HERMIT COOKIES (DIABETIC)
These have been a favorite of mine for quite some time and i hope they be will for you after trying them.

Steps:
- Cream together shortening and brown sugar replacement.
- Add egg ,beat until light and fluffy.
- Combine flour,baking powder,cinnamon,salt,baking soda,nutmeg and cloves in sifter.
- Add alternately with milk to creamed mixture.
- Fold in raisins and walnuts.
- Drop by teaspoonfuls onto lightly greased baking sheets,2 to 3 inches apart.
- Bake at 350F for 12 to 15 minutes.

Steps:
- Heat oven to 375 degrees F.
- Mix brown sugar, margarine, shortening, coffee, egg, baking soda, salt, cinnamon and nutmeg.
- Stir in remainingingredients.
- Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet.
- Bake until almost no indentation remains when touched, 8 to 10 minutes.
- Immediately remove from cookie sheet.

HERMIT COOKIES
This version of this delicious cookie is quite different than the others already posted. With an old fashioned flavour they will have your kids coming back for more. It's my husband's favorite cookie!

Steps:
- Mix the flour, baking soda, salt, cinnamon, ginger, cloves, raisins and nuts in a bowl. Cream 2 cups sugar, margarine and eggs in a mixing bowl until light and fluffy. Beat in the molasses. Add the flour mixture and mix well. Chill, covered, for 2 hours.
- Preheat the oven to 325*F.
- Shape the dough into fingersize pieces. Roll in sugar. Arrange on greased cookie sheets.
- Bake for 7 minutes. Cool on wire racks.

FORGOTTEN COOKIES-DIABETIC
I haven't tried this recipe yet but I couldn't pass up posting it because I don't want to lose it and others might enjoy a "legal" cookie recipe. I'm totally guessing at the yield. Zaar is listing the calorie and fat content (mostly fron the nuts) for a dozen cookines. Dividing 12 into that amount breaks down to each cookie having 33.5 calories. If you wish to lower it more just use less nuts.

Steps:
- Preheat oven to 350°.
- Beat egg whites until foamy.
- Gradually add sugar substitute and continue beating until they hold stiff peaks.
- Add salt and vanilla.
- Stir well.
- Stir in pecans and chocolate chips.
- Cover cookie sheet with foil and spray with a non stick spray.
- Drop by teaspoonfuls onto the foil. Put in oven then turn the oven off.
- Leave overnight in oven with door closed.

- Preheat oven to 375°. Cover raisins with boiling water. Let stand for 5 minutes; drain and set aside. , Whisk together next 6 ingredients. In another bowl, combine molasses, butter, egg white and vanilla; stir into dry ingredients just until moistened. Fold in walnuts and raisins (batter will be wet)., Divide batter in half; spread each half (wetting hands, if necessary) into a 12x2-in. rectangle 2 in. apart on a parchment-lined baking sheet. Bake until edges are lightly browned and set, 10-15 minutes., Transfer rectangles to a cutting board; with a serrated knife, cut diagonally into 1-1/2-in. bars. Remove to wire racks to cool. Store in an airtight container.
