Steps:
- Mix sugar, cocoa powder, and milk together in a large saucepan.
- Cook over medium-high heat until large bubbles form and reaches a hard boil. Boil one minute at a hard boil. Remove from heat and add butter and vanilla.
- Beat with a wooden spoon until thick and smooth.
- Pour over cake. It will harden as it cools.

- Grease an 8x8 inch square baking pan. Set aside.
- Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
- Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
- Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
- Pour into prepared pan and let cool. Cut into about 60 squares.

- Line 8- or 9-inch square pan with foil, extending foil over edges of pan. Butter foil.
- Mix sugar, cocoa and salt in heavy 4-quart saucepan; stir in milk. Cook over medium heat, stirring constantly, until mixture comes to full rolling boil.
- Boil, without stirring, until mixture reaches 234°F on candy thermometer or until small amount of mixture dropped into very cold water, forms a soft ball which flattens when removed from water. (Bulb of candy thermometer should not rest on bottom of saucepan.)
- Remove from heat. Add butter and vanilla. Do not stir. Cool at room temperature to 110°F (lukewarm). Beat with wooden spoon until fudge thickens and just begins to lose some of its gloss. Quickly spread into prepared pan; cool completely.
- Cut into squares. Store in tightly-covered container at room temperature.

- Line a 8 or 9-inch square pan with foil. Generously grease the foil with butter. Combine the sugar, cocoa powder, and salt in a large, heavy saucepan over medium heat. Mix well. Using a wooden spoon (do not use a whisk), stir in the milk. Cook, stirring constantly, until the milk comes to a full, rolling boil. Let it boil without stirring until it reaches 234 degrees F on a candy thermometer (soft ball stage, drop a small amount in very cold water to test it - it should form a soft ball that flattens when removed from the water). Remove the pan from the heat. Add the butter and vanilla to the saucepan but DO NOT STIR. Just let the mixture sit until it has reached 110-120 degrees F. Once cooled, beat the fudge with the wooden spoon until it thickens and has lost some of its glossiness. Quickly spread the fudge in the greased pan. Let cool slowly (do not rush the cooling process or it may not set up) then cut into squares when completely cooled. Store the fudge wrapped loosely in foil in the refrigerator. cook's notes You can use other flavor extracts in place of vanilla (peppermint, caramel, strawberry, coffee, etc). Add-ins such as dried fruit or nuts can be added as it sets. Do not use margarine as it has a higher water content that can keep the fudge from setting up properly.

- In a saucepan, over low heat, melt butter. Stir in cocoa powder. Mixture will resemble a thick paste.
- Transfer chocolate mixture to a large mixing bowl. With mixer on low speed, add in powdered sugar and milk, alternating the two. Reserve a few tablespoons of milk. If frosting is thick, add in remaining milk. Add vanilla extract.
- Turn mixer to medium high speed and beat about 5 minutes, until frosting is smooth and creamy.

- Add Karo syrup, Carnation milk and Hershey's cocoa. Mix well and add sugar.

- 1. Melt butter in large boiling pot on medium heat.
- 2. Add Karo Syrup, evaporated milk, and Hershey's Cocoa. Stir and mix well with a big wooden spoon. Add Sugar.
- 3. Briefly turn heat to high and bring to a FULL ROLLING BOIL, (stirring constantly). A boil that you CAN NOT Stir down. REDUCE HEAT TO MEDIUM HIGH and boil 4 minutes...Measure time accurately by the clock.
- 4. Remove from the heat and beat with mixer on high until thick and creamy. Add Vanilla.
- 5. Spread between cake layers, on top and sides. This will frost 10 layers.
- 6. With remaining icing heat to a rolling boil,turn off remove from burner. Continue beating until thick and creamy. Add 2 cups of chopped nuts. Pour on to a buttered pan. Let cool then cut into squares.
- 7. OR, YOU CAN EAT THE ICING WITH THE BIG WOODEN SPOON RIGHT FROM THE PAN.
COOKED CHOCOLATE FUDGE ICING
This icing is made with granulated suagar instead of confectioners. Back in the day when my husband and I were in school, the cafeteria served a chocolate cake with "hard" icing. You could literally break it off and eat it like (fudge) candy. It still had a soft texture though. My husband is always after me to make it. I've searched and searched and this recipe comes closest to what I remember. I found this one on Food.com but tweaked the directions to ensure that the icing sets right and added 1 tsp. vanilla as an option. Original recipe calls for margarine, I haven't tested it with butter.

- Bring to a full boil over medium heat, stirring constantly. Scrape sugar crystals off the sides of the pan.
- Continue to cook (rolling boil) for 8 minutes; stirring constantly.
