa powder, unsweetened
3/4 cup(s) evaporated milk
3/4 cup(s) margarine or butter
1 teaspoon(s) vanilla extract, optional

Steps:

  • Put all ingredients (except vanilla) in a heavy large saucepan.
  • Bring to a full boil over medium heat, stirring constantly. Scrape sugar crystals off the sides of the pan.
  • Continue to cook (rolling boil) for 8 minutes; stirring constantly.
  • Remove from heat and stir in vanilla, if desired. Allow to cool 5 minutes.
  • Beat with spoon or mixer until frosting begins to thicken but is still POURABLE. Spread on cake. Work fast because icing begins to harden quickly. Allow to cool before serving.

  • CDKitchen Note: Please read the reviews on this recipe. We have personally tested this recipe and it WORKS if you follow the directions.
  • This recipe has received such varying reviews we thought we better bring it to the CDTestKitchen. You'll notice we're giving it 5 stars - that's because it turned out perfect for us. We boiled the mixture about a minute (maybe 20-30 seconds more) then let it cool just a little (in case it splatted it wouldn't burn then!) and beat it with an electric mixer for about 3 1/2 minutes. We used all the measurements/ingredients exactly as called for in the recipe. One thing that may be confusing people is that this is not a fluffy kind of frosting that you use to decorate a cake. This is more of a frosting that would go on brownies, or a cake that is in a pan. The mixture will harden some however, but it definitely shouldn't be soupy like some reviewers mentioned. Be careful not to heat it over too high a heat, or the sugar will start to turn to candy (which will make the mixture crunchy). We think the biggest success factor is the mixing time/technique. Don't try to mix this by hand, you won'
