EASY HERMITS
These are easy, tasty little buggers, sure to please both kids and adults alike. You can also use diced, mixed candied fruits instead of the raisins. I always use walnuts for the chopped nuts. YUM!!!

Steps:
- In mixing bowl, beat margarine or butter with electric mixer for 30 seconds.
- Add half of flour, brown sugar, egg, milk, vanilla, baking soda, cinnamon, nutmeg, and cloves.
- Beat in remaining flour.
- Stir in raisins and nuts.
- Drop by rounded teaspoons 2 inches apart, onto greased cookie sheets.
- Bake in 375 degree oven about 10 minutes, until edges are lightly browned.
- Cool cookies on rack.

- Preheat oven to 375 degrees F.
- In a small bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and cloves.
- In a large bowl, cream butter and shortening with brown sugar.
- Add eggs; mix well.
- Add dry ingredients alternating with buttermilk; mix well.
- Stir in raisins and nuts.
- Drop by teaspoonfuls onto baking sheet.
- Sprinkle with granulated sugar.
- Bake for 15 minutes or until golden in color.
- Cool on wire rack.

HERMITS (BETTER HOMES AND GARDENS 1969)
A distinctively different hermit recipe. No molasses, no coffee, but lots of flavor. My mother made these every year. The current BHG recipe is different.

Steps:
- Thoroughly cream shortening and sugar.
- Add eggs and beat well.
- Sift dry ingredients; add to creamed ingredients alternately with buttermilk.
- Add nuts and fruits. (If you're using a stand mixer, go slowly; this will be hard on the motor.).
- Drop by heaping teaspoons onto greased cookie sheet.
- Bake at 375 about 10-12 minutes.
DOWN EAST HERMITS
A delicious Maine Hermit recipe that I have been making for years. Moist and just the right mixture of spices and raisins. Great with coffee and for dunking! You might be thinking--Where is down east? To Mainers, down east is down in the most eastern part of Maine. To others in the country, down east IS Maine.

- Blend in the cold coffee.
- Mix in the flour, baking soda, salt, nutmeg, and cinnamon.
- Add in the raisins and walnuts--mix well.
- Chill 1 hour.
- Drop by rounded teaspoonfuls onto a lightly greased baking sheet.
- Bake at 400 degrees for about 8-10 minutes or until set--just until when touched lightly with fingertip, almost no print remains.
- Do not overbake.
BETTY CROCKER'S HERMITS
My family has been making this recipe every Christmas. Our now very- worn Betty Crocker cookbook has this page virtually disintegrating, which is why I wanted to put it up here. Note the original recipe calls for a temperature of 400, but I find that this frequently results in burnt bottoms and underdone tops. I prefer 350, with a slightly longer bake time.

Steps:
- Prepare coffee, set aside to chill (just needs to come to room temperature).
- In a large bowl, cream butter and brown sugar with the egg. Now, add in the cold coffee - mixture will look a bit brown and foamy, that's okay.
- In a a separate bowl, mix the flour with the baking soda, salt, nutmeg and cinnamon. Slowly combine the flour mixture with the wet ingredients above. Now stir in the raisins and walnuts.
- Refrigerate for at least 30 minutes (preferably several hours) - this step is key!
- Once the dough is ready, drop spoonfuls (a bit more than a tablespoon) onto a high-rimmed pan (helps keep them dense- it you like lighter, more spread out cookies do it on a no-rim pan).
- Bake 10-12 minutes at 350 degrees.
